Functional food plays an increasingly important role in shaping healthy dietary habits by integrating health-promoting components into consumers’ everyday diets and helping reduce food waste. Products developed using by-products and raw material streams from food processing can support the principles of the circular economy (CE) by improving resource efficiency and lowering the environmental footprint of the food system. In Poland, as in many countries worldwide, functional food is a rapidly growing category that can contribute to public health and serve as a driver of economic development. However, the excessive and scientifically unsupported use of the term “functional food” for marketing purposes may mislead consumers and weaken trust in this product group. From a CE perspective, transparent communication and informed consumer choices are essential, as they promote environmentally responsible behaviors and support sustainable production models. The aim of this study was to assess the level of knowledge about functional food among residents of Eastern Poland, which is a less industrialized and predominantly agricultural region. The analysis focused on awareness of health benefits, consumption frequency, consumer attitudes, and interest in educational initiatives promoting functional food within CE principles. The study also examined whether consumers associate functional food with sustainability-oriented practices. The findings offer insights for educational and marketing strategies grounded in scientific evidence and highlight the potential of functional food in building a sustainable, resource-efficient food system. Background/Objectives: To promote sustainable and healthy diets, increased consumption of pulses (the edible grains of legumes) is recommended. Adolescence is a period in which perceptions and behaviours develop that can impact lifelong dietary behaviours. Therefore, this study aimed to understand how Australian adolescents perceive healthy, sustainable diets and perceive and consume pulses. Methods: Students (11–17 years old, median = 15 years, n = 33) in Brisbane, Australia, participated in school-based face-to-face focus groups and an online survey. Results: Students’ perceptions of healthy and sustainable dietary behaviours largely focused on the health aspects of food and consideration of food waste. The main factors that adolescents identified as influencing the health and sustainability of their diet were a lack of perceived responsibility for the impact of their meal choices and lack of knowledge of what constitutes a healthy and sustainable diet. Most students were unfamiliar with the term ‘pulses’ and lacked a desire to consume pulses more often. Consumption of pulses was below recommendations in national and international dietary guidelines. The main factors that adolescents identified as influencing pulse consumption related to students’ lack of capability to prepare pulses and the limited opportunities to access pulse-based foods. Conclusions: Perceptions of sustainable diets and pulses were very limited, and a lack of knowledge, skills, and limited availability were identified as barriers to their consumption. Education and cooking classes, in conjunction with increased availability of tasty pulse foods, are recommended to increase students’ pulse consumption as part of a healthy and sustainable diet. Background: The aim of the S.A.P.O.R.E. (Sustainable And Pocket friendly Options for nutritious and Responsible Eating) initiative was to offer students attending the University of Brescia a teaching kitchen programme to develop cooking and food skills (CS and FS) and promote healthy food choices. Methods: The course was structured in four weekly lessons, and both before and after, participants were asked to anonymously complete validated questionnaires to assess CS and FS, adherence to the Mediterranean Diet (MD) and dietary fibre intake. Levels of competence and satisfaction were assessed at the end of the course. Results: Twenty-eight students completed the course. Mean CS and FS scores significantly increased, from 56.1 ± 19.8 to 68.0 ± 16.5 (score range 0–98, p < 0.001) and from 92.7 ± 22.4 to 104.3 ± 21.0 (score range 0–133; p = 0.012), respectively. The MediLite score significantly increased from 9.43 ± 2.77 to 10.9 ± 2.06 (p = 0.006). The mean daily dietary fibre intake increased slightly from 17.8 ± 8.4 to 19.2 ± 7.1 g. More than 70% of participants correctly answered the questionnaire about acquired competence. The average cost for a single meal was EUR 1.50 ± 0.60, and the mean level of students’ satisfaction was 4.4 out of 5. Conclusions: This initiative was significantly associated with improvement in CS, FS and adherence to MD, but not in fibre intake. Full article

Background/Objectives: Metabolism is fundamental to all living organisms. It comprises a highly complex network of fine-tuned chemical reactions that sustain life but also generate by-products that damage cellular biomolecules, including DNA, thereby contributing to aging and disease. As metabolism can be largely modified by dietary alterations, it has the potential to positively or negatively affect health and disease. Interestingly, many aging-associated illnesses known to be influenced by diet also show a causal relation with DNA damage. As DNA keeps all instructions for life, and DNA lesions, if unrepaired, interfere with vital processes such as DNA replication and transcription, DNA damage may be an important mediator of the impact of nutrition on health and aging. Methods: Here, we discuss the genome-protective effects of various oral interventions in mice, aiming to elucidate which nutritional alterations lower DNA damage and promote overall health. Results: Our analysis covers a wide range of interventions with reported positive impacts on genomic stability, including modified diets (e.g., dietary restriction, probiotics, micronutrients, fatty acids, and hormones), NAD+ precursors (e.g., nicotinamide riboside), plant derivatives, and synthetic drugs. Among these, caloric and dietary restriction emerge as the most potent, generic modulators of DNA damage and repair processes, enhancing aspects of repair efficiency through metabolic recalibration and improved cellular resilience. Other interventions, like NAD+ precursors, activate partly similar pathways without necessitating reduced food intake. Conclusions: While many interventions show promise, their effects are often less pronounced or are process-specific compared to caloric or dietary restriction. Additionally, many substances lack comprehensive exploration of their genome-protective effects in mice, with often only a small number of studies examining their impact on genome stability. Moreover, the heterogeneity between studies limits direct comparison. However, the observed overlap in mechanistic effects between treatments lends credibility to their potential efficacy. Ultimately, a deeper understanding of these mechanisms could pave the way for translating these findings into, e.g., combination treatments to promote healthy aging in humans. Full article

Chronic low-grade inflammation, or “inflammaging,” represents a central mechanism linking dietary patterns, gut microbiome composition, and biological aging. Evidence from Blue Zone populations and Mediterranean diet studies demonstrates that specific nutritional interventions are associated with up to 23% lower all-cause mortality, with analyses suggesting that part of this association may be mediated by measurable improvements in inflammatory biomarkers. This paper synthesizes published evidence from Mediterranean diet trials, centenarian microbiome studies, and digital health platforms to propose a comprehensive digital health framework that integrates quarterly inflammation and microbiome monitoring with continuous lifestyle tracking to deliver personalized longevity interventions. This paper introduces the Longevity-Inflammation Index (L-II), a composite score combining high-sensitivity C-reactive protein, interleukin-6, tumor necrosis factor-alpha, and microbiome-derived markers, with scoring algorithms derived from centenarian population studies. The proposed platform leverages artificial intelligence to generate evidence-based recommendations adapted from centenarian and Mediterranean dietary patterns. Published evidence from multiple randomized controlled trials demonstrates that Mediterranean dietary interventions reduce hs-CRP by 18–32%, increase microbiome diversity by 6–28%, and improve metabolic markers including HOMA-IR and TG/HDL ratios. Digital health platforms demonstrate sustained engagement rates of 58–84% at 12 months, with dietary logging frequencies of 4–6 days per week. Cost-effectiveness analyses of dietary interventions show incremental cost-effectiveness ratios of USD 2100–4800 per quality-adjusted life year gained. This inflammation-centered digital health framework offers a scalable approach for translating longevity research into practical interventions for healthy aging, with validation studies needed to confirm the integrated platform’s efficacy and real-world implementation feasibility. The growing pet economy boosts demand for fiber-enriched functional foods to improve canine gut motility and metabolic health. However, low-bioavailability commercial fibers often falter in high-energy diets. Whole lamb omasum—from grass-fed sheep omasum and gastric contents—repurposes a discarded byproduct for waste reduction and sustainable livestock production. This study evaluated the short-term effects of WLO supplementation on gut health and metabolism in healthy adult Shiba Inu dogs. Twelve dogs were randomly assigned to control or WLO groups in a randomized controlled trial. WLO supplementation significantly reduced fecal scores by 8.91% (p < 0.05), increased apparent crude fat and fiber digestibility by 3.70% and 11.55% (p < 0.05), and elevated serum IgA by 35.79–36.15% and T-AOC by 30.53–35.71% (p < 0.05). Serum metabolome revealed 13 between-group and 8 within-subject differences related to lipid and endocrine modulation. Fecal microbiota analysis indicated enrichment of the Bacillota phylum and Blautia genus (p < 0.05). These findings support WLO as a functional food that enhances gut and metabolic health in small-breed dogs. Full article

In recent decades, species within the genus Amaranthus L. (amaranth) have garnered growing global interest due to their exceptional nutritional value, functional properties, and agricultural versatility. Traditionally consumed as leafy vegetables or pseudo-cereals, several Amaranthus species are now receiving renewed attention in the context of the development of modern functional foods. This review evaluates the data on nutritional composition, health-promoting properties, and potential applications of Amaranthus spp. in sustainable food systems in peer-reviewed publications from the last 25 years. Amaranth is rich in high-quality proteins, essential amino acids, dietary fibre, vitamins, and minerals, positioning it as a significant factor in addressing malnutrition and enhancing food security. Furthermore, its bioactive compounds, such as flavonoids, phenolic acids, and peptides, exhibit antioxidant, anti-inflammatory, and hypocholesterolemic activities, suggesting its potential as a part of healthy diets, alleviating the risk of non-communicable diseases. The presence of anti-nutritional factors, including saponins, phytates, and oxalates, has also been explored, with implications for nutrient bioavailability and overall health effects. In addition to its nutritional advantages, Amaranthus spp. demonstrate strong adaptability to diverse climatic conditions, thus performing as a crop resilient under climate stress. Their olfactory and sensory attributes are also considered important for consumers’ acceptance and market integration. By synthesising traditional knowledge and contemporary scientific research, this review underscores the potential of Amaranthus spp. as a multifunctional food source that could support health promotion, climate resilience, and agricultural sustainability. The contribution of members of the agri-food system to achieving the Sustainable Development Goals is a key element in the global transition to sustainable development. The use of sustainable management systems supports the development of an integrated approach with a spirit of continuous improvement. Such organization is based on risk-management tools that are applied to multiple stakeholders, e.g., those responsible for product quality, occupational health and safety, and environmental impact, thus enabling better global performance. In this review, the term “ethical food systems” is used in our discussion of the concrete methods that can be used to endorse fairness and concern across the food chain. This comprises safeguarding equitable access to nutritious foods, defending animal welfare, assisting ecologically accountable production, and addressing social and labor justice within supply chains. Ethical factors also include transparency, cultural respect, and intergenerational responsibility. Consequently, the objective of this review is to address how these ethical values can be implemented within a One Health framework, predominantly by assimilating plant-based diets, developing governance tools, and resolving nutritional insecurity. Within the One Health framework, decoding ethical principles into practice necessitates a set of concrete interventions: (i) raising awareness of animal rights; (ii) distributing nutritional and environmental knowledge; (iii) endorsing plant-based food research, commercialization, and consumption; (iv) development of social inclusion and positive recognition of vegan/vegetarian identity. At the same time, it should be noted that this perspective represents only one side of the coin, as many populations continue to consume meat and rely on animal proteins for their nutritional value; thus, the role and benefits of meat and other animal-derived foods must also be recognized and discussed. This operational definition provides a foundation for asking how ethical perspectives can be applied. A case study from Africa shows the implementation of a sustainable and healthy future through the One Health approach. Full article

Background/Objectives: Interventions promoting the Mediterranean Diet (MedDiet) and healthy lifestyle behaviours are effective and cost-efficient in preventing non-communicable diseases (NCDs), yet sustaining adherence remains challenging. This study explored perceived health impacts on, barriers to, and facilitators of adherence among older Spanish adults participating in a randomised clinical trial (RCT) based on the MedDiet and lifestyle interventions. Methods: A qualitative study was conducted with 17 Spanish participants (aged 60–81 years) with overweight/obesity and metabolic syndrome (MetS). In-depth, semi-structured interviews were audio-recorded, transcribed verbatim, and analysed through inductive thematic analysis with a gender-sensitive approach. Results: Participants identified several facilitators, including perceived improvements in vitality, psychological well-being, and physical performance, alongside enhanced nutritional literacy and confidence in orchestrating daily dietary practices. Women emphasised empowerment, autonomy, and the satisfaction of promoting family health. Main barriers included low motivation, disease burden, mobility restrictions, and limited partner support, with women particularly highlighting emotional and relational factors. A continuous, trust-based relationship with the research team acted as a strong external facilitator supporting long-term commitment. Conclusions: Perceived health gains, self-efficacy, social engagement, and research team support facilitated adherence, while low motivation, illness burden, and limited partner involvement hindered it. These findings highlight the importance of gender- and context-sensitive strategies to optimise adherence and the long-term effectiveness of Mediterranean lifestyle interventions. Full article

The gut microbiota plays a fundamental role in human physiology by influencing metabolism, immunity, and neuroendocrine communication. Growing evidence suggests that physical exercise modulates gut microbial composition; however, study findings remain inconsistent due to variations in design, training type, and population characteristics. This review summarizes current research on how different forms, intensities, and frequencies of exercise shape the gut microbiota and discusses their implications for athlete health and performance. Moderate and sustained physical activity generally promotes higher microbial diversity, increases short-chain fatty acid (SCFA)-producing bacteria, and enhances gut barrier integrity. Endurance training, particularly long-term, is most consistently associated with beneficial microbial shifts, including increases in Prevotella, Akkermansia, and Faecalibacterium. In contrast, excessive or high-intensity endurance exercise was shown to cause dysbiosis, inflammation, and greater intestinal permeability. Resistance training appears to induce milder changes but was shown to improve mucin synthesis and butyrate production, especially in older adults. Exercise frequency also plays a role, with regular daily training enriching metabolic pathways linked to gut and systemic health. Overall, the impact of exercise on the gut microbiota depends on the type, intensity, and duration of activity. Balanced, moderate exercise combined with a healthy diet emerges as the most effective strategy to enhance microbial diversity, reduce inflammation, and support overall performance and well-being in athletes. Poor diet is the leading preventable risk factor for death worldwide, associated with over 10 million premature deaths and USD 8 trillion related costs every year. Artificial intelligence or AI is rapidly emerging as the most historically disruptive, innovatively dynamic, rapidly scaled, cost-efficient, and economically productive technology (which is increasingly providing transformative countermeasures to these negative health trends, especially in low- and middle-income countries (LMICs) and underserved communities which bear the greatest burden from them). Yet widespread confusion persists among healthcare systems and policymakers on how to best identify, integrate, and evolve the safe, trusted, effective, affordable, and equitable AI solutions that are right for their communities, especially in public health nutrition. We therefore provide here the first known global, comprehensive, and actionable narrative review of the state of the art of AI-accelerated nutrition assessment and healthy eating for healthcare systems, generated by the first automated end-to-end empirical index for responsible health AI readiness and maturity: the Responsible Health AI readiness and Maturity Index (RHAMI). The index is built and the analysis and review conducted by a multi-national team spanning the Global North and South, consisting of front-line clinicians, ethicists, engineers, executives, administrators, public health practitioners, and policymakers. RHAMI analysis identified the top-performing healthcare systems and their nutrition AI, along with leading use cases including multimodal edge AI nutrition assessments as ambient intelligence, the strategic scaling of practical embedded precision nutrition platforms, and sovereign swarm agentic AI social networks for sustainable healthy diets. This index-based review is meant to facilitate standardized, continuous, automated, and real-time multi-disciplinary and multi-dimensional strategic planning, implementation, and optimization of AI capabilities and functionalities worldwide, aligned with healthcare systems’ strategic objectives, practical constraints, and local cultural values. The ultimate strategic objectives of the RHAMI’s application for AI-accelerated public health nutrition are to improve population health, financial efficiency, and societal equity through the global cooperation of the public and private sectors stretching across the Global North and South. Background: Sustainable diets, particularly the Mediterranean diet, are associated with improved human and planetary health. Nutrition literacy influences food choices, yet intergenerational differences in literacy and adherence to sustainable diets remain underexplored. This study examined the relationship between nutrition literacy, adherence to the Mediterranean diet, and sustainable nutrition behaviors among Generation X, Y, and Z adults living in Istanbul. Methods: A cross-sectional online survey was conducted among adults aged 18–60 years. Data were collected through a demographic questionnaire, the E-Healthy Nutrition Literacy Scale, and the Short Questionnaire for Mediterranean Diet Adherence and Sustainable Nutrition. Parametric statistical analyses were performed. Results: Among 1395 participants, adherence to the Mediterranean diet did not significantly differ by generation or gender (p > 0.05). Participants with prior nutrition education were significantly more likely to achieve high nutrition literacy scores and adhere to sustainable eating practices. Adherence to sustainable nutrition increased across generations, with Generation Z exhibiting the highest proportion of low adherence (53%), while Generations Y and X demonstrated progressively higher rates of moderate (39%) and high adherence (31.6%) (p < 0.05). Correlation analyses indicated that adherence to sustainable nutrition was positively associated with the application dimension of nutrition literacy, suggesting that both knowledge and practical skills may influence sustainable nutrition behaviors. Conclusion: Older and more educated participants achieved higher nutrition literacy and sustainable nutrition adherence scores. Knowledge alone is insufficient to ensure healthy or sustainable eating. Enhancing practical skills and providing sustainability-focused nutrition education may improve diet quality and public health. Full article

In the context of healthy and sustainable alternatives to fishmeal, insect meal asserts itself as a potentially healthy ingredient in aquafeeds. The aim of this study was to determine the possibility of successfully replacing fishmeal with Hermetia illucens larvae meal in the diet of the hetero-clarias hybrid, and to improve the overall bioavailability of the meal by supplementation with an enzyme complex (Hostazyme X). There were eight treatments: 0, 40, 50, and 60% replacement of fishmeal with larvae meal in the diet, with and without the enzyme supplement. In total, 240 fish with a mean weight of 11.43 ± 0.32 g were employed in the treatments for 80 days. Growth parameters (specific growth rate, feed conversion ratio, daily feed intake, daily weight gain, percentage weight gain, survival rate, production index, metabolic grow rate), hematological parameters and blood serum biochemistry were determined and analyzed. There was an improvement (p < 0.05) in most growth parameters for fish fed experimental diets. Blood parameters, although significantly different (p < 0.05) in some cases, were within a normal range for fish physiology. Thus, the partial replacement (40%) of fishmeal with larvae meal and supplementation with an enzyme complex produced the best growth performance compared to other treatments and controls. Cancer remains a leading global cause of morbidity and mortality. Modifiable lifestyle factors, including avoidance of tobacco use and excessive ultraviolet radiation, healthy dietary patterns, regular physical activity, and weight management, play key roles in prevention and care. This narrative review synthesizes evidence on lifestyle-based interventions influencing cancer risk, treatment tolerance, and survivorship. A literature search was conducted in PubMed and Scopus, supplemented by manual screening via Google Scholar. The time frame (2001–2025) was selected to reflect evidence produced within the modern era of molecular oncology and contemporary lifestyle medicine research. Eligible publications addressed carcinogen exposure (tobacco, alcohol, ultraviolet radiation), diet and nutritional strategies, physical activity, sedentary behavior, obesity, metabolic health, complementary therapies, and cancer outcomes. Evidence indicates that reducing exposure to tobacco and ultraviolet radiation remains central to cancer prevention. Adherence to predominantly plant-based diets, regular physical activity, and maintenance of healthy body weight are consistently associated with lower incidence of several cancers, including breast, colorectal, and liver cancer. Nutritional strategies such as caloric restriction, ketogenic diets, and fasting-mimicking diets show promise in improving treatment efficacy and quality of life. Complementary and mind–body therapies may alleviate treatment-related symptoms, although high-quality evidence on long-term safety and effectiveness is limited. Integrating lifestyle medicine into oncology offers a cost-effective, sustainable strategy to reduce cancer burden and enhance survivorship. Comprehensive programs combining carcinogen avoidance, dietary regulation, structured exercise, and effective radiation risk mitigation may extend healthspan, improve treatment tolerance, and help prevent recurrence. The Chinese sturgeon (Acipenser sinensis) is a critically endangered species with significant ecological and economic value. This study investigates the effects of Angelica sinensis polysaccharides (ASPs) on the antioxidant and immune responses of juvenile Chinese sturgeon through physiological and molecular approaches. Healthy juvenile Chinese sturgeon (n = 120, mean body weight 356.50 ± 92.87 g) were fed diets supplemented with 0%, 0.5%, 1.0%, and 2.0% ASP for 36 days. Results showed that ASP, particularly at 2.0%, significantly enhanced serum antioxidant capacity by increasing activities of superoxide dismutase (SOD), catalase (CAT), and glutathione peroxidase (GSH-Px) and reduced malondialdehyde (MDA) content. Immune indices, including immunoglobulins (IgG and IgM), complement components (C3 and C4), lysozyme (LSZ) activity, and antimicrobial peptides (AMPs), were also significantly elevated in the 1.0% and 2.0% ASP groups. Transcriptome sequencing of spleen and kidney tissues from the control and 2.0% ASP groups identified 151 and 467 differentially expressed genes (DEGs), respectively, with significant enrichment in immune-related pathways such as phagocytosis and the MAPK signaling pathway. Ten candidate immune-related genes (e.g., PDIA4, H-2Q9α, TTC39B) were validated by qRT-PCR, confirming the reliability of the RNA-seq data. This study demonstrates that ASP can enhance the antioxidant and immune responses of juvenile Chinese sturgeon, providing a potential natural immunostimulant for aquaculture. These findings offer a scientific basis for the conservation and sustainable production of this endangered species and highlight the need for further research on the application of ASP in sturgeon aquaculture.
