Special Issue Information

Dear Colleagues,

This Special Issue aims to publish a high-impact article collection focusing on recent and future trends of extracting, preparing, tailoring, and applying hydrocolloids in order to maximize their physicochemical effects in the food system and bioactivity in the human body. The Special Issue will cover physicochemical properties of hydrocolloids affecting their water binding/holding capacity, rheological/textural properties, emulsifying activity/stability, film-forming, coating, and encapsulation ability, and processing by emerging methods (e.g., electrospinning, electrospraying, 3D or 4D-printing). The bioactive properties of hydrocolloids in the Special Issue are expected to involve, but are not limited to, those making proved positive contributions to human health (e.g., prebiotic activity, blood sugar and cholesterol control, weight management, antioxidant and antimicrobial activity, antihypertensive effect). Studies exploring the antimicrobial and antioxidant activity of hydrocolloids in food preservation are also welcome. In addition to these essential topics, this Special Issue also intends to highlight recently emerging trends that brings the functionality of hydrocolloids beyond their individual limits. Such trends involve the combinational use of different synergistic hydrocolloids, complexes of different hydrocolloids with each other and with other food components (especially with phenolic compounds, lipids and fatty acids), and employing different highly functional nanoforms of hydrocolloids in formulations. Moreover, tailoring of hydrocolloids’ structure to boost their functionality via physical (e.g., cold plasma, ultrasonication, pulsed electrical fields), biochemical (specific enzymes) and biotechnological methods (fermentation) is of particular interest. Finally, the Special Issue encourages studies discovering highly functional hydrocolloids from unusual sources and wastes.

Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-anonymized peer-review process. Molecules is an international peer-reviewed open access semimonthly journal published by MDPI.
