Special Issue Information
Dear Colleagues,
Food chemistry has formed the intriguing basis for various areas to have great impact on our society, ranging from food processing to bio-related and healthcare applications. These studies are not only supportive for innovation in fundamental research but also, more importantly, for creating a new generation of functional foods or nutraceuticals, for food safety assessment and quality control, and for use as intelligent detection technologies. In recent years, China has witnessed a boom in food chemistry research, from food component analysis to food properties and food functions. This Special Issue is designed to gather scientific papers on food chemistry in China, focusing on featured progress in bioactive compounds, food colloids, flavor chemistry, food safety, and food materials. New extraction technologies or methodologies for food chemistry, new concepts for fabricating foods with intriguing properties and functions, and quality control in food chemistry can be discussed. Studies on the relationship between molecular structures and food properties are welcome for submission. New concepts for food chemistry are also highly welcome.
This Special Issue continuously focuses on the new frontiers of food chemistry in China. It is devoted to reporting on either theoretical or experimental studies on extraction, properties, characterization, and applications of various food components. We invite researchers to contribute original articles and reviews.

Manuscript Submission Information
Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.
Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-anonymized peer-review process. Molecules is an international peer-reviewed open access semimonthly journal published by MDPI.
Please visit the Instructions for Authors page before submitting a manuscript. The Article Processing Charge (APC) for publication in this open access journal is 2700 CHF (Swiss Francs). Submitted papers should be well formatted and use good English. Authors may use MDPI's English editing service prior to publication or during author revisions.
