Dear Colleagues,
The global meat industry is facing increasing challenges related to sustainability, product quality, food safety and resource efficiency. Growing consumer expectations, stricter regulatory requirements and environmental concerns are driving the development of innovative technologies and strategies to improve meat production, processing, preservation and quality evaluation.
This Special Issue aims to showcase recent advances in sustainable meat products, with particular focus on innovations that enhance processing efficiency, product quality, safety and shelf-life. Contributions addressing emerging processing technologies, novel preservation strategies, quality assessment methods, food safety monitoring, the sustainable utilization of raw materials and by-products and digital technologies for meat production and quality control are particularly encouraged.
Original research articles, reviews and case studies are welcome. The Special Issue seeks to provide a multidisciplinary platform for researchers, engineers and industry professionals to share innovative solutions and practical applications that contribute to the development of safer, higher-quality and more sustainable meat products. Studies combining technological, microbiological, chemical, sensory, environmental and industrial perspectives are especially encouraged, as they may contribute to a more comprehensive understanding of sustainability in modern meat production.

Manuscript Submission Information
Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.
Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-anonymized peer-review process. Applied Sciences is an international peer-reviewed open access semimonthly journal published by MDPI.
