Dear Colleagues,
The ever-increasing world population and the consequent increase in the global need for protein make it necessary to search for new protein sources that, while not replacing the current ones, represent a viable alternative. In addition, the production of less anthropogenic waste, or at least a more sustainable valorisation of the waste, has become an urgent challenge for the world of research, which must quickly propose viable solutions with low long-term impacts.
Given the success of the first Special Issue, we would like to propose a second edition, shifting the focus more to the use of products and by-products, directly or indirectly derived from the edible insects’ rearing.
The goal of the current Special Issue is to publish high-quality scientific articles dealing with new perspectives on the use of edible insect rearing products and by-products. For this reason, we invite you to submit your current scientific research results, in the form of original articles, communications or reviews on (i) the use of edible insect farming direct or indirect products and by-products; (ii) innovative and sustainable protocols for obtaining powder or other by-products from edible insects; (iii) new perspectives on the use of edible insect farming by-products for animal or human nutrition; and (iv) environmental, economic or social impacts of even partial substitution of currently used products for edible insect rearing by-products.

All manuscripts are thoroughly refereed through a single-blind peer-review process. Agriculture is an international peer-reviewed open access semimonthly journal published by MDPI.
