Dear Colleagues,
The fundamental priority of food processing is to maintain chemical safety while preserving nutritional and functional quality. In modern complex supply chains, ensuring food integrity requires a proactive approach that integrates advanced analytical monitoring with innovative processing interventions. This Special Issue, “Advanced Analytical Strategies and Innovative Processing Technologies for Food Quality and Safety”, will provide a high-level platform for research that addresses these contemporary challenges from a holistic "field-to-fork" perspective.
The scope of this Special Issue encompasses the scientific reflection of industrial advancements in contaminant and residue management. We particularly welcome studies that focus on innovative mitigation strategies for pesticide residues and the transition toward non-targeted analysis (NTA) for identifying unexpected chemical risks, ensuring food authenticity, and detecting sophisticated food fraud. Given the critical role of packaging, research on food contact materials (FCMs) and the migration of non-intentionally added substances (NIAS) throughout the processing chain is also a key priority.
Furthermore, as the industry develops tailored formulations for personalized nutrition, we invite contributions that evaluate the impact of innovative processing technologies (e.g., HPP, PEF, cold plasma) on the stability and bioaccessibility of bioactive compounds. To manage the high-dimensional data generated by these advancements, the integration of chemometrics and Artificial Intelligence (AI) for predictive food quality, safety modeling, and origin verification is highly encouraged. We invite the submission of original research and reviews that bridge analytical excellence with digital innovation to define the future of safe and authentic food systems.

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.
Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Molecules is an international peer-reviewed open access semimonthly journal published by MDPI.
