Dear Colleagues,
Globally, there is an urgent need for innovative and sustainable food production to solve worldwide issues, such as food waste and resource limitations. Fermentation technology has been traditionally used for food preservation and for building flavors, as well as acting as a compelling bioconversion technology. By integrating advances in microbiology, low-value biomass conversion, process design and system engineering, modern fermentation technologies offer new, sustainable value chains to reduce environmental impacts and explore the possibility of high-value, functional products.
This Special Issue on “Advanced Fermentation Technologies for Value-Added Production” will focus on cutting-edge research and reviews that explore novel fermentation strategies to convert waste streams into functional ingredients, bioactives, biomaterials, and other high-value compounds or products. We welcome original research papers and comprehensive reviews from worldwide experts on fermentation to share and shine the diverse application areas, emphasizing innovations and sustainable food systems.
Topics of interest for this Special Issue include, but are not limited to, the following:
- Bioconversion of food waste, crop residues, and industrial by-products;
- Solid-state and submerged fermentation for functional ingredients and/or products;
- Microbial systems for precision metabolite production;
- Advanced bioreactor design, process optimization, and scale-up strategies;
- Integration of fermentation into circular bioeconomy frameworks;
- Sustainability assessment and life cycle analysis of fermentation processes.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Bioengineering is an international peer-reviewed open access monthly journal published by MDPI.
