Optimizing Texture and Drying Behavior of Squid (Todarodes pacificus) for Elder-Friendly Applications Using Alkaline Pretreatment and Intermittent Drying: An Experimental and Numerical Study

This study addresses the increasing demand for texture-modified seafood products suitable for elderly consumers by focusing on dried squid, a popular protein source. The aim was to optimize the softening and drying procedures to produce a dried squid product with improved chewability and quality. Fresh squid was pretreated using sodium bicarbonate or potassium carbonate solutions (0, 0.3, 0.6, and 0.9 mol/kg) and dried at 40 °C using either continuous (CD) or intermittent drying (ID) until the final moisture content reached 18.34 ± 0.44%. Hardness generally increased with higher alkaline concentrations, with the potassium carbonate-treated samples showing better softening effects. Based on standards for elderly-friendly foods targeting chewable hardness (10,000–50,000 N/m2), low water activity (<0.58), and limited color change (ΔE = 14.32), the optimal result was achieved with 0.3 mol/kg potassium carbonate and ID. Among the thin-layer drying models, the Midilli–Kucuk model showed the best fit, with the highest average R2 (0.9974), and lowest SSE (0.0481) and RMSE (0.1688), effectively capturing the drying kinetics. Scanning electron microscopy (SEM) revealed smoother surfaces and consistent porosity in samples dried intermittently, indicating less structural degradation. Finite element analysis showed that ID improved internal moisture distribution, reduced surface crusting, and alleviated internal stresses. These results support mild alkaline soaking combined with ID as an effective strategy for enhancing dried squid quality for elderly individuals. Full article

This study presents a comprehensive evaluation and selection framework for extremely low-frequency electromagnetic field (ELF-EMF) measurement instruments. Recognizing the diversity of application environments and technical constraints, the framework addresses the challenges of selecting appropriate tools for specific scenarios. It integrates a structured, quantitative approach through a weighted scoring matrix that evaluates instrumentation across six criteria: monitoring duration, sensitivity, environmental adaptability, biological/regulatory relevance, usability, and cost. Complementing this is a logic-based flowchart that visually guides decision-making based on user-defined operational needs. The framework is applied to a realistic occupational case study, demonstrating its effectiveness in producing evidence-based, scenario-sensitive instrument recommendations. This method provides stakeholders with a transparent and adaptable tool for ELF-EMF device selection. Full article

Understanding population connectivity and genetic structure is crucial for the effective management of exploited marine species. This study investigates the population genetics of the common European squid (Loligo vulgaris) across the Mediterranean Sea, focusing on samples from the Aegean Sea and comparative sequences from Western Mediterranean, Eastern Mediterranean, and Atlantic coasts. A total of 67 COI mitochondrial sequences were analyzed, identifying 12 haplotypes and 27 polymorphic sites. Population-level genetic diversity, pairwise FST values, and haplotype network analyses revealed pronounced genetic differentiation in the eastern Mediterranean contrasting with the genetic homogeneity observed among Western populations. The low haplotype diversity observed in the Greek populations of L. vulgaris may be influenced by a combination of ecological and historical factors, as the Aegean region is recognized as a hotspot of endemism and historical population fragmentation. The results indicate the existence of at least two genetically differentiated clusters within the Mediterranean basin. This study advances current knowledge of the genetic structure of Loligo vulgaris by providing novel genetic data on populations from the eastern Mediterranean, offering valuable insights for future conservation and management strategies for the species. Selenium (Se) is an important trace element in our body; however, food composition data remain limited due to analytical challenges and interferences. Seafood, abundant in Thailand, is recognized as a rich source of Se. This study aimed to expand knowledge on Se content in seafood prepared using traditional Thai cooking methods. Twenty seafood species were selected and prepared by boiling, frying, and grilling. Inductively Coupled Plasma–Triple Quadrupole–Mass Spectrometry (ICP-MS/MS) was used to analyze total Se contents in selected seafood species. Results revealed significant variation in Se content across species and cooking methods. The Indo-Pacific horseshoe crab showed the highest Se concentration, with fried samples reaching 193.9 μg/100 g. Se concentrations were in the range of 8.6–155.5 μg/100 g (fresh), 14.3–106.6 μg/100 g (boiled), 17.3–193.9 μg/100 g (fried), and 7.3–160.1 μg/100 g (grilled). Results found significant effects of species and cooking method on Se content (p < 0.05). Fried seafood exhibited the highest estimated marginal mean Se concentration (a 78.8 μg/100 g edible portion), significantly higher than other methods. True retention (%TR) of Se ranged from 40.4% to 100%, depending on species and method. Bigfin reef squid, wedge shell, and silver pomfret showed the highest %TR (100%), while splendid squid exhibited the lowest (52.5%). Significant interaction effects on %TR were also observed (p < 0.05). Fried seafood had the highest mean %TR (88.8%), followed by grilled (82.1%) and boiled (79.7%). These findings highlight the effects of both species and cooking method on Se retention, emphasizing the nutritional value of selected seafood in preserving bioavailable Se after cooking. Optically pumped magnetometer OPM-MEG has the potential to replace the traditional low-temperature superconducting quantum interference device SQUID-MEG. Coherence analysis can be used to evaluate the functional connectivity and reflect the information transfer process between brain regions. In this paper, a finger tapping movement paradigm based on auditory cues was used to measure the functional signals of the brain using OPM-MEG, and the coherence between the primary motor cortex (M1) and the primary motor area (PM) was calculated and analyzed. The results demonstrated that the coherence of the three frequency bands of Alpha (8–13 Hz), Beta (13–30 Hz), and low Gamma (30–45 Hz) and the selected reference signal showed roughly the same position, the coherence strength and coherence range decreased from Alpha to low Gamma, and the coherence coefficient changed with time. It was inferred that the change in coherence indicated different neural patterns in the contralateral motor cortex, and these neural patterns also changed with time, thus reflecting the changes in the connection between different functional areas in the time-frequency domain. In summary, OPM-MEG has the ability to measure brain coherence during finger movements and can characterize connectivity between brain regions. Full article

This review article aims to provide an overview of superconducting magnetic quantum sensors and their applications in the biomedical field, particularly in the neurological field. These quantum sensors are based on superconducting quantum interference devices (SQUIDs), the operating principles of which will be presented along with the most relevant characteristics. Emphasis will be placed on the magnetic flux and magnetic field noise, which are essential for applications, especially brain investigations requiring ultra-high magnetic field sensitivity. The main configurations of SQUID magnetometers used for highly sensitive applications will be shown, stressing their design aspects. In particular, the configurations based on the superconducting flux transformer and the multiloop will be explained. We will discuss the most critical application of SQUID magnetometers, magnetoencephalography, which measures the weak magnetic signals produced by neuronal currents. Starting from the realization of a multichannel system for magnetoencephalography, we will present an accurate comparison with recent systems using optically pumped magnetometers. Finally, we will discuss the main clinical applications of magnetoencephalography. Full article

We present an alternative to the classical SQUID magnetometric measurements for the First-Order Reversal Curve (FORC) diagram approach by employing differential scanning calorimetry (DSC) experiments. After discussing the main results, the advantages and limitations of the magnetometric FORCs, we introduce the calorimetric method. We argue that, while the results are comparable to those obtained via magnetometry, the calorimetric method not only significantly simplifies the required mathematical computations but also detects subtle or overlapping phase transitions that might be hard to distinguish magnetically. The methodology is illustrated through both experimental data and mean-field simulations. Full article

Recent achievements in ultrafast spin physics have enabled the use of heterostructures composed of ferromagnetic (FM)/non-magnetic (NM) thin layers for terahertz (THz) generation. The mechanism of THz emission from FM/NM multilayers has been typically ascribed to the inverse spin Hall effect (ISHE). In this work, we probe the mechanism of the ISHE by inserting a second ferromagnetic layer in the form of an alloy between the FM/NM system. In particular, by utilizing the co-sputtering technique, we fabricate Fe/L10-FePt/Pt ultra-thin heterostructures. We successfully grow the tetragonal phase of FePt (L10-phase) as revealed by X-ray diffraction and reflection techniques. We show the strong magnetic coupling between Fe and L10-FePt using magneto-optical and Superconducting Quantum Interference Device (SQUID) magnetometry. Subsequently, by utilizing THz time domain spectroscopy technique, we record the THz emission and thus we the reveal the efficiency of spin-to-charge conversion in Fe/L10-FePt/Pt. We establish that Fe/L10-FePt/Pt configuration is significantly superior to the Fe/Pt bilayer structure, regarding THz emission amplitude. The unique trilayer structure opens new perspectives in terms of material choices for the future spintronic THz sources. Full article

The gel performance of giant squid is weak. Researchers have confirmed that adding some substances could improve the texture. However, the flavor has not been taken into account. In a previous study, we proved that mixed inoculation with Lacticaseibacillus casei and Staphylococcus carnosus with several seasonings adding could improve the texture of squid. Whether the addition of seasonings could affect the quality of samples or not and how fermentation affects the texture and flavor were not clear. In present study, we prepared fermented squid without seasonings. The results showed that compared with fermented samples with added seasonings, samples without seasonings might be safer, with fewer types and lower concentrations of biogenic amines. In samples without seasonings, non-inoculation had a higher pH and higher levels of biogenic amines. Meanwhile, mixed inoculation with L. casei and S. carnosus could ensure safety, improve texture and rheological properties. The water state of the fermented sample was also changed. The microstructure indicated that good network was formed in the fermented sample. After fermentation, the contents of several organic acids, free amino acids and volatile flavor compounds increased, and the results of the electronic nose test were also changed. In addition, starters were dominant during fermentation. These results indicated that mixed inoculation without seasonings might be a safer method than that with seasonings. In addition, mixed inoculation without seasonings could improve the texture and flavor of the squid. These results lay the foundation for improving fermented squid quality in further studies. The gray triggerfish Balistes capriscus has a wide geographical distribution and is used for commercial and recreational fishing worldwide. In this study, we aimed to provide technical knowledge for developing strategies for the sustainable production of gray triggerfish in aquaculture systems by characterizing the capture procedures for broodstock acquisition and developing a protocol for species maintenance in captivity. Broodstock maintenance data were collected over six months (April to September) each year, whereas breeder data were collected over three months each year (November to January). The number of shipments, capture, and survival of B. capriscus was 100%. The animals grew on average by 9.99 ± 0.11 cm over 9 months and increased their average weight by 1.658 ± 0.1 kg, representing a specific growth rate of 0.62% and an average daily weight gain of 6.14 g/day. The species were fed by alternating the supply of fresh food (minced fish, fish fillets, shrimp, squid, minced octopus and crab), divided into two times, 9:00 a.m. and 4:00 p.m., and offered until the animals were satiated. Regarding the structures used to maintain the breeding stock, 15,000 L tanks are recommended to keep up to 30 breeding individuals. Full article

Superparamagnetic iron oxide nanoparticles (SPIONs) have gained significant attention for Magnetic Fluid Hyperthermia (MFH)-based cancer therapy. However, achieving high heating efficiency under a biologically safe Alternating Magnetic Field (AMF) remains a challenge. This study investigates the synthesis and optimization of SPIONs encapsulated in TPGS-stabilized PLGA nanoparticles (TPS-NPs) using a modified single emulsion solvent evaporation (M-SESE) method. The aim was to achieve efficient magnetic heating under biologically safe AMF conditions while maintaining biocompatibility and colloidal stability, making these magnetic nanoplatforms suitable for MFH-based cancer treatment. TPS-NPs were characterized using various techniques, including Dynamic Light Scattering (DLS), Atomic Force Microscopy (AFM), Transmission Electron Microscopy (TEM), and Superconducting Quantum Interference Device (SQUID) magnetometry, to evaluate their hydrodynamic size (Dh), zeta potential (ζ), encapsulation efficiency, and superparamagnetic properties. Calorimetric MFH studies demonstrated superior heating efficiency, with Specific Absorption Rate (SAR) and Intrinsic Loss Power (ILP) values optimized at an AMF of 4.1 GAm−1s−1, remaining within Hergt’s biological safety limit (~5 GAm−1s−1). These findings suggest that SPION-encapsulated TPS-NPs exhibit enhanced heat induction, making them promising candidates for MFH-based cancer therapy. The study highlights their potential as multifunctional nanoplatforms for magnetic hyperthermia therapy, paving the way for clinical translation in oncology for advanced cancer treatment. To enhance the resolution of shallow geological structure detection, this study developed a Controlled-Source wide frequency range Magnetotelluric Detector (called CSUMT) with a frequency range spanning from 1 Hz to 1 MHz, and conducted systematic field experiments in Fengxian County, Shaanxi Province. The CSUMT system employs a high-precision 24-bit analog-to-digital converter and is compatible with both inductive magnetic sensors and superconducting quantum interference device (SQUID) magnetic sensors, featuring wide bandwidth and high dynamic range. Comparative experiments with the commercial V8 instrument demonstrated high consistency in electric field, magnetic field, and apparent resistivity measurements, confirming the CSUMT system’s reliability in field applications. In addition, this study compared the performance of inductive and SQUID magnetic sensors in actual surveys, revealing that SQUID sensors exhibit lower noise and more stable data output, making them suitable for signal detection across a broader frequency range. The results validate the practicality of the CSUMT system in complex geological environments and provide experimental support for the appropriate selection of magnetic sensors. Full article

The increasing demand for reliable food preservation strategies has driven the development of active biopolymer-based films as alternatives to conventional packaging. This study evaluates Nisin/Na-EDTA-enriched alginate and gelatin films for preserving Dosidicus gigas (jumbo squid) during refrigerated storage. Films were formulated using alginate, gelatin 220/280 Bloom, and glycerol, and characterized in terms of their mechanical, optical, and biodegradation properties. Their effectiveness for the preservation of squid fillets was tested, focusing on weight loss and color stability during refrigerated storage. The incorporation of Nisin/Na-EDTA significantly modified the film’s properties: elongation at break increased from 4.95% (alginate control) to 65.13% (gelatin 280 active), while tensile strength decreased from 8.86 MPa to 0.798 MPa (alginate). Transparency was reduced by up to 2.5 times in active agent-incorporated alginate films. All films degraded within 14 days under soil exposure, with polysaccharide-based films degrading faster. In refrigerated storage, squid fillets coated with gelatin–alginate films containing Nisin showed reduced weight loss (24.05%) compared with uncoated controls (66.36%), particularly in skin-on samples. Color parameters and whiteness index were better preserved with gelatin-based coatings. These results demonstrate the potential of gelatin–alginate films with Nisin/Na-EDTA as biodegradable, active packaging to extend the shelf life of high-protein seafood. Full article

For successful economic management of cephalopod fisheries, short-lived squid with a 1-year life span require stock assessment over a short timescale, accompanied by both in-season and real-time stock management. However, insufficient information is available about the dynamic distribution patterns of the squid Uroteuthis duvauceli, Uroteuthis edulis, Loliolus sumatrensis, and Loliolus japonica in China. Such information is vital for establishing a sustainable fisheries management system. In this study, seasonal fishery-independent bottom-trawling surveys were performed from 2018 to 2019 in the southern Yellow and East China Seas to assess the seasonal changes in the distribution of these species. Most U. duvauceli occurred at sea bottom temperatures (SBTs) of 24.52–26.96 °C and sea bottom salinity (SBS) of 30.2–31.54‰ during the summer and at 20.02–22.75 °C and 33.46–34.22‰ during the autumn. Most U. edulis occurred at an SBT of 18.29–19.61 °C and SBS 34.78–35.08‰ during the spring, at 18.63–19.43 °C and 34.43–34.66‰ during the summer, at 8.78–21.81 °C and 34.39–34.77‰ during the autumn, and at 17.90–21.55 °C and 34.34–34.61‰ during the winter. Overall, most L. sumatrensis occurred at 21.00–23.15 °C and 34.11–34.50‰ in autumn. U. duvauceli concentrated in the fishing grounds of Zhoushan during the spring, Lvsi and Zhoushan-Changjiangkou during the summer, Zhoushan and Yushan-Mindong during the autumn, and Wentai-Yushan during the winter. L. sumatrensis mainly occurred in the fishing grounds of Dasha, Changjiangkou-Zhoushan, and Mindong during the summer, Yushan during the autumn, and nearshore areas during the winter. Most L. japonica occurred in the fishing grounds of Haizhou Bay and Zhoushan-Yushan during the spring, Haizhou Bay during the summer, Lvsi during the autumn, and Haizhou Bay during the winter. Our results will be useful for determining the total allowable catch from squid fisheries in these areas in China. Full article
