Dear Colleagues,
The increasing generation of agro-food by-products represents both a significant environmental challenge and a valuable opportunity for the development of sustainable and high-value ingredients. Recent advances in analytical chemistry and food science have enabled a deeper understanding of the chemical composition of these materials, revealing a rich source of bioactive compounds, including proteins, polyphenols, lipids, and dietary fibres. This Special Issue aims to highlight innovative approaches for the valorisation of agro-food by-products through comprehensive chemical characterisation of bioactive extracts and the development of functional ingredients with demonstrated biological activity. Contributions focusing on advanced extraction techniques, process optimisation, bioaccessibility and bioavailability, as well as antioxidant, antimicrobial, and health-related properties are particularly welcome.
By integrating analytical, technological, and biological perspectives, this Special Issue seeks to promote sustainable solutions within the circular bioeconomy and to support the transition from waste streams to valuable resources for food, nutraceutical, and related applications.

All manuscripts are thoroughly refereed through a single-anonymized peer-review process.
