Special Issue Information

Dear Colleagues,

Edible oils are essential components of the human diet and play a crucial role in nutrition, food functionality, and sensory quality. Increasing consumer awareness, along with growing demands for healthier, sustainable, and high-quality food products, has driven intensive research into innovative oil processing technologies and advanced quality characterization methods. At the same time, challenges related to oxidation stability, contaminant formation, authenticity, and nutritional value require continuous scientific attention.

This Special Issue aims to highlight advances in conventional and emerging processing techniques, such as cold pressing, refining optimization, enzymatic processing, and novel physical technologies, as well as modern analytical approaches for assessing oil quality, safety, and functionality. Particular emphasis is placed on understanding the relationships between processing conditions, chemical composition, physicochemical properties, and nutritional characteristics of edible oils.

We are pleased to invite researchers and practitioners to contribute to this Special Issue, which aims to present recent scientific and technological progress in the production, processing, and quality assessment of edible oils. 
Research areas may include (but are not limited to) the following:

1.    Innovative and sustainable edible oil processing technologies;
2.    Quality characterization, authenticity, and adulteration detection;
3.    Oxidative stability, shelf life, and safety assessment;
4.    Nutritional, functional, and sensory properties of edible oils.

Manuscript Submission Information

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Applied Sciences is an international peer-reviewed open access semimonthly journal published by MDPI.
