Special Issue Information
Dear Colleagues,
This Special Issue, titled ‘Fate of Regulated, Masked, Emerging Mycotoxins and Secondary Fungal Metabolites in Foods’, seeks to provide a comprehensive understanding of the behavior and impact of mycotoxins and related metabolites in food systems. While the risks posed by established, regulated mycotoxins are well documented, emerging and masked forms of these compounds present significant challenges to food safety, regulatory processes, and public health. This Special Issue aims to explore cutting-edge research on the fate, detection, and detoxification of both regulated and unregulated mycotoxins, as well as the role of secondary fungal metabolites in food contamination.
The scope of this Issue includes studies on the bioavailability, stability, transformation, and metabolism of mycotoxins in various food matrices, addressing both analytical and mechanistic aspects. Emphasis will be placed on novel methods for the identification and quantification of masked mycotoxins and the potential health risks associated with these metabolites.
Specific aims include the following:
- Fate of Regulated Mycotoxins: Research on stability, transformation, and degradation pathways of known regulated mycotoxins in various food matrices.
- Exploring Emerging Mycotoxins: Address the risks posed by newly identified mycotoxins, including their occurrence, and potential hazards in food products.
- Understand Masked Mycotoxins: Research on the formation, stability, and bioavailability of masked mycotoxins (conjugated forms) and their potential to pose health risks.
- Develop Advanced Detection Methods: Enhance current analytical techniques for identifying and quantifying both regulated and emerging/mycotoxins, including masked and conjugated forms.
- Improve Risk Assessment Models: Contribute to the development of more accurate risk assessment models that account for the complexities of mycotoxins and their metabolites in food safety evaluations.
