Dear Colleagues,
The overwhelming response to the first edition of this Special Issue, “Green Extraction of Antioxidants from Natural Sources,” has clearly demonstrated that the topic remains highly relevant and continues to attract growing interest from the research community. The persistent global demand for sustainable and eco-friendly extraction solutions, coupled with the rapid emergence of novel green technologies, underscores the timeliness and urgency of further exploring this field.
In light of this sustained momentum, this second edition will build upon the solid foundation laid by its predecessor. We will continue gathering cutting-edge research that showcases innovative and environmentally benign extraction techniques, while expanding the scope of research to include new sources, advanced characterization methods, and diversified application areas. The continued enthusiasm from both established and early-career researchers reaffirms the vitality of this subject.
We invite contributions from across the scientific community to join us in this ongoing endeavor. By maintaining an open and inclusive platform for high-quality research, this second edition of Antioxidants hopes to further enrich the collective knowledge base, foster new collaborations, and drive the transition toward greener, more sustainable antioxidant extraction practices on a broader scale.

Manuscript Submission Information
Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.
Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-anonymized peer-review process. Antioxidants is an international peer-reviewed open access monthly journal published by MDPI.
