Special Issue Information
Dear Colleagues,
As a group of biological macromolecules, polysaccharides exist widely in plants and perform a series of essential functions in life activities. Owing to their various physicochemical and functional properties, polysaccharides could be utilized in industrial applications, such as emulsifiers in food products, biomaterials for food packaging, and biofuels for energy systems. Moreover, with the high incidence of chronic diseases, the identification of novel biological polysaccharides with health benefits has received great interest in recent years. There has been an increase in scientific studies focusing on the use of polysaccharides for the prevention and treatment of hyperglycemia, hyperlipidemia, intestinal flora disorder, etc. This Special Issue aims to highlight the most recent knowledge and advances in the field of plant polysaccharides. Submissions of research or review articles and short communications providing state-of-the-art knowledge on polysaccharides from plants are encouraged. Research areas may include, but are not limited to, the following: identification, separation, chemical characterization, functional properties, bioactive effects, and health-promoting benefits of polysaccharides; applications in food processing; and potential applications in food packaging.
