Molecular Techniques to Study Food Safety Challenges

Special Issue Information

Dear Colleagues,

Food can be an important source of human diseases or even deaths due to pathogenic microorganisms and microbial toxins. Basic actions have proven to be effective in ensuring food safety, but new challenges are emerging due to some factors, such as climate change, exportations, changes in lifestyles and consumers’ interest in environmentally friendly food production. To cope with this, it is of utmost significance to have rapid, cost-effective, sensitive and specific procedures for the early detection and appropriate surveillance of foodborne pathogens. Molecular techniques are a fundamental tool to be used in industries and modern laboratories for this purpose. In this Special Issue, our aim is to gather both research papers and reviews focused on detecting and quantifying foodborne pathogens and microbial toxins, when produced, using molecular analyses. Special attention will be given to work focused on developing new omics methods for screening such hazards in the food supply chain and their ability to evaluate the effect of current trends in the food industry on the products.

Manuscript Submission Information

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. International Journal of Molecular Sciences is an international peer-reviewed open access semimonthly journal published by MDPI.
