Special Issue Information

Dear Colleagues,

Ensuring the safety, authenticity, and quality of food and beverages is a critical challenge for public health and the global food industry. Heavy metal contamination, pesticide residues, and deliberate food fraud practices represent persistent threats to consumer well-being and market integrity. In recent years, the application and development of molecular biology techniques have revolutionized food science, enabling the detection and monitoring of such hazards with unprecedented sensitivity, specificity, and throughput. The integration of these advanced molecular tools, including biosensors and omics-based technologies, is enhancing food chain surveillance and improving the traceability and authentication of high-value products, such as wine and beverages.

This Special Issue highlights recent innovations in and cutting-edge applications of molecular biology techniques, including genomic, proteomic, metabolomic, and nanobiotechnological approaches, across various domains of food science. Contributions that explore novel molecular biomarkers, high-throughput screening techniques, integrated omics workflows, and interdisciplinary methodologies are particularly welcome.

Manuscript Submission Information

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-anonymized peer-review process. Current Issues in Molecular Biology is an international peer-reviewed open access monthly journal published by MDPI.
