Special Issue Information

Dear Colleagues,

Following the strong interest and valuable contributions generated by the first Special Issue on Plant Bioactive Compounds and Prospects for Their Use in Beverages, this second edition aims to further expand the discussion on the role of plant-derived bioactive compounds in the development of innovative and health-promoting beverages. Increasing consumer awareness regarding nutrition, sustainability and natural ingredients has stimulated extensive research into plant-based compounds with functional properties.

Plant bioactive compounds, including polyphenols, flavonoids, carotenoids, alkaloids and other phytochemicals, are widely recognized for their antioxidant, anti-inflammatory, antimicrobial and protective biological activities. Their incorporation into beverages offers promising opportunities to enhance nutritional value, improve functionality and support the development of next-generation functional drinks.

This Special Issue invites original research articles and reviews addressing the extraction, characterization, stability and bioavailability of plant bioactive compounds, as well as their technological, sensory and nutritional implications in beverage systems. Contributions focusing on innovative processing technologies, sustainable use of plant resources and the valorization of agricultural by-products are particularly encouraged.

Research exploring a wide variety of beverages, including fruit and vegetable juices, herbal infusions, fermented beverages, plant-based drinks and novel functional formulations, is welcome. Manuscript Submission Information

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Plants is an international peer-reviewed open access semimonthly journal published by MDPI.
