Dear Colleagues,

Food safety and quality assurance are central challenges in today’s complex food supply chains. Traditional as well as biosensors are applied across the entire food supply chain to identify different contaminants—e.g., pathogens, toxins, allergens, chemical residues like antibiotics and pesticides, and heavy metals—and to monitor spoilage and nutritional content. Traditional analytical methods, though sensitive and reliable, are often laborious and time-consuming, highlighting the need for rapid and field-deployable tools. Biosensors have emerged as powerful alternatives, offering fast, specific, and cost-effective detection and quality indicators. By combining biological recognition elements—such as enzymes, antibodies, aptamers, or nucleic acids—with transducers, biosensors often enable real-time monitoring of aforementioned contaminants.

Moreover, recent advances in nanomaterials, microfluidics, and digital technologies have greatly enhanced the sensitivity, portability, and multiplexing capabilities of biosensors, accelerating their translation from laboratory prototypes to practical food industry solutions. This Special Issue highlights current progress, innovative applications, and future perspectives in biosensor-based food safety and quality detection, aiming to inspire further interdisciplinary collaboration for safer and more sustainable food systems.

Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
