Special Issue Information

Dear Colleagues,

Diet plays a crucial role in maintaining human health and preventing chronic diseases, including cardiovascular and cerebrovascular diseases, diabetes, obesity and certain types of cancers. Natural food-derived bioactive compounds, such as terpenoids, flavonoids, polyphenols, carotenoids, alkaloids and bioactive peptides, have attracted widespread attention owing to their excellent antioxidant, anti-inflammatory and immunomodulatory properties. Nevertheless, despite their remarkable in vitro biological activities, their low bioaccessibility and bioavailability greatly constrain their health-promoting effects in the human body.

Most bioactive ingredients are highly unstable during food processing, storage and gastrointestinal digestion. In addition, their inherent hydrophobicity, limited transmembrane transport capacity and rapid intestinal metabolism further hinder their efficient delivery to target tissues. Accordingly, the development of advanced delivery systems, including nanoparticles, emulsions, liposomes and encapsulation technologies, has become a prevailing research hotspot bridging food science and nutritional medicine. Such technologies are predicted to protect bioactive substances from degradation in the gastrointestinal tract and achieve precise controlled release and targeted delivery of nutrients.

This Special Issue aims to collect high-quality original research articles and comprehensive reviews focusing on the latest advances in enhancing the bioaccessibility, stability and delivery efficiency of food bioactive compounds. We particularly welcome scientific contributions concerning food matrix effects, digestive mechanisms and the fabrication of novel biopolymer-based delivery carriers.

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-anonymized peer-review process. Molecules is an international peer-reviewed open access semimonthly journal published by MDPI.
