Background/Objectives: Abdominal obesity is a major risk factor for metabolic disorders, including type 2 diabetes and cardiovascular disease. Laver (Porphyra spp.), a seaweed commonly consumed in Korea, contains dietary fiber and bioactive compounds that may help reduce abdominal fat accumulation. This study aimed to investigate the association between laver intake and the incidence of abdominal obesity in Korean adults. Methods: Data from 5457 adults aged 40–69 years who participated in the Korean Genome and Epidemiology Study were analyzed. Laver intake was assessed at baseline using a validated 103-item food frequency questionnaire. Abdominal obesity was defined as waist circumference of ≥90 cm in men and ≥85 cm in women. Cox proportional hazards models were used to estimate hazard ratios (HRs) and 95% confidence intervals (CIs). Results: During 18 years of follow-up, 1202 men (39.4%) and 1117 women (46.4%) developed abdominal obesity. A higher laver intake was significantly associated with a lower risk of abdominal obesity in both sexes. Compared with participants in the lowest category of laver intake, those in the highest category had a 28% lower risk among men (HR: 0.72; 95% CI: 0.58–0.89; p for trend = 0.0099) and a 33% lower risk among women (HR: 0.67; 95% CI: 0.54–0.84; p for trend = 0.0005). These associations remained significant after additional adjustment for overall diet quality. Conclusions: Higher habitual laver intake was associated with a lower risk of incident abdominal obesity in Korean adults. Further prospective and intervention studies are needed to confirm these findings. Full article

Marine natural products, including seaweeds, sponges, and marine microorganisms, have emerged as promising sources of bioactive compounds with diverse pharmacological properties. We investigated the antibacterial and antioxidant potential of ethanol extracts (30%, 60%, and 90%) from Saccharina japonica collected from two Korean coastal regions, Gijang and Wando, and evaluated their bioactive metabolites through integrated in vitro and in silico approaches. Among the extracts, the 60% ethanol fraction exhibited the highest total phenolic content and strongest 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical-scavenging activity, indicating superior antioxidant capacity. Antibacterial assays revealed selective concentration-dependent inhibition against Staphylococcus aureus, while limited effects were observed against Escherichia coli. Kinetic analysis further demonstrated growth suppression of S. aureus at higher concentrations. Molecular docking was performed against multiple bacterial proteins, including DNA gyrase, topoisomerase IV, and tyrosyl-tRNA synthetase. Sterol compounds, particularly fucosterol and 24-methylene cholesterol, showed strong binding affinities across key targets, suggesting their potential role as multitarget antibacterial agents. ADMET predictions indicated favorable pharmacokinetic properties, although high lipophilicity and potential hERG II inhibition were noted. Overall, while the antibacterial effects observed were moderate, these findings suggest that marine-derived sterols from S. japonica may represent compounds of interest for further mechanistic investigation and optimization in complementary antibacterial strategies. Background: Metabolic syndrome (MetS) is a cluster of cardiometabolic abnormalities linked to increased risk of type 2 diabetes and cardiovascular disease. Emerging evidence implicates gut microbiota dysbiosis in MetS pathophysiology; however, human clinical data on seaweed-based dietary interventions remain scarce. Methods: Twenty-four older women were stratified into a MetS group (n = 13) and a control group (n = 11) per NCEP-ATP III criteria with Korean-specific waist circumference cutoffs. All participants consumed 4 g of dried laver (Porphyra tenera) per day for 12 weeks. Fecal DNA was subjected to 16S rRNA gene amplicon sequencing (V4 region; Illumina iSeq 100). Bioinformatic processing used QIIME2 and MicrobiomeAnalyst; alpha diversity was quantified by Chao1 and Fisher indices; beta diversity by Bray–Curtis, Jensen–Shannon, and UniFrac metrics; and differential abundance by LEfSe. Results: The Firmicutes/Bacteroidetes ratio declined 0.81-fold in the control group and 0.54-fold in the MetS group. Alpha diversity (Chao1 and Fisher indices) increased significantly in both groups (p < 0.001 and p < 0.05, respectively). Unweighted UniFrac distance showed significant compositional differences (R2 = 0.141, p = 0.001). LEfSe identified four FDR-significant genera: CAG_873 in the control group and Muribaculaceae, Paraprevotella, and Tyzzerella in the MetS group. Conclusions: Twelve-week dried laver supplementation produced measurable shifts in gut microbial diversity and community composition in older women, with potentially greater responsiveness in those with MetS. These preliminary findings justify adequately powered randomized controlled trials to evaluate laver as a gut-microbiome-targeted dietary strategy for MetS. Full article

Background: Seaweed consumption is a major source of dietary iodine in Korea, particularly among lactating women during the postpartum period. This practice raises concerns regarding short-term iodine excess and its potential effects on thyroid function. We examined the prevalence of thyroid disease and hormone abnormalities 1 year after childbirth among postpartum women with varying levels of seaweed-derived iodine intake. Methods: Between 17 July 2021 and 10 December 2021, 147 postpartum women were enrolled within two weeks after childbirth at postpartum care centers in Korea, which provide structured residential maternal and infant care, including standardized meals, during the early postpartum period. Participants provided informed consent and completed baseline questionnaires and dietary assessments. Iodine intake, including seaweed soup consumption during the 8-week postpartum period, and infant growth indicators were evaluated. A total of 81 participants completed the 1-year follow-up. At follow-up, dietary records, thyroid disease prevalence, hormone levels, urinary iodine concentration, and infant growth indicators were assessed. Results: At 1 year, none of the 81 participants had thyroid disease. The prevalence of abnormal triiodothyronine (T3), free thyroxine (FT4), and thyroid-stimulating hormone (TSH) was analyzed by iodine-intake quartiles, revealing no significant differences (T3: p = 0.4175; FT4: p = 0.1591; TSH: p = 0.9344). Conclusions: These findings suggest that the evidence regarding an association between short-term postpartum iodine intake and thyroid outcomes one year after childbirth remains inconclusive. Owing to the limited sample size, high attrition, and observational design, the study may have been underpowered to detect clinically meaningful differences, and potential effects cannot be excluded. Therefore, these results should be interpreted cautiously, and larger, well-designed longitudinal studies with repeated thyroid assessments are needed to better clarify the long-term implications of postpartum iodine exposure. Although marine forest restoration projects have been widely implemented along the Korean coast, most evaluations have relied on simple structural indicators such as seaweed coverage or biomass, leaving functional responses of benthic macrofaunal communities largely unexplored. This study examined the effects of marine forest restoration on the functional structure of macrozoobenthic communities at development sites along Korea’s eastern coast in 2021 and 2024. Seaweed biomass increased significantly in 2024 compared to that in 2021, and this increase in seaweed biomass showed a clear positive correlation with increases in species number, density, and biomass of macrozoobenthos. Changes in feeding types of macrozoobenthic communities were remarkable, with grazer density increasing most sharply, followed by carnivores, omnivores, and suspension feeders. Red algal biomass was also positively correlated with suspension feeders and grazers, suggesting that seaweed mediated habitat and secondary food-web structures beyond providing simple food resources. These results indicate that seaweed habitat restoration plays an important role in recovering the functional diversity and feeding guild composition of macrozoobenthic communities and demonstrates the potential of using both species and functional diversity indicators to evaluate the effectiveness of marine forest restoration projects in Korea. Understanding the growth dynamics and ecological constraints of Porphyra spp. is essential for optimizing sustainable seaweed aquaculture. However, most existing models lack physiological detail and exhibit limited performance under variable environmental conditions. This study developed a mechanistic Dynamic Energy Budget (DEB) model to simulate structural biomass accumulation, carbon and nitrogen reserve dynamics, and blade area expansion of Porphyra under natural environmental conditions in Korean coastal waters. The model incorporates temperature, irradiance, and nutrient availability (NO3 and CO2) as environmental drivers and was implemented using a forward difference numerical scheme. Field data from Beein Bay were used for model calibration and validation. Simulations showed good agreement with the observed biomass, reserve content, and blade area, with root-mean-square error (RMSE) typically within ±10%. Sensitivity analysis identified temperature-adjusted carbon assimilation and nitrogen uptake as the primary drivers of growth. The model was further used to estimate dynamic carrying capacity, revealing seasonal thresholds for sustainable biomass under current farming practices. Although limitations remain—such as the exclusion of reproductive allocation and tissue loss—the results demonstrate that DEB theory provides a robust framework for modeling Porphyra aquaculture. This approach supports scenario testing, spatial planning, and production forecasting, and it is adaptable for ecosystem-based management including integrated multi-trophic aquaculture (IMTA) and climate adaptation strategies. Background/Objectives: Seaweeds have recently gained global attention as sustainable and health-promoting food sources. However, seaweeds contain iodine. While iodine is a beneficial micronutrient, its excessive intake can pose health risks. Therefore, ensuring iodine safety has emerged as a critical priority. The present study aims to determine the total iodine content in five major edible seaweeds, namely laver (Porphyra spp.), sea mustard (Undaria pinnatifida), sea tangle (Saccharina japonica), green laver (Enteromorpha spp.), and hijiki (Hizikia fusiforme), collected from 12 coastal regions in South Korea during 2020–2024. Methods: A total of 348 samples were analyzed using inductively coupled plasma mass spectrometry following microwave-assisted digestion. A risk assessment was performed based on the estimated daily intake and hazard index (HI) using both the Korean Ministry of Food and Drug Safety (MFDS), EFSA (European Food Safety Authority), and the Joint FAO/WHO Expert Committee on Food Additives (JECFA) reference values. Results: The iodine content varied widely among the different species, with sea tangles exhibiting the highest levels (mean 2432 mg/kg dry weight). The HI values were all below 1.0, based on MFDS standards, indicating a low potential health risk. However, sea tangle exhibited values exceeding 1.0 based on the EFSA and JECFA standards. Conclusions: These findings highlight the need for species-specific iodine intake guidelines and safety regulations to ensure consumer protection and facilitate global seaweed trade. The present study provides a scientific basis for balancing the nutritional benefits of seaweed with the potential risks of overconsumption, contributing to the development of national dietary guidelines and providing evidence-based data for navigating international regulatory landscapes. Worker safety has been relatively overlooked in the rapidly growing aquaculture industry. To address this gap, industrial accident compensation insurance data—mainly from floating cage and seaweed farming—were analyzed to quantify accident types and frequencies, with a focus on human elements as root causes. Basic causes were selected based on IMO Resolution A/Res.884 and assessed through a worker awareness survey. Fault Tree Analysis (FTA), a Formal Safety Assessment technique, was applied to evaluate risks associated with these causes. The analysis identified organization at the farm site (23.3%), facility and equipment factors (22.8%), and people factors (21.4%) as the primary causes. Among secondary causes, personal negligence (13.2%), aging gear and poor maintenance (11.4%), and insufficient risk training (10.4%) were the most significant. Selective removal of these causes reduced the probability of human element-related accidents from 64.6% to 48.6%. While limited in scope to Korean data and self-reported surveys, the study demonstrates the value of combining quantitative data with worker perspectives. It provides foundational data for developing tailored safety strategies and institutional improvements—such as standardized procedures, multilingual education, and inclusive risk management—for sustainable safety in aquaculture. Heavy metals (HMs) persist in the environment and enter the human body via various pathways. Once stored in adipose tissue, they can be transferred to breast milk, posing risks to infants. Moreover, maternal diet plays a key role in influencing HM levels in breast milk. The aim of this study was to measure the concentration of HMs, including lead (Pb), cadmium (Cd), mercury (Hg), and arsenic (As), in the breast milk of Korean mothers, assess their potential health risks, and identify maternal dietary factors influencing HM concentration in breast milk. Survey data on maternal–infant pairs and breast milk samples from 209 healthy lactating mothers were collected between January and March 2023. Trained nurses manually expressed the breast milk to prevent external contamination, and maternal dietary intake was systematically assessed using the 24 h recall method. The concentrations of Pb, Cd, Hg, and As were measured, and a risk assessment was conducted using the estimated daily intake hazard quotient. A multiple linear regression model was employed to evaluate the association between the HMs in breast milk and maternal dietary factors. Cd was detected in 99% of the breast milk samples, and high detection rates were observed for Hg (97%), As (89%), and Pb (79%). Arsenic was the largest contributor to the potential health risks of HM-contaminated breast milk. Positive associations were observed between Pb concentration and legume and seaweed consumption, Cd concentration and vegetable and seaweed consumption, Hg concentration and sugar intake, and As concentration and meat intake. This study highlights that maternal dietary intake is closely linked to HM concentrations in breast milk, and elevated As levels potentially pose health risks to infants. These findings underscore the importance of adopting a healthy diet to reduce HM exposure in breast milk and to promote safer breastfeeding practices. Full article

Sustainable seaweed cultivation is crucial for marine environmental protection, ecosystem health, socio-economic development, and carbon sequestration. Accurate and timely information on the distribution, extent, species, and production of cultivated seaweeds is essential for tracking biomass production, monitoring ecosystem health, assessing environmental impacts, optimizing cultivation planning, supporting investment decisions, and quantifying carbon sequestration potential. However, this important information is usually lacking. This study developed a high-precision monitoring approach by integrating Otsu thresholding features with random forest classification, implemented through Google Earth Engine using Sentinel-2 imagery (10-m). The method was applied to analyze spatiotemporal variations of seaweed cultivation across the Korean Peninsula from 2017 to 2023. Results showed that annual cultivation acreage in North Korea remained relatively stable between 1506 and 2033 ha, while it experienced a significant increase of 8209 ha in South Korea. By integrating spectral features, seaweed phenology, and field cultivation practices, we successfully differentiated the predominant species: laver (Pyropia) and kelp (Saccharina and Undaria). During the 2022–2023 cultivation season, South Korea’s farms comprised 78% laver and 22% kelp, while North Korea’s showed an inverse distribution. A strong correlation (r2 = 0.99) between acreage and seaweed production enabled us to estimate annual seaweed production in North Korea, effectively addressing data gaps in regions with limited statistics. Our approach demonstrates the potential for global seaweed cultivation monitoring, while the spatial analysis lays the foundation for identifying potential cultivation zones. Given the relatively low initial investment requirement of seaweed farming and significant economic return, this approach offers valuable insights for promoting economic development and food security, ultimately supporting sustainable aquaculture management. Ulva pertusa Kjellman (U. pertusa) is a seaweed indigenous to the intertidal zone of the Korean coastline. U. pertusa exhibits immune-enhancing and antitumor activities, and its effects on intestinal health have gained attention. However, the mechanisms underlying its beneficial effects on intestinal physiology remain elusive. Here, the effect of U. pertusa intake in ameliorating loperamide-induced constipation in male mice was evaluated. Additionally, cellular levels of proinflammatory cytokines, including nuclear factor-kB and interleukin-1β, were assessed to decipher the intricate interplay between inflammation and improvements in bowel movement. U. pertusa intake increased fecal weight and water content and improved the intestinal transit rate. Moreover, it reduced the levels of proinflammatory cytokines, possibly via short-chain fatty acids implicated in modulating intestinal motility and mucosal inflammation. These findings underscore the efficacy of U. pertusa in improving bowel motility and intestinal functionality, and its potential in ameliorating constipation. Full article

The bacterial communities related to seaweed can vary considerably across different locations, and these variations influence the seaweed’s nutrition, growth, and development. To study this further, we evaluated the bacteria found on the green marine seaweed Ulva prolifera from Garorim Bay and Muan Bay, two key locations on Republic of Korea’s west coast. Our analysis found notable differences in the bacterial communities between the two locations. Garorim Bay hosted a more diverse bacterial population, with the highest number of ASVs (871) compared to Muan Bay’s 156 ASVs. In Muan Bay, more than 50% of the bacterial community was dominated by Pseudomonadota. On the other hand, Garorim Bay had a more balanced distribution between Bacteroidota and Pseudomonadota (37% and 35.5%, respectively). Additionally, Cyanobacteria, particularly Cyanothece aeruginosa, were found in significant numbers in Garorim Bay, making up 8% of the community. Mineral analysis indicated that Garorim Bay had higher levels of S, Na, Mg, Ca, and Fe. Function-wise, both locations exhibited bacterial enrichment in amino acid production, nucleosides, and nucleotide pathways. In conclusion, this study broadens our understanding of the bacterial communities associated with Ulva prolifera in Korean waters and provides a foundation for future research on the relationships between U. prolifera and its bacteria. Association between Consumption of Iodine-Rich Foods and Thyroid Cancer Prevalence: Findings from a Large Population-Based Study

The influence of iodine-rich foods on thyroid cancer (TC) risk remains inadequately understood. Therefore, we aimed to comprehensively investigate the relationship between three iodine-rich food groups and TC prevalence using extensive data from a large Korean population. We assessed the dietary intake of 169,057 participants in the Korean Genome and Epidemiology Study (2004–2013) using a food frequency questionnaire. The top-three iodine-rich food groups (including egg, seaweed, and dairy) were selected based on Korean dietary reference intakes and categorized by weekly consumption frequency. We conducted multiple logistic regression models to examine the relationship between food consumption and TC prevalence. After adjusting for confounding factors, higher seaweed consumption (>5 times/week) was significantly associated with lower TC prevalence (odds ratio [OR], 95% confidence interval [CI] = 0.42, 0.32–0.56, p-value < 0.001). In contrast, compared with moderate dairy consumption (3–4 times/week), lower dairy product intake (<1 time/week) was associated with higher TC prevalence (OR, 95% CI = 1.32, 1.05–1.67, p-value = 0.017). Our findings suggest that sufficient seaweed consumption may offer protection against TC, and incorporating dairy products into the diet may lower TC incidence in the Korean population. The most significant limitations of our study are the absence of 24 h urine samples for iodine status assessment and the lack of clinical data on the diagnosis of thyroid cancer. Full article

A new species of the genus Eupelte Claus, 1860, was obtained from the algal bed bottom in Dokdo Island, East Sea of Korea, using a light trap. Specimens of both sexes of the Korean new species are described in detail and compared with its congeners. The present species, Eupelte dokdoensis sp. nov., is closely similar to E. aurulenta Wells and Rao, 1987, found in algal sands from the Andaman and Nicobar Islands, and E. setacauda Monk, 1941, collected from seaweeds in the Californian coast of the USA. These species share the body length (0.5–07 mm), the nine-segmented A1, the setation of the first and second endopodal segments of P1 (one and four setae), P4 exp-3 with three inner setae, and enp-3 of P2–P4 with five setae in both sexes. The new species can be readily discernable from the previous two species by the short rostrum with a serrate distal margin, the shape of the maxillipedal basis, the setation and surface ornamentation of P1 enp-2 (covered with long setules), the exp-3 of P3 and P4 with thicker middle inner seta, and the setation of female and male P5 exopod and baseoendopod (six and six, four and two setae, respectively). In addition, the zoogeography of the valid species of the genus Eupelte is briefly discussed, and a diagnostic key to the females of the species is provided. Eupelte dokdoensis sp. nov. described herein is the first report of the genus from Korean waters and is the fourteenth member of the genus. Full article

Salinity stress poses a significant challenge to Pak Choi (Brassica rapa subsp. Chinensis) production. To address this limitation, we conducted an evaluation of 24 Korean native Pak Choi species to identify genotypes with resistance to salt stress. Through cluster analysis of electrolyte leakage data, we discovered ‘IT262109’, ‘IT279432’, and ‘IT185735’ as native accessions displaying the strongest salt tolerance. Additionally, our assessment of the maximum quantum yield of photosystem II revealed a 3.7% reduction in seaweed yield in the highly salt-tolerant system compared with the control group, while the weak salt-tolerant system experienced a substantial reduction rate of 45.7% to 49.4%. Notably, salt stress had a significant impact on Pak Choi growth, but the salt-tolerant genotype exhibited less growth reduction compared with the salt-sensitive genotype. Based on the electrolyte leakage and maximum quantum yield data, it was evident that ‘IT185735’ demonstrated poorer growth compared with ‘IT262109’ and ‘IT279432’. Consequently, ‘IT262109’ and ‘IT279432’ show great potential as parent varieties for enhancing salt tolerance in Pak Choi. Full article
