Special Issue Information

Dear Colleagues,

This Special Issue aims to bring together high-quality, authoritative review papers that provide a comprehensive and critical overview of applied yeast research with clear industrial and biotechnological relevance. We invite contributions that synthesize recent advances in yeast metabolism, physiology, genetics and cell biology, with particular emphasis on their application in biotechnology, fermentation processes, food and beverage production, bio-based chemicals, biopharmaceuticals and sustainable bioprocesses.

Reviews addressing both Saccharomyces and non-conventional yeast species are especially encouraged, including work that explores stress tolerance, metabolic engineering, systems and synthetic biology, strain improvement and process intensification. Contributions that bridge fundamental mechanistic insights with practical implementation are strongly welcomed.

Submissions providing critical synthesis, conceptual integration and forward-looking perspectives on how fundamental yeast biology enables and constrains industrial performance will be particularly valued. Full-length, in-depth review papers are strongly encouraged. We also welcome recommendations or invitations of leading experts whose contributions would significantly enhance the scientific scope and impact of this Special Issue.

By contributing to this collection, authors will help advance applied yeast science and promote the broad dissemination of state-of-the-art knowledge across the academic and industrial biotechnology communities.

Manuscript Submission Information

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Fermentation is an international peer-reviewed open access monthly journal published by MDPI.

Submitted papers should be well formatted and use good English. Authors may use MDPI's English editing service prior to publication or during author revisions.
