Dear Colleagues,
Nowadays, there is a growing interest in natural bioactive products and their applications in food and pharmaceutical industry. The importance of food-borne pathogens to disease transmission and microbial food safety can be regarded as an important problem for global public health. Bacterial species are reported to be etiological agents of two-thirds of food-borne diseases in human worldwide. Recently the use of natural substances as food preservatives of plant-derived and animal-derived products as well as inhibitors of microbial metabolites has increased. Moreover, natural compounds can also be useful for the development of novel therapeutic options in the treatment of food-borne bacterial diseases.
This Special Issue aims to highlight the significance of natural products in microbial food safety, with particular focus on the isolation and structure elucidation of new natural antibacterials or compounds with not yet well documented antimicrobial activity, their mechanism of action, and their application in food and/or pharmaceutical industries.
The potential authors are welcomed to contribute and share their original articles, short communications, and review articles focusing on bioactive products/compounds of plant origin with significant antimicrobial potential and being of interest in prophylaxis and treatment of food-borne bacterial infections.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Molecules is an international peer-reviewed open access semimonthly journal published by MDPI.
