Dear Colleagues,
Bioactive compounds naturally contained in food play a crucial role in supporting human health through a wide range of biological activities. Increasing evidence points to their importance in preventing and supporting the treatment of diseases, making them key elements of modern nutrition and the development of functional foods. Understanding their mechanisms of action, bioavailability, and health effects remains an important and rapidly growing area of research. This Special Issue aims to present innovative theoretical insights and applied research that deepen our understanding of bioactive compounds of dietary origin and their importance for human health.
In this Special Issue, original research articles and reviews are welcome. Research areas may include (but are not limited to) the following:
- Identification, characterization, and quantification of bioactive compounds of food origin employing advanced techniques;
- Investigation of the mechanisms of biological activity of phytochemicals, bioactive peptides, and other natural food compounds;
- In vitro and in vivo studies on the antioxidant, anti-inflammatory, antibacterial, anticancer, or other health-related activities of food compounds;
- Interactions between bioactive compounds present in food and the gut microbiota and their impact on host health;
- Bioavailability, bioaccessibility and metabolic transformations of bioactive food components during digestion and absorption.

Manuscript Submission Information
Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.
Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. International Journal of Molecular Sciences is an international peer-reviewed open access semimonthly journal published by MDPI.
