Special Issue Information

Dear Colleagues,

It is with great pleasure that we present the new Special Issue of Applied Science on “Advances in Food Industry By-Product Recovery: Characterization, Processing, and End-Use Strategies”.

As is widely known, the environmental and economic sustainability of the food supply chain is currently being compromised by both anthropogenic and abiotic factors. In both cases, the emerging scenario is unequivocal—approximately one-third of the food produced becomes waste, compounding the significant exploitation of finite resources such as water, land, and energy.

In order to help surpass linear economic systems by introducing advancements that can form the basis of a circular economy, this Special Issue seeks to gather together contributions from authors whose work analyzes food supply chains with the aim of recovering and valorizing both the by-products of food industry processes and finished products that go unsold or discarded due to noncompliance with commercial standards. Therefore, in this Special Issue, original research articles and reviews on these fields are welcome.

We encourage authors to collect and publish data on the processes, yields, amounts, and quality of by-products, food loss, and food waste. Specifically, authors who wish to contribute may present their work on the characterization and recovery of both by-products and waste, in qualitative and quantitative terms.

Submitted works may concern the collection and analysis of data on food losses and waste in a specific sector/industry; the chemical, physical, nutritional, microbiological characterization of waste; the development of a method for recovery; strategies for valorization, i.e. the development of a new product for different purposes (packaging/insulation/soil improver/food/energy); or the evaluation of the economic and environmental sustainability of new recovery strategies.
