Dear Colleagues,
We are pleased to invite you to contribute to this Special Issue entitled “Extraction, Characterization and Application of Bioactive Compounds”. Bioactive compounds derived from plant, animal, microbial, and food by-product sources attract increasing attention due to their potential role in promoting human health and preventing chronic diseases. Considerable progress has been made in developing extraction, purification, and stabilization techniques that improve the recovery, bioavailability, and biological efficacy of these compounds. At the molecular level, growing interest is focused on the mechanisms underlying their antioxidant, anti-inflammatory, antimicrobial, metabolic, and cell-protective properties.
This Special Issue aims to collect submissions of original research articles and reviews addressing the molecular aspects of bioactive compound extraction, characterization, and application in food, nutrition, and health sciences. Topics of interest include, but are not limited to, novel extraction methods, encapsulation, functional food development, bioaccessibility and bioavailability, molecular mechanisms of action, and the utilization of by-products as sustainable sources of bioactives.

Manuscript Submission Information
Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.
Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. International Journal of Molecular Sciences is an international peer-reviewed open access semimonthly journal published by MDPI.
