Special Issue Information

Dear Colleagues,

Olive products are an important component of the Mediterranean diet. Olives contain several phenolic compounds that are recognised for their antioxidant properties that can prevent chronic degenerative diseases induced by oxidative or inflammatory stress. The significant nutritional value of this product is related to its richness in monounsaturated fats (MUFAs), mainly oleic acid, fibre, and vitamin E, along with the presence of several phytochemicals. Consequently, the consumption of table olives, olive oil, and derivatives continues to increase worldwide by health-conscious consumers. To respond to consumer demand, the olive oil industry is facing several challenges in all stages of the production chain (plant and crop management, olive quality, production methods, and by-product re-use) in order to propose innovative and eco-friendly approaches to develop new products that specifically respond to increasingly demanding consumers.

The aim of this Special Issue is to bring together original research articles and reviews in order to contribute to the knowledge and dissemination of research applied to the entire olive oil chain and to promote new products with high added value.

Agriculture is an international peer-reviewed open access semimonthly journal published by MDPI.
