Dear Colleagues,
Since ancient times, the various parts of medicinal, aromatic, and wild herbs (roots, stems, leaves, flowers, seeds, etc.) have been utilized not merely for flavouring and food preservation, but as significant reservoirs of bioactive molecules that underpin traditional medicine and ethnopharmacology.
Volatile compounds such as terpenoids and other constituents of essential oils have demonstrated over the years a broad spectrum of biological activities, including antioxidant, protective, antimicrobial, antiproliferative, and anti-inflammatory effects.
With growing global concerns about antibiotic resistance, the increasing scepticism toward synthetic antioxidant additives in the food supply chain, and the heightened interest in natural products that promote human health, essential oils have gained renewed scientific attention.
Supported by extensive scientific evidence, essential oils may contribute to improving product safety, food preservation, and protection against environmental stressors such as metals, while also exerting significant antioxidant and antiproliferative effects beneficial to human health.
Therefore, the aim of this Special Issue is to provide readers with an updated collection of innovative research articles and original reviews, emphasizing recent biological and chemical advances in the phytochemical investigation of essential oils and the evaluation of their antiproliferative and antioxidant properties as natural protective agents.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process.
