Special Issue Information

Dear Colleagues,

In the current scenario, the world population has been rising, and so has the demand for safe food. Urbanization and industrialization have profoundly affected agriculture. It also unknowingly had adverse effects on our environment. Over time, decreasing cultivated land has raised a serious issue in food security. It created a supply‒demand gap in food production, utilization, and consumption. Therefore, food safety and security are essential issues in the modern era. Widespread viral diseases (such as covid-19) have also focused our attention on the quality and safety of food. It is estimated that 30‒40% of food is wasted annually during storage, processing, and transportation.

Furthermore, toxins in food make it unsuitable for the consumption of humans and animals. These toxins are acute, carcinogenic, and toxic. In this Issue, we will focus on unhealthy and harmful compounds produced during transportation, processing, or storage in food and food products. We will also focus on the recent development and analytical techniques for food analysis. We welcome original, high-quality research articles, review papers, case reports, and short communications that are not yet published or are currently being reviewed by other journals or peer-reviewed conferences.

Potential topics include but are not limited to

  • Method validation of mycotoxins in food and food products;
  • Analysis and dietary assessment of mycotoxins in food and food products;
  • Detection of heavy metals from food and products;
  • Analysis of heterocyclic aromatic compounds from meat products;
  • Detoxification techniques for heterocyclic aromatic compounds in meat products;
  • Determination of polycyclic aromatic hydrocarbons from meat products;
  • Presence and detoxification techniques for acrylamide in food and food products.
