Dear Colleagues,

The Special Issue “Characterization of Chemical Compounds and Nutrients in Plant-Based Foods” welcomes original research and reviews focusing on the identification, quantitative determination and functional analysis of phytochemicals, bioactive compounds, complementary proteins, anti-nutrients and essential nutrients of plant extracts, plant-based foods and dietary supplements. Emphasis is placed on the following:

  • Profiling and quantification of phytochemicals, secondary metabolites and bioactive compounds in edible plants.
  • Nutritional evaluation of plant-based foods, including macro- and micronutrient composition.
  • Application of metabolomics, proteomics and other omics-based techniques for food characterization.
  • Effects of processing and storage conditions on chemical composition and nutrient stability.
  • Metabolomic studies linking chemical composition of plant-based diets to health-promoting properties.

All manuscripts are thoroughly refereed through a single-blind peer-review process. Plants is an international peer-reviewed open access semimonthly journal published by MDPI.
