Dietary Strategies in the Prevention of MASLD: A Comprehensive Review of Dietary Patterns Against Fatty Liver

Understanding the components of the diet, food groups, and nutritional strategies that help prevent MASLD (Metabolic Dysfunction-Associated Steatotic Liver Disease) is essential for identifying dietary behaviors that can stop the progression of this condition, which currently affects over one-quarter of the global population. This review highlights the importance of including antioxidant nutrients in the diet, such as vitamins C and E, CoQ10, and polyphenolic compounds. It also emphasizes substances that support lipid metabolism, including choline, alpha-lipoic acid, and berberine. Among food groups, it is crucial to choose those that help prevent metabolic disturbances. Among carbohydrate-rich foods, vegetables, fruits, and high-fiber products are recommended. For protein sources, eggs, fish, and white meat are preferred. Among fat sources, plant oils and fatty fish are advised due to their content of omega-3 and omega-6 fatty acids. Various dietary strategies aimed at preventing MASLD should include elements of the Mediterranean diet or be personalized to provide anti-inflammatory compounds and substances that inhibit fat accumulation in liver cells. Other recommended dietary models include the DASH diet, the flexitarian diet, intermittent fasting, and diets that limit fructose and simple sugars. Additionally, supplementing the diet with spirulina or chlorella, berberine, probiotics, or omega-3 fatty acids, as well as drinking several cups of coffee per day, may be beneficial. Full article

With the objective of identifying superior Vernicia montana trees grounded in phenotypic and agronomic traits, this study sought to develop and implement a comprehensive evaluation method which would provide a practical foundation for future clonal breeding initiatives. Using the Vernicia montana propagated from seedling forests grown in the Suxian District of Chenzhou City in southern Hunan Province, we conducted pre-selection, primary selection, and re-selection of Vernicia montana forest stands and took the nine trait indices of single-plant fruiting quantity, single-plant fruit yield, disease and pest resistance, fruit ripening consistency, fruit aggregation, fresh fruit single-fruit weight, fresh fruit seed rate, dry seed kernel rate, and seed kernel oil content rate as the optimal evaluation indexes and carried out cluster analysis and a comprehensive evaluation in order to establish a comprehensive evaluation system for superior Vernicia montana trees. The results demonstrated that a three-stage selection process—consisting of pre-selection, primary selection, and re-selection—was conducted using a comprehensive analytical approach. The pre-selection phase relied primarily on sensory evaluation criteria, including fruit count per plant, tree size, tree morphology, and fruit clustering characteristics. Through this rigorous screening process, 60 elite plants were selected. The primary selection was based on phenotypic traits, including single-plant fruit yield, pest and disease resistance, and uniformity of fruit ripening. From this stage, 36 plants were selected. Twenty plants were then selected for re-selection based on key performance indicators, such as fresh fruit weight, fresh fruit seed yield, dry seed kernel yield, and oil content of the seed kernel. Then the re-selected optimal trees were clustered and analyzed into three classes, with 10 plants in class I, 7 plants in class II, and 3 plants in class III. In class I, the top three superior plants exhibited outstanding performance across key traits: their fresh fruit weight per fruit, fresh fruit seed yield, dry seed yield, and seed kernel oil content reached 41.61 g, 42.80%, 62.42%, and 57.72%, respectively. Compared with other groups, these figures showed significant advantages: 1.17, 1.09, 1.12, and 1.02 times the average values of the 20 reselected superior trees; 1.22, 1.19, 1.20, and 1.08 times those of the 36 primary-selected superior trees; and 1.24, 1.25, 1.26, and 1.19 times those of the 60 pre-selected trees. Fruits counts per plant and the number of fruits produced per plant of the best three plants in class I were 885 and 23.38 kg, respectively, which were 1.13 and 1.18 times higher than the average of 20 re-selected superior trees, 1.25 and 1.30 times higher than the average of 36 first-selected superior trees, and 1.51 and 1.58 times higher than the average of 60 pre-selected superior trees. Class I superior trees, especially the top three genotypes, are suitable for use as mother trees for scion collection in grafting. The findings of this study provide a crucial foundation for developing superior clonal varieties of Vernicia montana through selective breeding. Full article

Camellia vietnamensis grows in a unique tropical environment, and its seed oil has a rich aroma. The content of unsaturated fatty acids in C. vietnamensis oil is up to 90%, which can regulate human lipid metabolism and prevent cardiovascular and cerebrovascular diseases. Compared with olive oil, C. vietnamensis oil has a higher content of unsaturated fatty acids. This study used eleven C. vietnamensis cultivars cultivated on Hainan Island. Among the 11 cultivars, “Boao 1” had fruits with the largest vertical diameter of 45.05 mm, while “Haida 1” had fruits with the largest horizontal diameter, single-fruit weight, and fresh 100-grain weight of 53.5 mm, 70.6 g, and 479.01 g, respectively. “Boao 3” had an acid value and peroxide value of 1.59 mg/g and 3.50 mmol/kg, respectively, and its saponification value content was 213.18 mg/g. “Boao 5” had the highest iodine value, 101.86 g/100 g, among the 11 cultivars. The content of unsaturated fatty acids in the seed oil of 11 cultivars ranged from 84.87% to 87.38%. The qRT-PCR results confirmed that “Boao 3” had a higher content of flavonoids and fatty acids than other cultivars. The comprehensive analysis of physiological and biochemical indices showed that the top five cultivars were “Haida 1”, “Boao 3”, “Haida 2”, “Boao 1”, and “Boao 5”. These five cultivars were suitable for large-scale cultivation in tropical regions, such as Hainan Island. The goal of this study was to build an understanding of the quality of Idesia polycarpa fruit Maxim from different ecotypes and to identify the best cultivars, with a view to providing a reference and theoretical basis for the selection and cultivation of I. polycarpa. In this study, we systematically evaluated the fruit quality characteristics of five seed sources, namely SH, SG1, GG, HX, and SG2, at four developmental stages, M1-M4, through a principal component analysis, a correlation analysis, and a significance test. Comparisons between the ecotype yielded that GG was significantly better than the other ecotype in oil content (28.7%) and fresh weight per cluster (155.56 g), while HX exhibited higher SOD content (278.18 U/g) and soluble protein content (27.50 mg·g−1), suggesting a higher level of stress tolerance. The results of the correlation analysis showed that POD was significantly negatively correlated with oil content (r = −0.633) and SOD (r = −0.617) activities, indicating that the antioxidant enzyme system may affect oil accumulation. The results of the principal component analysis showed that the cumulative contribution of the first four principal components reached 89.72%, of which principal component 1 mainly reflected yield-related traits, and principal component 2 was significantly correlated with oil content and soluble protein. Through the evaluation and screening of the five ecotypes, we determined that GG can be utilized as a good single plant in the selection and improvement of new cultivars; our findings can provide theoretical support for the selection of good cultivars of I. polycarpa seed in the central region of Henan. Winter squash (Cucurbita moschata Duchesne.) is a vegetable of high socioeconomic importance owing to the nutritional quality of its fruits, seeds, and seed oil. This study aims to review the main aspects related to the characterization, conservation, and breeding of C. moschata, emphasizing the studies with C. moschata accessions maintained by the Vegetable Germplasm Bank of the Federal University of Viçosa (BGH-UFV). Studies on C. moschata germplasm have reported high variability, particularly in Brazil. Currently, Brazil maintains six Cucurbita germplasm collections, kept in research and teaching institutions. The BGH-UFV collection, one of the largest in the country, contains approximately 350 accessions of C. moschata, mostly landraces collected from all over Brazil. Studies characterizing this germplasm have identified promising genotypes as sources of alleles for increasing the carotenoid content in the fruit pulp and oleic acid content in the seed oil. As part of a breeding program to increase seed oil productivity and improve the oil profile, studies with the BGH-UFV germplasm have identified C. moschata genotypes with seed oil productivity of up to 0.27 t ha−1 and accessions producing oil with high oleic acid content (21 to 28%). The genetic breeding program of C. moschata conducted at the UFV has prioritized the development of compact growth habit genotypes to reduce plant spacing and increase seed and oil productivity. The works involving the collection of C. moschata maintained by the BGH-UFV corroborates the importance of this germplasm as a source of alleles for improving seed oil productivity and the oil profile. Carnauba Wax Coatings Enriched with Essential Oils or Fruit By-Products Reduce Decay and Preserve Postharvest Quality in Organic Citrus

This research analyzes the innovative development of carnauba wax coatings enriched with essential oils (EOs: lemon, orange, grapefruit, clove, oregano, and cinnamon) or fruit by-products (FBPs: avocado, tomato, carrot, orange, lemon, and grapefruit) to improve postharvest preservation of organic oranges and lemons. Six EOs and six FBPs were evaluated for total phenolic content (TPC) and in vitro antifungal activity against Penicillium digitatum. Based on results, grapefruit, oregano, and clove EOs were selected for lemons, while avocado, orange, and grapefruit FBPs were selected for oranges. An in vivo test at 20 °C for 15 days with carnauba wax coatings assessed antifungal performance. Clove EO and avocado FBP showed strong in vitro inhibition and consistent hyphal suppression (~100 and ~82%, respectively). In vivo, coatings with grapefruit EO and avocado FBP significantly reduced fungal decay and sporulation (~75%) in lemons and oranges, respectively. Coated fruits also retained weight losses by ~25% compared to uncoated ones. These findings suggest that phenolic-rich natural extracts, especially from agro-industrial residues like avocado peels, offer a promising and sustainable strategy for postharvest citrus disease control. Further studies should test coating effectiveness in large-scale trials under refrigeration combined with other preservation strategies. Full article

Utilizing edible films/coatings promises to extend the shelf life of fruits by controlling various physiological parameters (e.g., respiration and transpiration rates), maintaining firmness, and delaying fruit senescence. The influence of composite-based edible coatings made from sodium or calcium caseinate: carboxymethyl chitosan (75:25) on the postharvest quality of fresh blueberries was assessed over a 28-day storage period, on the basis of weight loss and changes in pH, firmness, color, titratable acidity, soluble solids content, mold and yeast count, and respiration rate. The pH of the blueberries increased over the period of storage, with significant differences observed between uncoated and coated (e.g., pH was 3.89, 3.17, and 3.62 at the end of the storage time for uncoated, Ca 75-1% SO, and Na 75-1% SO, respectively. Desirable lower pH values at the end of storage were obtained with the calcium caseinate formulations. Over the duration of storage, other quality parameters (e.g., firmness) were better retained in coated fruits compared to the uncoated (control) one. At the last storage day, the firmness of the uncoated sample was 0.67 N·mm−1 while the sodium and calcium caseinate was 0.63 and 0.81 N.mm−1, respectively. Moreover, the microbial growth was reduced in coated fruits, indicating the effectiveness of coatings in preserving fruit quality. The mold /yeast count was 1.4 and 2.3 log CFU/g for CaCa 75-1% SO and NaCa 75-1% SO compared with uncoated with 4.2 log CFU/g. Adding soybean oil to the caseinate–carboxymethyl chitosan composite edible coating has the potential to positively influence retention of various quality parameters of blueberries, thereby extending their shelf life and maintaining overall quality. Further research could explore the optimization of coating formulations and application methods to enhance their effectiveness in preserving fruit quality during storage. Full article

As a unique woody oil crop in China, Camellia oleifera Abel. germplasm resources show significant genetic diversity in Ya’an City. This study measured 60 phenotypic traits (32 quantitative, 28 qualitative) of 302 accessions to analyze phenotypic variation, establish a classification system, and screen high-yield, high-oil germplasms. The phenotypic diversity index for fruit (H’ = 1.36–1.44) was significantly higher than for leaf (H’ = 1.31) and flower (H’ < 1), indicating genetic diversity concentrated in reproductive traits, suggesting potential genetic variability in these traits. Fruit quantitative traits (e.g., single fruit weight CV = 35.37%, fresh seed weight CV = 38.93%) showed high genetic dispersion. Principal component analysis confirmed the fruit factor and economic factor as main phenotypic differentiation drivers. Quantitative traits were classified morphologically, and correlation analysis integrated them into 13 key indicators classified using LSD and range methods. Finally, TOPSIS evaluation selected 10 excellent germplasms like TQ122 and TQ49, with fruit weight, fresh seed yield, and kernel oil content significantly exceeding the population average. This study provides data for C. oleifera DUS test guidelines and proposes a multi-trait breeding strategy, supporting high-yield variety selection and germplasm resource protection. Full article

Increasing the shelf-life of fruits and vegetables using edible natural substances after harvest is economically important and can be useful for human health. Postharvest techniques help maintain the quality of edible tissues resulting in extended marketing periods and reduced food waste. The edible coating on perishable commodities is a common technique used by the food industry during the postharvest supply chain. The objective of this research was to study the effect of edible oil to minimize the loss of postharvest physio-chemical and nutritional attributes of bananas. The study selected two banana cultivars (Musa, ‘Cavendish’ and ‘Milk’) to conduct this experiment, and two edible oils (olive oil (Olea europaea) and moringa oil (Moringa peregrina)) were applied as an edible coating under two different storage conditions (15 and 25 °C). The fruit’s physio-chemical properties including weight loss, firmness, color, total soluble solids (TSS), pH, titratable acidity (TA), TSS: TA ratio, and mineral content were assessed. The experiment lasted for 12 days. The physicochemical properties of the banana coated with olive and moringa oils were more controlled than the non-coated (control) banana under both storage temperatures (15 °C and 25 °C). Coated bananas with olive and moringa oils stored at 15 °C resulted in further inhibition in the ripening process. There was a decrease in weight loss, retained color, and firmness, and the changes in chemical parameters were slower in banana fruits during storage in the olive and moringa oil-coated bananas. Minerals were highly retained in coated Cavendish bananas. Overall, the coated samples visually maintained acceptable quality until the final day of storage. Our results indicated that olive and moringa oils in this study have the potential to extend the shelf-life and improve the physico-chemical quality of banana fruits. Full article

Ailanthus altissima (AA) is an invasive tree species rapidly spreading worldwide, colonizing both urban and agricultural or forestry environments. This three-year study aimed to assess its effects on the growth and yield traits of the Koroneiki olive cultivar under co-cultivation in pots, combined with two irrigation regimes, full and deficit irrigation (60% of full). Within each irrigation regime, olive trees were grown either in the presence or absence (control) of AA. The trial evaluated several parameters, including vegetative growth, yield traits, and oil quality characteristics. Co-cultivation with AA had no significant impact on tree growth after three years, though it significantly reduced oil content per fruit. Antioxidant capacity of the oil improved under deficit irrigation, while AA presence did not significantly affect it, except for an increase in o-diphenol concentration. Neither the fatty acid profile nor squalene levels were significantly influenced by either treatment. Fruit weight and color were primarily affected by deficit irrigation. During storage, olive oil quality declined significantly, with pre-harvest treatments (presence or absence of AA and full or deficit irrigation regime) playing a critical role in modulating several quality parameters. In conclusion, the presence of AA near olive trees did not substantially affect the key quality indices of the olive oil, which remained within the criteria for classification as extra virgin. The fruit of Z. acanthopodium contains phenolic compounds that are known to modulate the immune response. The purpose of this study is to determine the extract profile and immunomodulatory activity of Z. acanthopodium fruit and to develop a soft capsule formulation of the extract in the form of emulsion, which stabilizes and acts as an immunomodulatory candidate. Methods: Extract profiling was conducted by liquid chromatography UHPLC–HRMS, and the predicted molecular structure was then used to search for the name of the compound using the mzcloud database. Immunomodulatory activity of the extract and its emulsion was assessed using a lymphocyte viability assay. The extract emulsion to be encapsulated as a soft capsule was developed by employing different types of oil and solubilizer in the oil phase, and a water phase containing the extract and two types of emulsifiers. Results: The chemical composition of andaliman extract was analyzed, including total phenolic content (4%), total flavonoid content (0.35%), and quercetin content (0.13%). Based on LC-HRMS analysis, eleven compounds derived from the ethanolic extract of andaliman were identified as potential immunomodulatory agents. The F3.3F formulation, which contains 30% MCT oil phase with solubilizer lauroyl-PEG-32 glycerides and a water phase with 35% Polysorbat (Tween) 80 emulsifier, provided the most stability. This stability is attributed to the presence of the Tween 80 emulsifier, which has superior wetting and washing functions, strong detergency, and good emulsifying properties compared to the PEG emulsifier used in formulation F3.3E. The survival rates in the lymphocyte cell viability test results indicate that treatment with andaliman extract (173.697% at 15.625 ppm; 174.923% at 31.25 ppm; 168.457% at 62.5 ppm) was better than treatment with kojic acid (144.375% at 15.625 ppm; 137.891% at 31.25 ppm; 146.345% at 62.5 ppm), used as the immunomodulatory agent standard. Conclusions: This study highlights the potential of andaliman extract as an immunomodulatory agent to be developed as an emulsion in a soft capsule. Full article

In light of the increasing demand for laurel, driven by renewed interest in natural products and traditional medicinal usage of this plant, our study aimed to investigate the in vitro antimicrobial activity of essential oils from leaves and fruits of laurel (EOL and EOF, respectively) collected in the National Park Skadar Lake, Montenegro, as it related to their chemical composition, assessing the possibility of their usage in cosmetics and pharmaceuticals. Also, fatty oil from the remaining laurel fruit after EOF isolation was investigated as a possible source of bioactive compounds. The most abundant components in EOL and EOF were 1,8-cineol (35.1% and 33.3%, respectively) and α-terpinyl acetate (10.4% and 7.0%, respectively). Linalool (7.6%) was found in EOL, while α- pinene (5.8%) and β-elemene (5.7%) were present in significant amounts in EOF. Antibacterial and antifungal properties of EOL and EOF showed strong antibacterial activity against Staphylococcus aureus, Enterococcus faecalis, and Bacillus subtilis, and potent antifungal effects against Candida albicans, opening the door for their application as antimicrobial agents. Chemical analysis of fatty oil unexpectedly revealed prominent content of sesquiterpene lactone dehydrocostunolide and phenylpropanoid derivative (E)-2-hexyl-cinnamaldehyde (21% and 5%, respectively), suggesting further investigations of this waste material as the source of valuable compounds with proven health benefits. Predicting Nitrous Oxide Emissions from China’s Upland Fields Under Climate Change Scenarios with Machine Learning

Upland fields are a significant source of N2O emissions. Thus, an accurate estimation of these emissions is essential. This study employed four classical modeling approaches—the Stepwise Regression Model, Decision Tree Regression, Support Vector Machine, and Random Forest (RF)—to simulate soil N2O emissions from Chinese upland fields. The upland crops considered in this study covered food crops, oil crops, cash crops, sugar crops, fruits, and vegetables, excluding flooded rice. Comparative analysis revealed that the RF algorithm performed the best, with the highest R2 at 0.66 and the lowest root mean square error at 0.008 kg N2O ha−1 day−1. The application rate of mineral nitrogen fertilizers, mean temperature during the growing season, and soil organic carbon content were the key driving factors in the N2O emission model. Utilizing the RF model, total N2O emissions from Chinese upland fields in 2020 were estimated at 183 Gg. Future projections under Representative Concentration Pathway (RCP) scenarios indicated a 2.80–5.92% increase in national N2O emissions by 2050 compared to 2020. The scenario analysis demonstrated that the proposed nitrogen reduction strategies fail to counteract climate-driven emission amplification. Under the combined scenarios of RCP8.5 and nitrogen reduction strategies, a net 4% increase in national N2O emissions was projected, highlighting the complex interplay between anthropogenic interventions and climate feedback mechanisms. This study proposes that future attention should be paid to the development of nitrogen optimization strategies under the impact of climate change. Full article

Meat plays a key role in human nutrition, providing protein of high digestibility and essential micronutrients. However, according to the FAO and WHO, excessive consumption of red and processed meats may increase health risks due to their content of saturated fats, sodium, and E-number additives. For this reason, recent research has focused on the nutritional reformulation of meat products to develop functional and health-promoting alternatives that meet consumer expectations and respond to market trends for healthier and more sustainable foods. However, the addition or elimination of traditional ingredients in meat products leads to problems such as changes in texture, color, or sensory acceptability that must be solved. This review will focus on current reformulation strategies in the meat industry, including the reduction or replacement of animal fat with vegetable oils using technologies such as microencapsulation, or the elaboration of 3D gels using organogelants and hydrocolloids; the replacement of the umami flavor of salt with extracts from seafoods and mushrooms; the replacement of E-number additives with antioxidant and preservative extracts from plants and herbs; and the incorporation of dietary fiber through fruit peels and vegetable by-products. Background/Objectives: Gestational diabetes mellitus (GDM) is a major pregnancy complication with rising global prevalence. The Mediterranean Diet (MD) has shown metabolic benefits, but total adherence scores may obscure meaningful variation in dietary quality. This study aimed to investigate whether specific dietary patterns, identified within the MD framework, and their glycemic load (GL) are associated with GDM risk. Methods: This prospective cohort is part of the BORN2020 longitudinal study on pregnant women in Greece; dietary intake was assessed using a validated food frequency questionnaire (FFQ) at two time points (pre-pregnancy and during pregnancy). MD adherence was categorized by Trichopoulou score tertiles. GL was calculated for food groups using glycemic index (GI) reference values and carbohydrate content. Dietary patterns were identified using factor analysis. Logistic regression models estimated adjusted odds ratios (aORs) for GDM risk, stratified by MD adherence and time period, controlling for maternal, lifestyle, and clinical confounders. Results: In total, 797 pregnant women were included. Total MD adherence was not significantly associated with GDM risk. However, both food-specific GLs and dietary patterns with distinct dominant foods were predictive. GL from boiled greens/salads was consistently protective (aOR range: 0.09–0.19, p < 0.05). Patterns high in tea, coffee, and herbal infusions before pregnancy were linked to increased GDM risk (aOR = 1.96, 95% CI: 1.31–3.02, p = 0.001), as were patterns rich in fresh juice, vegetables, fruits, legumes, and olive oil during pregnancy (aOR = 2.91, 95% CI: 1.50–6.24, p = 0.003). A pattern dominated by sugary sweets, cold cuts, animal fats, and refined products was inversely associated with GDM (aOR = 0.34, 95% CI: 0.17–0.64, p = 0.001). A pattern characterized by sugar alternatives was associated with higher risk for GDM (aOR = 4.94, 95% CI: 1.48–19.36, p = 0.014). These associations were supported by high statistical power (power = 1). Conclusions: Within the context of the MD, evaluating both the glycemic impact of specific food groups and identifying risk-associated dietary patterns provides greater insight into GDM risk than overall MD adherence scores alone.
