Dear Colleagues,
Biofortification aims to enhance the nutritional value of foods. In the biofortification of animal products, by improving the nutrient content of animal feed, the animals themselves become a source of nutrients when consumed by humans.
However, will such interference not change the characteristics of the final product (meat)?
This may concern changes in other indicators of the nutritional value of the raw meat material, both before and after culinary processing. Changes may also affect the sensory characteristics of these products. In the quality analysis of functional food, the sensory analysis of these products is also essential.
Therefore, the topic of the Special Issue is the modification of pig feeding as a need for sustainable agriculture, which includes the strengths and weaknesses of such activities. In this Special Issue, we invite contributions focusing on assessing the effects of modifying feed intended for pigs at every stage of their life in the following research topics:
- The waste raw materials for animal feeding and the sensory quality of the obtained raw material.
- Waste raw materials as a source of antioxidants in animal feed: strengths and weaknesses of such activities.
- Feed modification of animals as a method of food biofortification in nutrients, e.g., vitamins and minerals.
- Society's attitude towards biofortification of food of animal origin.
