We are thrilled to be organizing the third volume of this Special Issue, entitled “Olive Antioxidants: Extraction, Biological Activity and Practical Applications”, following the success of volumes 1 and 2, which can be accessed at the following links, along with other related publications:

Olive extracts derived from oil, fruit, leaves, wood, and by-products are well known for their health-promoting properties, including reducing the prevalence of hypertension and diabetes, as well as the prevention of cardiovascular diseases and cancer. These benefits are largely attributed to the abundant antioxidants present in olive products, particularly polyphenols (phenolic acids, flavonoids, lignans, and secoiridoid derivatives), carotenoids (such as xanthophylls and β-carotene), chlorophylls, pheophytins, and tocopherol α (vitamin E). These compounds help to mitigate the oxidative stress caused by free radicals and prevent cellular damage.

Recent studies have also highlighted the role played by cell wall polysaccharide–polyphenol complexes formed during the crushing and malaxation of olive paste prior to oil extraction. These complexes offer additional nutritional, health, and antioxidant benefits. Consequently, olive extracts have garnered increased attention and have been extensively studied for their health effects, analytical methods, extraction efficiency, and practical applications.

We invite you to contribute your most recent findings to this Special Issue, which will focus on all aspects of olive extracts. We welcome the submission of papers on topics ranging from the development and optimization of new extraction techniques, both conventional (such as hot water, organic solvents, maceration, and Soxhlet extraction) and green, non-conventional methods (such as deep eutectic solvents, ultrasound-assisted, microwave-assisted, enzymatic-assisted extraction, supercritical fluid extraction, subcritical water extraction, and pressurized liquid extraction). Additionally, papers exploring the application of these extracts in the cosmetic, pharmaceutical, and food industries are encouraged to be submitted.
