Dear Colleagues,
The wide variety of plants offers a nearly unlimited source of new beverage ingredients. The rise of functional beverages represents a significant evolution in the beverage industry, driven by consumer demand for products that support health and wellness.
Consumers now demand innovative products with advanced functionalities. Therefore, products such as flavored waters, isotonic waters, yogurts, energy drinks, ready-to-drink functional teas, and similar products will shape the future beverage market compared to traditional products such as fruit juices, colas, milk, tea, and others. To ensure their success, it is essential to scientifically validate their health benefits. Therefore, the development of next-generation beverages will focus on several key areas: identifying and measuring bioactive compounds, studying the bioavailability and metabolism of functional ingredients, and confirming product safety and stability.
This Special Issue aims to explore the functional compounds driving innovation in the beverage industry. Space will be given to the study of beverages whose active ingredients have adaptogenic, nootropic, probiotic, and prebiotic functions.

Manuscript Submission Information
Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.
Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Beverages is an international peer-reviewed open access monthly journal published by MDPI.

Submitted papers should be well formatted and use good English. Authors may use MDPI's English editing service prior to publication or during author revisions.
