Special Issue Information

Dear Colleagues,

Increasing consumer awareness regarding nutrition, health, and sustainability has intensified research efforts focused on the quality and safety of agricultural products. Bioactive compounds, which occur naturally in crops and can be recovered from agricultural by-products, are crucial in determining the nutritional value, safety, and functional properties of food products. Their effective utilization is vital for supporting sustainable food systems and advancing circular economy strategies. Bioactive constituents, including polyphenols, carotenoids, glucosinolates, dietary fibers, bioactive peptides, and other phytochemicals, are influenced by various factors throughout the agri-food chain. Agricultural practices, environmental conditions, post-harvest handling, processing technologies, and storage all impact their composition, stability, bioavailability, and biological activity. A comprehensive understanding of these factors is essential for preserving product quality, ensuring safety, and enhancing the development of functional foods derived from both primary agricultural materials and their by-products. This Special Issue focuses on bioactive compounds in agricultural products and by-products, encompassing the entire continuum from primary production to the design and application of functional foods.

We welcome interdisciplinary contributions from agriculture, food science and technology, chemistry, nutrition, biotechnology, and related disciplines. Topics of interest include the identification and characterization of bioactive compounds, innovative extraction and processing technologies, quality and safety assessment, valorization of agricultural by-products, and the development of novel functional food products. Both original research articles and comprehensive review papers are invited.

Manuscript Submission Information

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Agriculture is an international peer-reviewed open access semimonthly journal published by MDPI.
