Marine biomass, particularly from waste streams, by-products, underutilized, invasive, or potential cultivable marine species, offers a sustainable source of high-value biopolymers such as collagen and chitin. These macromolecules have gained significant attention due to their biocompatibility, biodegradability, functional versatility, and broad applicability across health, food, wellness, and environmental fields. This review highlights recent advances in the uses of marine-derived collagen and chitin/chitosan. In alignment with the United Nations Sustainable Development Goals (SDGs), we analyze how these applications contribute to sustainability, particularly in SDGs related to responsible consumption and production, good health and well-being, and life below water. Furthermore, we contextualize the advancement of product development using marine collagen and chitin/chitosan within the European Union’s Blue bioeconomy strategies, highlighting trends in scientific research and technological innovation through bibliometric and patent data. Finally, the review addresses challenges facing the development of robust value chains for these marine biopolymers, including collaboration, regulatory hurdles, supply-chain constraints, policy and financial support, education and training, and the need for integrated marine resource management. The paper concludes with recommendations for fostering innovation and sustainability in the valorization of these marine resources. Full article

Background: The consumption of ultra-processed foods (UPFs) represents an important public health challenge, especially among education workers, whose intense routine can negatively impact eating habits. This study aimed to analyze the factors associated with the regular consumption of UPF among employees of the Federal Network of Professional, Scientific and Technological Education (RFEPCT) in Brazil. Methods: This was a cross-sectional study, with a quantitative approach, carried out with 1563 education workers. Validated instruments on eating habits (PeNSE), mental health (DASS-21) and quality of life (WHOQOL-bref) were used. The regular consumption of UPF was defined as intake on ≥5 days in the last seven days. The association between the regular consumption of UPF and sociodemographic, occupational, behavioral, mental health and quality of life variables was assessed by Poisson regression with robust variance, generating adjusted prevalence ratios (PRadj) and respective 95% confidence intervals. Results: The regular consumption of UPF was associated mainly with female gender, a lower age group, Southeast and Midwest regions, dissatisfaction with sleep and the body, physical inactivity and poor sleep quality. In addition, the findings suggested a significant relationship between the worst stress scores and soft drinks (PRadj: 2.11; CI: 1.43–3.13), anxiety and soft drinks (PRadj: 1.83; CI: 1.24–2.70) and depression and industrialized/ultra-processed salty foods (PRadj: 2.43; CI: 1.82–3.26). The same was observed in the scores for the worst perception of quality of life, where there was a prevalence of up to 2.32 in the psychological domain and the consumption of industrialized/ultra-processed salty foods. Conclusions: The findings indicate that multiple interrelated factors—individual, psychosocial and occupational—are associated with the consumption of UPF among education workers. These results reinforce the importance of institutional policies that integrate actions to promote dietary health, mental health care and improved working conditions in the education sector. Background/Objectives: Quality of life (QOL) is a multifaceted concept involving a variety of factors which define the overall well-being of individuals. Food security, which implies a resilient food system, is one factor that is central to the calculus of the QOL status of a community considering that food is a staple of life. Advancing food security as a strategy for attaining sustained improvement in community QOL hinges on recognizing that food security is embedded in a matrix of other factors that work with it to generate the QOL the community experiences. The lived experience of the community defines the community’s QOL value matrix and the relative position of food security in that value matrix. Our thesis is that the role of food security in the lived experience of low-income communities depends on the position food security is accorded relative to other factors in the QOL value matrix of the community. Methods: This study employed a multimethod approach to define the QOL value matrix of low-income Guilford County residents, identifying the relative position of the value components and demographic segments based on priority ranking. First, an in-depth interview was conducted and then a telephone survey (280 sample) was used for collecting data. The ISAC Analysis Procedure and Best–Worst Scaling methods were used to identify and rank components of the QOL value matrix in terms of their relative impact on QOL. Results: The analysis revealed that spiritual well-being is the most important contributor to QOL, with a weight of 0.23, followed by access to health services (0.21) and economic opportunities (0.16), while food security has a moderate impact with 0.07. Conclusions: These findings emphasize the need for targeted policy interventions that consider the specific needs of different demographic segments to effectively improve QOL and inform the design of resilient food systems that reflect the lived experiences of low-income communities. Food security policies must be integrated with broader quality of life interventions, particularly for unemployed, low-educated, and single individuals, to ensure that a resilient food system effectively reduces inequities and address community-specific vulnerabilities. As digital technologies and food environments evolve, ensuring children’s food safety has become a pressing public health priority. This study examines how the policy discourse on children’s dietary safety in Korea has shifted over time by applying Latent Dirichlet Allocation (LDA) topic modeling to news articles from 2010 to 2024. Using a large-scale news database (BigKinds), the analysis identifies seven key themes that have emerged across five phases of the national Comprehensive Plans for Safety Management of Children’s Dietary Life. These include experiential education, data-driven policy approaches, safety-focused meal management, healthy dietary environments, nutritional support for children’s growth, customized safety education, and private-sector initiatives. A significant increase in digital keywords—such as “big data” and “artificial intelligence”—highlights a growing emphasis on data-oriented policy tools. By capturing the evolving language and priorities in food safety policy, this study provides new insights into the digital transformation of public health governance and offers practical implications for adaptive and technology-informed policy design. In 2023, the USDA reported that 17.9% of U.S. households with children were food insecure, meaning they had limited or uncertain access to adequate food. However, there is evidence that far more children experience food insecurity than is currently being reported, and the effects of that insecurity on child health and development are broad and far-reaching. Childcare and early childhood education centers are particularly well-positioned to make a difference yet are often not discussed in the scientific literature. Childcare arrangements provide meals and snacks to the children they serve, buffer the effects of food insecurity by supporting children’s cognitive and social–emotional development, and provide an important point of intervention for food-insecure families. In this report, we unpack the definition of food insecurity and who is considered food insecure, review how food insecurity impacts child health and development across physical, social–emotional, and cognitive domains, and explore the evidence behind childcare’s role in addressing childhood food insecurity. Additionally, we make recommendations for policy and practice, advocating for a multi-stakeholder approach, with a special focus on how childcare providers can change to best combat children’s food insecurity. This study investigates farmers’ knowledge, perceptions, and adaptation strategies to climate change in Rwanda’s Eastern Province, integrating social and physical science approaches. Analyzing meteorological data (1981–2021) and surveys from 204 farmers across five districts, we assessed climate trends and adaptation behaviors using statistical methods (descriptive statistics, Chi-square, logistic regression, Regional Kendall test, dynamic linear state-space model). Results show that 85% of farmers acknowledge climate change, with 54% observing temperature increases and 37% noting rainfall declines. Climate data confirm significant rises in annual minimum (+0.76 °C/decade) and mean temperatures (+0.48 °C/decade), with the largest seasonal increase (+0.86 °C/decade) in June–August. Rainfall trends indicate a non-significant decrease in March–May and a slight increase in September–December. Farmers report crop failures, yield reductions, and food shortages as major climate impacts. Common adaptations include agroforestry, crop diversification, and fertilizer use, though financial limitations, information gaps, and input scarcity impede adoption. Despite limited formal education (53.9% primary, 22.3% no formal education), indigenous knowledge aids seasonal prediction. Farm location, group membership, and farming goal are key adaptation enablers. These findings emphasize the need for targeted policies and climate communication to enhance rural resilience by strengthening smallholder farmer support systems for effective climate adaptation. In order to fulfil SDG 13—taking urgent action to combat climate change and its impact—SDG 2—ending hunger and poverty—and the African Union CAADP Strategy and Action Plan: 2026–2035, which’s goal is ending hunger and intensifying sustainable food production, agro-industrialisation, and trade, the resilience of commercial livestock farmers to agricultural droughts needs to be enhanced. Agricultural drought has affected the economies of many sub-Saharan African countries, including South Africa, and still poses a challenge to commercial livestock farming. This study identifies and determines the factors affecting commercial livestock farmers’ level of resilience to agricultural drought. Primary data from 123 commercial livestock farmers was used in a principal component analysis to estimate the agricultural drought resilience index as an outcome variable, and the probit model was used to determine the factors influencing the resilience of commercial livestock farmers in the Northern Cape Province of South Africa. This study provides a valuable contribution towards resilience-building strategies that are critical for sustaining commercial livestock farming in arid regions by developing a formula for calculating the Agricultural Drought Resilience Index for commercial livestock farmers, significantly contributing to the pool of knowledge. The results showed that 67% of commercial livestock farming households were not resilient to agricultural drought, while 33% were resilient. Reliance on sustainable natural water resources, participation in social networks, education, relative support, increasing livestock numbers, and income stability influence the resilience of commercial livestock farmers. It underscores the importance of multidimensional policy interventions to enhance farmer drought resilience through education and livelihood diversification. Full article

The bioeconomy represents a new way of life for people, but also a responsibility towards the future of the planet. Generating a significant socio-economic impact, it could be viewed as a key element of sustainable development, as the current and future solution for economic processes, based on new development models compelled by climate changes and the economy’s resilience to potential crises. In this context, the paper presents in its first part the Circular Economy description and the Circular Bioeconomy discussion from an interdisciplinary perspective. The second part of the paper aims to explore education as a tool for facilitating systemic changes supporting a real transition to a sustainable bioeconomy. The key aspects discussed refer to the following: (1) European policies, strategies, and action plans for bioeconomy; (2) Circular Economy as a solution for sustainable food systems; (3) main requirements and challenges for developing a (Circular) Bioeconomy, including indicators of sustainability; (4) the links between Circular Bioeconomy and the Sustainable Development Goals; (5) possibilities for integrating the agri-food industry’s needs into bioeconomy education; and (6) pathways for teach bioeconomy concepts effectively. The future of marine sustainability depends on public understanding and trust in the policy recommendations that emerge from scientific research. For common pool marine resource decisions made by the people who depend on these resources for their food, employment, and economic future, understanding the current status of these marine systems and change is essential to ensure these resources will persist into the future. As such, the informal learning infrastructure is essential to increasing marine science literacy in a changing world. This mixed-methods research study analyzed the distribution and accessibility of marine science education and research across Alaska’s five geographic regions. Using the PRISMA framework, we synthesized data from 198 institutions and analyzed peer-reviewed literature on marine ecosystems to identify geographic and thematic gaps in access to informal science learning and research focus. In parallel, we undertook geospatial analysis and resource availability to describe the distribution of resources, types of informal learning infrastructure present across the state, regional presence, and resources to support informal marine science learning opportunities. Findings from this multifactor research revealed a concentration of resources in urban hubs and a lack of consistent access to learning resources for rural and Indigenous communities. The configurative literature review of 9549 publications identified topical underrepresentation of the Bering Sea and Aleutian Islands, as well as a lack of research on seabirds across all regions. Considered together, these results recommend targeted investments in rural engagement with marine science programming, culturally grounded partnerships, and research diversification. This review concludes that disparities in learning resource support and government-funded priorities in marine wildlife research have created conditions that undermine the local people’s participation in the sustainability of sensitive resources and are likely exacerbating declines driven by rapid change in Arctic and sub-Arctic waters. West Africa’s agri-food systems face a triple burden of malnutrition, climate vulnerability, and structural inefficiencies that compromise nutrition and public health. Despite increased attention to food security, agricultural strategies often prioritize yield over dietary quality. This paper explores the critical role of food processing in advancing Nutrition-Sensitive Agriculture (NSA) and Nutrition-Smart Agriculture (NSmartAg) across West Africa. Drawing on a systems lens, it positions food processing not as a peripheral activity, but as a catalytic mechanism that connects nutrient-dense production with improved consumption outcomes. Food processing can reduce post-harvest losses, preserve micronutrients, extend food availability, and foster inclusive value chains particularly for women and youth. Yet, persistent challenges remain, including institutional fragmentation, infrastructure gaps, and limited financial and technical capacity. This paper proposes a conceptual framework linking food processing to NSA and NSmartAg objectives and outlines operational entry points for implementation. By integrating processing into agricultural policies, investment, education, and monitoring systems, stakeholders and policymakers can reimagine agriculture as a platform for resilience and nutritional equity. Strategic recommendations emphasize multisectoral collaboration, localized solutions, and evidence-informed interventions to drive the transformation toward sustainable, nutrition-oriented food systems. Background/Objectives: Despite its well-established health benefits, adherence to the Mediterranean lifestyle (MedLife) has declined globally, including in its region of origin, alongside a significant shift toward ultra-processed food consumption. Understanding the factors associated with MedLife adherence is essential for developing targeted interventions and tailored policy recommendations. As part of the MEDIET4ALL PRIMA project, this cross-sectional study aimed to comprehensively examine geo-demographic, socio-economic, psychological, behavioral, and barrier-related factors associated with and potentially contributing to MedLife adherence. Methods: Data were collected from 4010 participants aged 18 years and above across ten Mediterranean and neighboring countries using the multinational MEDIET4ALL e-survey, which included the validated MedLife index, along with various other questionnaires. Results: Results indicate that only 22% of respondents demonstrated high adherence to the Mediterranean lifestyle (MedLife), with significant variability observed across countries, age groups, education levels, and health statuses. Spain had the highest proportion of participants with high adherence (38%). Factors associated with significantly higher adherence rates include older age, living in the Mediterranean region, higher education levels, a greater awareness of MedLife principles, lower perceived barriers, normal BMI, better health status, and stable economic and marital conditions (p-values ranging from 0.04 to <0.001). Additionally, individuals with high MedLife adherence exhibited more socially and physically active lifestyles and experienced less psychological strain (p < 0.001). Regression analyses identified MedLife awareness as the strongest positive predictor of adherence (β = 0.206), followed by social participation (β = 0.194) and physical activity (β = 0.096). Additional positive contributors include life satisfaction, sleep quality, living in the Mediterranean region, age, and education (β ranging from 0.049 to 0.093). Conversely, factors that are negatively associated with adherence include sedentary behavior, living environment, and barriers such as low motivation, taste dislike, price unaffordability, limited availability, and the time-consuming nature of preparing Mediterranean food (MedFood; β ranging from −0.036 to −0.067). Conclusions: These findings indicate that fewer than one in four adults across Mediterranean and neighboring countries demonstrate high adherence to MedLife, supporting prior evidence of suboptimal adherence even within Mediterranean regions. This study identified a range of behavioral, socio-demographic, and environmental factors—both positive and negative predictors—that can help guide the design of targeted, culturally adapted interventions to promote MedLife behavior. Future research should incorporate objective measurements and longitudinal monitoring to better understand underlying mechanisms, establish causality, and develop sustainable strategies for enhancing MedLife adherence in diverse populations. This study aimed to investigate food insecurity (FI) and its association with sociodemographic characteristics and behavioral and dental alterations in adolescents from a county in the inland of northeastern Brazil. Data on 192 adolescents aged 11–14 years were analyzed in the public school system in Juripiranga, Paraíba, Northeast Brazil. The adolescents and their guardians responded to the Brazilian Food Insecurity Scale, the Strength and Difficulties Questionnaire for the caregiver, the Strength and Difficulties Questionnaire for children and adolescents, and a sociodemographic questionnaire. Academic performance was observed by calculating the median of the final assessments of basic school subjects. The prevalence of FI was 69.19, and FI was associated with a family income of up to one minimum wage per month (prevalence ratio [PR]: 1.90; 95% confidence interval [95% CI]: 1.20–3.01), no practice of religion by the guardian (PR: 1.34; 95% CI: 1.04–1.73), behavior considered inappropriate by the guardian (PR: 1.33; 95% CI: 1.02–1.73), and academic performance (PR: 1.35; 95% CI: 1.05–1.72). FI is considered a complex and multifactorial problem that requires appropriate intervention to deal with multiple social determinants. The intersection of microbial food safety and antimicrobial resistance (AMR) represents a mounting global threat with profound implications for public health, food safety, and sustainable development. This review explores the complex pathways through which foodborne pathogens—such as Salmonella spp., Escherichia coli (E. coli), Listeria monocytogenes (L. monocytogenes), and Campylobacter spp.—acquire and disseminate resistance within human, animal, and environmental ecosystems. Emphasizing a One Health framework, we examine the drivers of AMR across sectors, including the misuse of antibiotics in agriculture, aquaculture, and clinical settings, and assess the role of environmental reservoirs in sustaining and amplifying resistance genes. We further discuss the evolution of surveillance systems, regulatory policies, and antimicrobial stewardship programs (ASPs) designed to mitigate resistance across the food chain. Innovations in next-generation sequencing, metagenomics, and targeted therapeutics such as bacteriophage therapy, antimicrobial peptides (AMPs), and CRISPR-based interventions offer promising alternatives to conventional antibiotics. However, the translation of these advances into practice remains uneven, particularly in low- and middle-income countries (LMICs) facing significant barriers to diagnostic access, laboratory capacity, and equitable treatment availability. Our analysis underscores the urgent need for integrated, cross-sectoral action—anchored in science, policy, and education—to curb the global spread of AMR. Strengthening surveillance, investing in research, promoting responsible antimicrobial use, and fostering global collaboration are essential to preserving the efficacy of existing treatments and ensuring the microbiological safety of food systems worldwide. The Impact of Farmers’ Digital Participation on Cultivated Land Ecological Protection

The increasingly severe ecological and environmental problems in rural areas pose a serious threat to agricultural sustainability and human well-being. Protecting the ecological environment of cultivated land is fundamental to ensuring food security and achieving sustainable development goals. The effective integration of digital technology into farmers’ production and daily life is a key driver for transforming farming practices and advancing the ecological protection of cultivated land. This study draws on data from the 2020 China Rural Revitalization Survey (CRRS) to systematically examine the impact of farmers’ digital participation on the ecological protection of cultivated land. The main findings are as follows: (1) Digital participation significantly promotes ecological conservation of cultivated land, with each unit increase associated with a 7.8% reduction in fertilizer use intensity; (2) the results are robust across various empirical strategies, including instrumental variable estimation, the ERM approach, residual analysis, and alternative indicator specifications; (3) mechanism analysis indicates that digital participation reduces fertilizer use through three main channels: expansion of social networks (accounting for 7.10%), enhancement of subjective cognition (29.66%), and adoption of agricultural technologies (10.18%); and (4) heterogeneity analysis shows that the protective effects on cultivated land are more pronounced among households with off-farm employment experience, in villages where leaders have higher educational attainment, and in regions with more advanced digital environments. Based on these findings, the following policy recommendations are proposed: enhancing digital infrastructure in rural areas, strengthening the training of agricultural practitioners, and developing localized digital environments tailored to local conditions. Digital Literacy and Food Consumption Structure: Evidence from Rural China

Background/Objectives: Healthy diets and proper nutrition are fundamental for human survival. With economic development and rising incomes, the food consumption structure of rural residents in China has noticeably changed. However, substantial disparities still exist in the quality of food consumption between urban and rural areas, and the dietary structure of rural populations remains imbalanced. Methods: This study uses 2020 China Rural Revitalization Survey (CRRS) samples of rural residents for analysis since it asked residents questions about their digital literacy and food consumption. A total of 2827 valid rural resident samples were finally obtained, and the participants had a mean age of 54.844 years. This study employs the ordinary least squares (OLS) model and the two-stage least squares (2SLS) method to examine the impact of digital literacy on the food consumption structure of rural households and its underlying mechanisms. Results: Based on the regression analyses, digital literacy significantly improves the food consumption structure of rural residents (p < 0.05). Heterogeneity analysis shows that at the regional level, digital literacy has a stronger impact on the food consumption structure of rural residents in southern China (β = −153.255, p < 0.05); at the individual level, its impact is more pronounced among rural residents with lower educational attainment (β = −427.506, p < 0.01) and among middle-aged and elderly populations (β = −212.705, p < 0.05). The mechanism analysis reveals that digital literacy can enhance the food consumption structure of rural residents by increasing their awareness of dietary health and food safety. Conclusions: These findings highlight the necessity of integrating the optimization of food consumption structures with enhancements in digital literacy into policy-making and provides valuable insights for developing policies aimed at improving the nutritional health of rural residents.
