Special Issue Information

Dear Colleagues,

Non-destructive technologies are increasingly essential in food science, offering rapid, reliable, and sustainable approaches for assessing food quality and safety without altering intrinsic properties. Spectroscopic techniques (such as time domain NMR, infrared, fluorescence, Raman, hyperspectral imaging), as well as advanced imaging and sensor-based systems, enable the evaluation of chemical composition, physical structure, molecular dynamics, and water or lipid distribution in food matrices. These methods are also powerful in monitoring degradation, oxidation, and other processes that directly impact food quality. Equally relevant are applications in food authentication, where non-destructive approaches allow the detection of adulterants and contaminants in oils, dairy products, meats, grains, beverages, and fruits. Coupled with chemometric and multivariate data analysis, these techniques provide robust insights into complex datasets, supporting both scientific research and industrial practice. This Special Issue will highlight advances in the development and application of non-destructive technologies in food safety and quality. We invite contributions that demonstrate innovations in spectroscopy, imaging, sensor systems, and data-driven methods, helping to bridge fundamental science with practical applications.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
