Dear Colleagues,
This Nutrients Special Issue entitled "Nutrition in the New Millennium: A Mirror of Society" aims to bring together up-to-date scientific contributions by researchers, clinicians, biologists, nutritionists, chemists, biotechnologists, and other professionals working in the field of food and nutrition, reflecting topics and discussions developed at the 22nd National Congress of the Italian Society of Food Sciences, held in Rome, Italy, in 2026.
Nutrition in the new millennium is no longer a mere biological necessity, but rather a mirror of the complexity of a globalized and digitized society. Therefore, a multidisciplinary approach to understanding how food influences metabolic health, disease prevention, and overall well-being in the modern era is required. At a time when misinformation and technological innovation are redefining the individual's relationship with food, the scientific community is called upon to establish a common, rigorous language to guide both professionals and the public. This Special Issue aims at exploring the multifaceted nature of nutrition, examining the resilience of the Mediterranean Diet, and addressing critical issues in nutrition, such as the role of sodium, ultra-processed foods, and sustainable institutional catering. Moreover, it aims at discussing the interplay between nutrition and chronic conditions (oncological, rheumatological, metabolic, and musculoskeletal diseases) as well as new technological advancements, from artificial intelligence to personalized nutrition. Overall, this Special Issue, along with the 22nd National Congress of the Italian Society of Food Sciences, reaffirms the central role of nutritional science in 21st-century medicine.We believe this Special Issue will provide a valuable resource for researchers, practitioners, and policymakers interested in advancing the field of food science and nutrition through a modern, multidisciplinary, evidence-based approach. We look forward to receiving high-quality submissions that contribute to our understanding of the evolving landscape of Nutrition and Society interactions in our time.

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.
Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-anonymized peer-review process. Nutrients is an international peer-reviewed open access semimonthly journal published by MDPI.
