Dear Colleagues,

The global demand for safe, nutritious, and sustainable foods has never been greater. As climate change, population growth, and limited natural resources continue to challenge the agri-food landscape, the need for innovative, science-driven solutions becomes increasingly urgent. In this context, foodomics—the integration of genomics, transcriptomics, proteomics, and metabolomics—emerges as a transformative and multidisciplinary frontier capable of revolutionizing how we understand, produce, and consume food.

This Special Issue, “Foodomics: Challenges and Opportunities for a Sustainable Future,” invites pioneering research articles and visionary reviews that harness omics technologies to decode the molecular complexity of food systems and their impact on health, the environment, and society. By merging molecular-level insights with sustainability science and systems biology, Foodomics provides powerful tools to trace the origin of foods; ensure quality, safety and authenticity; and design next-generation functional foods that support both human health and planetary well-being.

We particularly encourage contributions exploring omics-guided discovery of bioactive compounds, circular and green processing technologies, multi-omics approaches for food safety, and data-driven models for personalized nutrition and precision health. Innovative studies addressing microbiome–food interactions, biotechnological valorization of by-products, and sustainable food reformulation are also welcome.

Together, these contributions will shape a new paradigm in food science, where molecular precision, digital innovation, and sustainability converge to redefine global food systems and drive a resilient, health-promoting, and environmentally responsible future.

Manuscript Submission Information

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. International Journal of Molecular Sciences is an international peer-reviewed open access semimonthly journal published by MDPI.
