Special Issue Information

Dear Colleagues,

The ocean is an invaluable source of food, providing a wide variety of marine resources—some extensively exploited, others still underutilized. Increasing consumer demand for seafood products that are nutritious, safe, sustainable, and sensorially appealing has significantly influenced production and harvesting practices in recent years.

At the same time, there is growing global awareness of the need for more sustainable approaches in the exploitation and management of marine resources. In this context, enhancing seafood quality requires the development and implementation of advanced strategies in harvesting, aquaculture, processing, storage, transport, preservation, and traceability. These innovations are key to improving food safety, minimizing foodborne risks, extending shelf life, and maintaining the nutritional and functional value of seafood products.

Moreover, ensuring the sustainable use of marine biodiversity and protecting ocean ecosystems are essential components in securing long-term seafood quality and availability.

This second edition of our Special Issue welcomes original research articles and comprehensive reviews that explore cutting-edge techniques in seafood production and processing. Contributions focusing on innovative methods to enhance nutritional quality, prolong shelf life, ensure safety, and promote environmental sustainability are especially encouraged.

All manuscripts are thoroughly refereed through a single-blind peer-review process. Fishes is an international peer-reviewed open access monthly journal published by MDPI.
