Dear Colleagues,
Spoilage microorganisms are a primary driver of food quality degradation, resulting in substantial economic losses and food waste. The effective management of spoilage microorganisms is critical for ensuring product quality and extending shelf life. The challenge is compounded by the complexity of food matrices and the co-existence of multiple spoilage species. Current detection methods often rely on conventional culture-based techniques, which are time-consuming and may fail to capture full microbial diversity. Control strategies still largely depend on traditional preservation methods such as refrigeration and chemical preservatives, which face limitations in efficacy, consumer acceptance and sustainability. Therefore, it is paramount to understand spoilage microbial profiles in foods to develop rapid, sensitive detection technologies and to explore innovative and targeted control strategies.
This Special Issue of Foods invites submissions on the latest advances in the field of food spoilage microorganisms. We encourage submissions on the prevalence and diversity of spoilage microorganisms, the development of novel detection methods and the exploration of innovative control measures. This Special Issue welcomes all original research and review articles covering, but not limited to, the aforementioned research areas.

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.
Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
