Special Issue Information

Dear Colleagues,

Plants are rich sources of natural antioxidants, including flavonoids, alkaloids, coumarins, polysaccharides, and other bioactive compounds. These natural antioxidants play a crucial role in preventing and mitigating metabolism-related diseases such as obesity, diabetes, non-alcoholic fatty liver disease (NAFLD), cardiovascular diseases, and neurodegenerative disorders. Growing evidence highlights the interactions between these antioxidants and the gut microbiota, which are key mechanisms underlying the abovementioned health benefits, alongside influencing host metabolism, immune response, and systemic oxidative stress. Understanding the mechanisms by which these compounds interact with biological systems, including their modulation of the gut microbiota, is essential for developing effective therapeutic strategies.

The aim of this Special Issue is to collect original research articles and comprehensive reviews focusing on the extraction, purification, identification, and quantification of natural antioxidants from plants, as well as their therapeutic effects against metabolism-related diseases. We are particularly interested in studies that explore the role of these antioxidants in modulating the gut microbiota and its metabolites to exert antioxidant, anti-inflammatory, anti-obesity, anti-diabetic, and neuroprotective properties. Comparative studies evaluating different antioxidant assessment models are also welcome. Additionally, we invite reviews that discuss recent advances in the application of plant-derived antioxidants for health promotion, with a special focus on the gut–organ axis.

For manuscripts involving complex mixtures extracted from plant materials, detailed characterizations of the active compounds using analytical methodologies (e.g., HPLC, MS, LC–MS, HPLC–MS, NMR) are required.

Manuscript Submission Information

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 100 words) can be sent to the Editorial Office for announcement on this website.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. A guide for authors and other relevant information for submission of manuscripts is available on the Instructions for Authors page. Antioxidants is an international peer-reviewed open access monthly journal published by MDPI.

Please visit the Instructions for Authors page before submitting a manuscript. The Article Processing Charge (APC) for publication in this open access journal is 2900 CHF (Swiss Francs). Submitted papers should be well formatted and use good English. Authors may use MDPI's English editing service prior to publication or during author revisions.
