Paper-based colorimetric biosensors represent a promising class of low-cost diagnostic tools that do not require external instrumentation. However, their broader applicability is limited by the environmental concerns associated with conventional metal-based nanomaterials and the subjectivity of visual interpretation. To address these challenges, this study introduces a proof-of-concept platform—using CA19-9 as a model biomarker—that integrates naturally derived melanin nanoparticles (MNPs) with machine learning-based image analysis to enable environmentally sustainable and analytically robust colorimetric quantification. Upon target binding, MNPs induce a concentration-dependent color transition from yellow to brown. This visual signal was quantified using a machine learning pipeline incorporating automated region segmentation and regression modeling. Sensor areas were segmented using three different algorithms, with the U-Net model achieving the highest accuracy (average IoU: 0.9025 ± 0.0392). Features extracted from segmented regions were used to train seven regression models, among which XGBoost performed best, yielding a Mean Absolute Percentage Error (MAPE) of 17%. Although reduced sensitivity was observed at higher analyte concentrations due to sensor saturation, the model showed strong predictive accuracy at lower concentrations, which are especially challenging for visual interpretation. This approach enables accurate, reproducible, and objective quantification of colorimetric signals, thereby offering a sustainable and scalable alternative for point-of-care diagnostic applications. Spruce wood is a natural polymeric material, consisting of cellulose, lignin, hemicelluloses and other secondary components, which gives it a unique chemical footprint and architecture. Varnishes are used in musical instruments to protect the wood against humidity variations, wood being a hygroscopic material, but also to protect the wood from dirt. The varnishes used both to protect the wood from resonance and to ensure a special aesthetic appearance are either polymeric varnishes (nitrocellulose, oil-based) or volatile solvents (spirit). In this study, the color changes, the surface morphology and the chemical spectrum produced by three types of varnishes, applied in 5, 10 and 15 layers, on resonance spruce plates were analyzed. The results revealed significant changes in the color parameters: the lightness decreased by approximately 17% after the first layer, by 50% after 5 layers, by 65% after 10 layers and by 70% after 15 layers. The color parameters are most influenced by the anatomical quality of spruce wood (annual ring width and earlywood/latewood ratio) in the case of oil-based varnishes and least influenced in the case of nitrocellulose varnishes. The chemical fingerprint was determined by FTIR spectrum analysis, which revealed that the most pronounced absorptions were the double band 2926–2858 cm−1, corresponding to aliphatic methylene and methyl groups (asymmetric and symmetrical C-H stretch), and the bands at 1724 cm−1 (oil-based varnish), 1722 cm−1 (nitrocellulose varnish) and 1708 cm−1 (spirit varnish), all assigned to non-conjugated carbonyl groups in either carboxylic acids, esters aldehydes or ketones. The novelty of the study lies in the comparative analysis of three types of varnishes used in the musical instrument industry, applied to samples of spruce resonance wood with different macroscopic characteristics in three different layer thicknesses. The main objective of this study was the development of two semi-hard goat cheeses supplemented with Palmaria palmata and Ulva sp. with the aim of developing innovative food products, increasing the concentration of nutrients in these cheeses and familiarizing consumers with seaweed-containing foods. The impact of seaweed addition was evaluated through physicochemical, microbiological, and organoleptic properties of the semi-hard goat cheeses. Carbohydrate content was relatively low, whereas the total lipid content was relatively high (particularly in semi-hard goat cheese supplemented with seaweeds). Crude protein content presented higher values in semi-hard goat cheese supplemented with Ulva sp. The semi-hard goat cheese supplemented with Ulva sp. shows increased levels of Ca, Fe, Mn, and Zn. Instrumental color and the textural parameters of semi-hard goat’s cheese varied significantly with seaweed addition. Most of the microbiological load complies with the Portuguese (INSA) and the United Kingdom’s (HPA) guidelines for assessing the microbiological safety of ready-to-eat foods placed on the market. Additionally, the Flash Profile scores of semi-hard goat cheeses supplemented with seaweeds highlighted aroma and flavor complexity. Overall, this study confirms the potential of using seaweeds as a viable alternative to produce semi-hard goat cheeses with less pungency or goat milk flavor, making this product more pleasant and appealing to consumers sensitive to these sensory characteristics. Apples are the most widely consumed temperate fruit worldwide and are often stored for long-term to ensure year-round availability. However, maintaining fruit quality during storage and subsequent shelf-life remain a significant postharvest challenge. This study investigated the combined effects of the harvest stage, cold storage duration, and shelf-life on the physico-chemical properties of Granny Smith apples. Key quality attributes including texture, maturity indices, color, and starch degradation were evaluated using instrumental methods and Raman microscopy. Fruit quality was affected differently by individual factors and their interactions. Texture parameters showed varied sensitivity: the harvest stage affected several parameters, storage duration had the strongest overall impact, shelf-life influenced a moderate number of parameters, and some were affected by combined factor interactions. Maturity indices were significantly influenced by all factors individually and combined. Color parameters were consistently affected by harvest stage and storage, with shelf-life and interactions influencing fewer parameters. These findings emphasize the complex interplay of factors shaping apple quality after harvest. The study demonstrates the importance of timing harvest and tailoring postharvest handling to maintain apple quality. It also demonstrates the potential of combining traditional and advanced techniques for effective ripeness monitoring. Full article

The objective was to characterize physicochemical, nutritional, and structural properties of a novel meat-based hummus. This product was created by substituting 50% of chickpea paste with mutton. The meat-based hummus contained 0.4% sodium acid sulfate as an antimicrobial agent. The pH values of traditional hummus were greater than those of the meat-based hummus. There was no significant difference in day 0 total plate count between plant- and meat-based hummus; however, the total plate count on day 7 was significantly (p < 0.05) lower in the meat-based hummus than plant-based hummus due to antimicrobial addition. Instrumental color analysis showed greater lightness (L* values) and yellowness values for traditional hummus compared to the meat-based hummus. The meat-based hummus had 66% greater protein than traditional hummus. Scanning electron microscopy revealed a porous, gel-like structure in plant-based hummus, while meat-based hummus showed a dense, fibrous network. The flavor, creaminess, grain properties, and mouth coating scores of meat-based hummus were greater than those of traditional chickpea hummus. The study indicated that meat-based hummus can be developed by incorporating 50% cooked minced mutton. Creating innovative meat-based products like meat hummus offers the benefits of both plant-based and animal-based diets, making it a good option for flexitarians. Full article

The quality and freshness of fruits and vegetables are critical factors in consumer acceptance and are significantly affected during transport and storage. This study aimed to evaluate the quality of greenhouse-grown tomatoes stored for 24 days by combining non-destructive image analysis, spectrophotometric assays (including total phenolic content and antioxidant and antiradical activity assessments), and attenuated total reflectance–Fourier transform infrared (ATR-FTIR) spectroscopy. Additionally, water activity, moisture content, total soluble solids, texture, and color were evaluated. Most physicochemical changes occurred between days 14 and 17, without major impact on overall fruit quality. A progressive transition in peel hue from orange to dark orange, and increased surface irregularity of their textural image were noted. Moreover, the combined use of instrumental and image analyses results via multivariate analysis allowed the clear discrimination of tomatoes according to storage days. In this sense, tomato samples were effectively classified by ATR-FTIR spectral bands, linked to carotenoids, phenolics, and polysaccharides. Machine learning (ML) models, including Random Forest and Gradient Boosting, were trained on image-derived features and accurately predicted shelf life and quality traits, achieving R2 values exceeding 0.9. The findings demonstrate the effectiveness of combining imaging, spectroscopy, and ML for non-invasive tomato quality monitoring and support the development of predictive tools to improve postharvest handling and reduce food waste. The objective of this study was to analyze the impact of solar and hybrid dryers on the physicochemical characteristics, fingerprints, and cognitive-sensory perceptions of Mexican consumers of traditional tostadas made with corn of different races. Corn tostadas from different native races were evaluated with solar and hybrid (solar-photovoltaic solar panels) dehydration methods. Proximal chemical quantification, instrumental analysis (color, texture), fingerprint by Fourier transform infrared spectroscopy (FTIR), and sensory-cognitive profile (emotions and memories) and its relationship with the level of pleasure were carried out. The data were evaluated using analysis of variance models, Cochran Q, and an external preference map (PREFMAP). The results showed that the drying method and corn race significantly (p < 0.05) affected only moisture content, lipids, carbohydrates, and water activity. Instrumental color was influenced by the corn race effect, and the dehydration type influenced the fracturability effect. FTIR fingerprinting results revealed that hybrid samples exhibited higher intensities, particularly associated with higher lime concentrations, indicating a greater exposure of glycosidic or protein structures. Race and dehydration type effects impacted the intensity of sensory attributes, emotions, and memories. PREFMAP vector model results revealed that consumers preferred tostadas from the Solar-Chiquito, Hybrid-Pepitilla, Hybrid-Cónico, and Hybrid-Chiquito races for their higher protein content, moisture, high fracturability, crunchiness, porousness, sweetness, doughy flavor, corn flavor, and burnt flavor, while images of these tostadas evoked positive emotions (tame, adventurous, free). In contrast, the Solar-Pepitilla tostada had a lower preference because it was perceived as sour and lime-flavored, and its tostada images evoked more negative emotions and memories (worried, accident, hurt, pain, wild) and fewer positive cognitive aspects (joyful, warm, rainy weather, summer, and interested). However, the tostadas of the Solar-Cónico race were the ones that were most rejected due to their high hardness and yellow to blue tones and for evoking negative emotions (nostalgic and bored). This study reports a successful selective waste collection initiative led by UFSC’s Araranguá campus in a municipality without a recycling system. The initiative, named “Recicla UFSC Ara”, was structured around three main components: (i) the installation of color-coded bins for recyclable waste (including paper, plastic, metals, and polystyrene) and non-recyclable waste in indoor and common areas; (ii) the establishment of a Voluntary Delivery Point (PEV) to gather specific recyclable materials, such as glass, electronics waste, plastic bottles, writing instruments, and bottle caps; and (iii) the execution of periodic educational community-focused campaigns aimed at encouraging participation from both the university and the broader local community. Recyclables were manually sorted and weighed during regular collection rounds, and contamination rates were calculated. Quantitative data collected from 2022 to 2025 were analyzed using descriptive statistics and one-way ANOVA to assess waste generation and contamination trends. Gathered recyclables were directed to appropriate partner institutions, including local “Ecoponto”, non-profit organizations, and corporate recycling programs. The study also conducted a literature review of similar university-led waste management programs to identify standard practices and regional specificities, providing a comparative analysis that highlights both shared elements and distinctive contributions of the UFSC model. Results demonstrate a significant volume of waste diverted from landfills and a gradual improvement in waste disposal practices among the university community. Targeted communication and operational changes mitigated key challenges, improper disposal, and logistical issues. This case underscores the role of universities as agents of environmental education and local sustainable development. Full article

Physico-chemical analyses, fatty acid profiles, microbiological analyses and sensory characteristics (assessed by trained judges and by consumers) were carried out on four types of goat cheese produced in artisanal cheese factories using raw milk from different autochthonous Spanish goat breeds (Malagueña, Florida, Murciano-Granadina and Cabra del Guadarrama). The cheeses studied were different in fat, protein, salt, pH, moisture, acidity and color due to the different production technologies and the properties of the milk of each breed. Saturated fatty acids (SFAs) were the predominant fatty acids in all the goat milk cheeses studied. Cabra del Guadarrama Cheese (CGC) and Malagueña Cheese (MC) showed an n-6/n-3 ratio < 4, and MC was found to have the lowest atherogenic and thrombogenic indices. CGC had a lower fat content than the rest of the cheeses studied. The fatty acid profile of CGC was more similar to MC than to Florida Cheese (FC) and Murciano-Granadina Cheese (MGC). MGC had a higher atherogenic and thrombogenic index, a higher PUFA n-6/n-3 ratio than the rest of the cheeses studied and a higher fat content. Therefore, CGC, MC and FC had a healthier lipid profile than MGC. The texture properties of CGC and FC were more similar to each other than to those of MC and MGC (harder cheeses). Sensory analyses performed with trained judges were in accordance with instrumental texture parameters. Consumer acceptability was similar for all the cheeses under blind conditions and only under informed conditions did consumers score FC significantly higher than MGC. In a rank test FC was chosen as the better cheese for a greater number of consumers both in blind and in informed conditions. The provision of information improved the overall liking of Cabra del Guadarrama Cheese and worsened that of Murciano-Granadina Cheese. The high quality of the cheeses confirms the need to raise consumer awareness of autochthonous goat breeds to increase the consumption of these products in order to contribute to the preservation of these breeds. A simple and rapid smartphone-based colorimetric assay for peracetic acid concentration was developed to facilitate point-of-use disinfectant preparations for infection prevention and control. The colorimetric detection was based on the oxidation of N,N-diethyl-phenylenediamine by peracetic acid through an intermediate reaction with potassium iodide, resulting in pink-magenta products. The colorimetric reaction was performed on a 96-well plate; then, the color products were photographed in one image. The color intensity was evaluated to determine the peracetic acid concentration using a custom-built mobile application named Modern Peracetic Acid Analysis. The relative green intensity of the pink-magenta products was directly proportional to the peracetic acid concentration in the range of 0.15 to 3.0 µg/mL. The detection and quantitation limits were 0.11 µg/mL and 0.34 µg/mL, respectively. The approach was successfully applied to determine the peracetic acid concentration in pharmaceutical disinfectant formulations. The results obtained using the proposed approach showed no significant differences from those obtained using acid–base titration at the 95% confidence level. The greenness of the proposed approach was evaluated using the Complementary Green Analytical Procedure Index, Analytical Greenness, and Blue Applicability Grade Index, demonstrating enhanced environmental friendliness and practical advantages, as well as simple, portable instrumentation that is easier to operate than traditional spectrophotometric and titration methods. Furthermore, a sustainability assessment based on the Need, Quality, and Sustainability index underscored its enhanced sustainability. Full article

Awake Bruxism (AB) is defined as masticatory muscle activity during wakefulness, characterized by repetitive or sustained tooth contact and/or the bracing or thrusting of the mandible. AB remains less understood than Sleep Bruxism (SB), and its identification remains a methodological challenge. The aim of this study was to introduce the Awake Bruxism Identification Tool (ABIT), developed for children and adolescents aged 8 to 12 years, to facilitate the identification of AB. The tool integrates data from self-reports, clinical examinations, and the Ecological Momentary Assessment (EMA). It comprises questionnaires using a five-point Likert scale, an analog EMA component involving color-based responses, and a clinical inspection. The tool adopts the concept of an “AB Spectrum”, as it generates individualized scores based on the combined outcomes of these multiple assessment components. The ABIT was piloted with ten families to evaluate its comprehensibility, applicability, and reliability. The results demonstrated that the participants found the questions understandable, that the tool had a minimal impact on daily family routines, and that it required approximately 5–10 min to complete. Additionally, the test–retest reliability indicated temporal stability. In terms of identification, four children were classified within the “AB identified by report and self-report,” while three were identified through the “report, self-report, and EMA.” Based on participant feedback, adjustments were made to the instrument, including the addition of an item addressing Sleep Bruxism. Although the ABIT is being applied for the first time in a research setting, it presents a promising, clinically relevant approach grounded in the self-perception of children and their caregivers. Pilot Study of the Shade Matching of Biomimetic Composite Resins in Posterior Dental Restorations: Randomised Clinical Trial

Cosmetic restorative dentistry focuses on restoring teeth affected by caries or trauma using materials that mimic natural teeth in shape, texture, and color. Composite resins, particularly nanofilled composites, are widely used due to their superior mechanical and aesthetic properties. Accurate tooth color selection is crucial, and methods include visual (shade guides) and instrumental (spectrophotometers, colorimeters, and intraoral scanners). Newer biomimetic composites, such as Admira Fusion 5 and Clearfil Majesty ES-2 Universal, simplify shade selection through advanced optical technologies. A randomized clinical study involving 30 patients compared the color-matching accuracy of two biomimetic composite resins: Admira Fusion 5 (Voco) and Clearfil Majesty ES-2 Universal (Kuraray). The study utilized the Vita Easyshade spectrophotometer and the Primescan intraoral scanner. Patients were treated following standardized protocols, and shade accuracy was evaluated pre- and post-restoration using Cohen’s Kappa index. Admira Fusion 5 showed higher shade-matching accuracy, with good agreement between pre- and post-restoration measurements using both instruments. Clearfil Majesty ES-2 Universal demonstrated lower reproducibility in shade matching, particularly in posterior teeth, with lower agreement in pre- and post-tests. Instrumentation Comparison: Primescan showed slightly better performance than Easyshade, but both provided comparable results. In conclusions, universal composites may not always achieve optimal shade matching in posterior teeth. Layered composites provide better color adaptability. While digital instruments enhance shade accuracy, combining them with visual methods yields the best clinical outcomes. Further research with larger sample sizes is needed to improve shade-matching techniques in aesthetic restorative dentistry. Full article

Underwater image enhancement and object recognition are crucial in multiple fields, like marine biology, archeology, and environmental monitoring, but face severe challenges due to low light, color distortion, and reduced contrast in underwater environments. DeepSeaNet re-evaluates the model guidance strategy from multiple dimensions, enhances color recovery using the MCOLE score, and addresses the problem of inconsistent attenuation across different regions of underwater images by integrating a feature extraction method guided by a global attention mechanism by ViT. Comprehensive tests on diverse underwater datasets show that DeepSeaNet achieves a maximum PSNR of 28.96 dB and an average SSIM of 0.901, representing a 20–40% improvement over baseline methods. These results highlight DeepSeaNet’s superior performance in enhancing image clarity, color richness, and contrast, making it a remarkably effective instrument for underwater image processing and analysis. Bermudagrass is a warm-season turfgrass commonly grown in drought-prone areas. Harnessing natural genetic variation available in germplasm is a principal strategy to enhance its resilience to drought stress. This study was carried out to assess the comparative performance of bermudagrass hybrids under drought conditions and their subsequent recovery following the drought period. A total of 48 hybrids, including 2 commercial cultivars, ‘Tifway’ and ‘TifTuf’, were established under optimum growth conditions in the greenhouse and then subjected to drought stress by withholding irrigation for four weeks. The dry-down experiment was laid out in a randomized complete block design with four replications. Turf color, visual quality, and active spectral reflectance data were collected weekly and used to assess the health and vigor of the hybrids during progression of the drought stress for four weeks and through recovery after rewatering. Analysis of variance revealed significant differences among the hybrids for color, visual quality, and spectral vegetation indices. A multivariate analysis grouped the hybrids into drought-tolerant with full recovery after rewatering, moderately tolerant, and susceptible to extended drought stress without recovery. These results showed the prevalence of genetic variation for drought tolerance and proved instrumental in the development of bermudagrass cultivars resilient to drought stress and improved water use efficiency. The aim of this study was to evaluate the effect of marinade type and marinating time on the physicochemical and sensory properties of pork tenderloin cooked using low-temperature, vacuum-sealed cooking. The study included marinades based on pineapple juice, red wine, kefir and a mixture of dried herbs. The assessment of the effect of marinades was based on the analysis of the color, texture, chemical composition and organoleptic properties of the meat after cooking using the sous vide method. In the experimental part, instrumental determinations of color and texture, analysis of the chemical composition and sensory assessment of the meat were carried out. Marinating for 12 h in red wine and dry marinating causes darkening of the meat. The hardness of meat marinated after 2 h increased compared to the control group; similar relationships were observed for gumminess and chewiness. However, after 12 h of marinating, the hardness of cycle 1 and hardness of cycle 2, as well as chewiness and gumminess, were significantly reduced below the level of the characteristics for the control group, except for the meat marinated in wine. Meat marinated in red wine and using the dry method received higher scores, while longer marinating resulted in more favorable scores. Full article
