The windowpane oyster (Placuna placenta) is common in coastal areas of the Philippines, thriving in brackish waters. Its shells underpin the local craft industries. While its meat is edible, only small amounts are consumed locally, most going to waste. Utilization of this potential nutrient source is hindered by the lack of information concerning its organic and mineral content, the possible presence of heavy metal ions, and the risk of microbial pathogens. We report extensive analysis of the meat from Placuna placenta, harvested during three different seasons to account for potential variations. This comprises proximate analysis, mineral, antioxidant, and microbial analyses. While considerable seasonal variation was observed, the windowpane oyster was found to be a rich source of protein, fats, minerals, and carbohydrates, comparing well with the meats of other shellfish and land animals. Following pre-cooking (~90 °C, 25–30 min), the standard local method for food preparation, no viable E. coli or Salmonella sp. were detected. Mineral content was broadly similar to that reported in fish, although iron, zinc, and copper were more highly represented, nevertheless, heavy metals were below internationally acceptable levels, with the exception of one of three samples, which was slightly above the only current standard, FSANZ. Whether the arsenic was in the safer organic form, which is commonly the case for shellfish, or the more toxic inorganic form remains to be established. This and the variation of arsenic over time will need to be considered when developing food products. Overall, the meat of the windowpane oyster is a valuable food resource and its current (albeit low-level) use should lower any barriers to its acceptance, making it suitable for commercialization. The present data support its development for high-value food products in urban markets. Full article

Micronutrients play a prominent role in plant growth and development, and their bioavailability is a growing global concern. Zinc is one of the most important micronutrients in the plant life cycle, acting as a metallic cofactor for numerous biochemical reactions within plant cells. Zinc deficiency in plants leads to various physiological abnormalities, ultimately affecting nutritional quality and posing challenges to food security. Biofortification methods have been adopted by agronomists to increase Zn concentrations in crops through optimal foliar and soil applications. Changing climatic conditions and conventional agricultural practices alter edaphic factors, reducing zinc bioavailability in soils due to abrupt weather changes. Precision agriculture emphasizes need-based and site-specific technologies to address these nutritional deficiencies. Nanoscience, a multidimensional approach, reduces particle size to the nanometer (nm) scale to enhance their efficiency in precise amounts. Nanoscale forms of Zn+2 and their broad applications across crops are gaining attention in agriculture under varied application methods. This review focuses on the significance of Zn oxide (ZnO) nanoparticles (ZnONPs) and their extensive application in crop production. We also discuss optimum dosage levels, ZnONPs synthesis, application methods, toxicity, and promising future strategies in this field. Full article

The aim of this study was to prevent the development of microorganisms in the refrigerated storage of tench by releasing allyl isothiocyanate (AITC) produced by black mustard seeds. Tench reared in an aquaculture centre were sacrificed and the fillets were separated. Different amounts of defatted mustard seed (300, 400 and 500 mg) were added to hermetic polypropylene trays. Microbiological, sensory, and gas chromatography with MS detection analysis were done. AITC release increased progressively until the third day of storage, significantly delaying the development of microorganisms in samples with higher mustard seed content. The tasting panel detected positive aromas at the beginning of the study, but these decreased and negative aromas appeared. The mustard seed treatment resulted in a higher positive aroma at the end of the storage, reducing rotting and ammonia odours. A total of 31 volatile compounds were detected and grouped into hydrocarbon, alcohol, benzenoid, isothiocyanate, ketone, acetate, aldehyde, and others. Butylated hydroxytoluene, an indicator of bacterial contamination, was the major aromatic compound found during storage. The release of AITC resulted in fewer organic compounds with negative aromas appearing during storage. PCA analysis allowed us to classify the assays during storage according to their volatile profiles, confirming the differences observed between treatments. Thus, adding mustard seed to fish packaging could be a viable alternative to extending the product’s shelf life and ensuring food safety. Full article

Background: The rationale for strict fluid fasting for pediatric and adult patients has been questioned recently. Point-of-care tools for the evaluation of gastric content have evolved over time, often using gastric ultrasound. Usually, the gastric antral cross-sectional area (CSA) is determined. A liberal fluid fasting regimen, that is, ingestion of liquid fluids until the call for theatre, does not delay gastric emptying compared to midnight fasting, as evaluated with gastric ultrasound. Anesthesia is safe, and no adverse events result from a liberal regimen. Methods: The ethics committee of LMU Munich approved the study (21-0903). Liberal fluid fasting in a geriatric orthopedic surgery department (LFFgertrud) is a sub-study within a project investigating perioperative neurocognitive disorders (Study Registration: DRKS00026801). After obtaining informed consent from 134 geriatric patients 70 years or older, we investigated the gastric antral cross-sectional area (CSA) prior to and postimplementation of liberal fluid management, respectively. Results: After the implementation of liberal fluid fasting, fasting times for solid food and liquids decreased from 8.8 (±5.5) to 1.8 (±1.8) hours (p < 0.0001). In 39 patients where CSA was obtained, a slight increase in fluid was encountered. No critical amount of gastric content was observed, and no adverse events occurred. Conclusions: A liberal fluid fasting concept was safe even for comorbid elderly patients in orthopedic surgery. Applying a gastric ultrasound may be helpful to increase safety. According to the incidence of complications encountered in our study, it seems indispensable. Full article

The increasing demand for food to meet the needs of the planet’s growing population requires, among other factors, greater and improved meat production. Meat quality is determined by key consumer-preferred traits, particularly tenderness, juiciness, and flavor. Recently, interest has grown in analyzing the genes associated with these phenotypic characteristics. Single-nucleotide polymorphisms (SNPs) are common genomic variations in cattle and represent the most widely used molecular markers. Research on SNP variation is now a major focus of genomic studies aimed at improving meat quality. Leptin levels reflect the amount of adipose tissue in meat, also known as marbling. Several SNPs in the leptin gene and its receptor have been linked to this meat quality trait. Similarly, SNPs in the calpain/calpastatin system play a significant role in postmortem muscle proteolysis and pork tenderness. This review examines these genetic variants as markers involved in the expression of phenotypic traits in meat products and explores their mechanisms of action. Additionally, it provides insights into the genetic variants associated with production-related characteristics. Full article

This study investigates Bimi® (Brassica oleracea Italica × Alboglabra), a hybrid between kailan and conventional broccoli, to evaluate its compositional, functional, and sensory properties in relation to industrial sous-vide processing and refrigerated storage. Proximate composition, amino acid and fatty acid profiles, and mineral content were determined in raw samples. Color, chlorophyll content, total polyphenols, and antioxidant capacity (FRAP, ABTS, DPPH) were analyzed before and after sous-vide treatment and following 60 days of storage. Microbiological and physicochemical stability was monitored over 90 days under standard (4 °C) and mildly abusive (6–10 °C) storage conditions. Sensory profiling of Bimi® and conventional broccoli was performed on sous-vide samples. The results showed an increase in total polyphenols and antioxidant activity after processing, while chlorophylls decreased. Microbiological safety was maintained under all conditions, with stable water activity and only moderate acidification. Bimi® provided a valuable source of protein (4.32 g/100 g FW, 8.63% RDA), appreciable amounts of dietary fiber (2.96 g/100 g FW, 11.85% RDA), and essential minerals such as potassium (15.59% RDA), phosphorus (14.05% RDA), and calcium (8.09% RDA). Sensory evaluation revealed a milder flavor profile than that of conventional broccoli, accompanied by an asparagus-like aroma. These findings support the suitability of Bimi® for industrial sous-vide processing and its potential as a nutritious convenience food. Full article

The effect of ultrasonic frequencies of 40 kHz/300 W (U-40) and 120 kHz/300 W (U-120) on the aqueous extraction of bioactive compounds from dried whole-fruit powders (DPs) of red-peel/white-flesh (WFP) and red-peel/red-flesh (RFP) pitayas was investigated, and shaking at 120 rpm (S-120) was used for a comparison. The effects of temperature and the solid-to-liquid ratio on the extraction efficiencies of the total phenolic content (TPC) and ferric-reducing antioxidant power (FRAP) of WFP and RFP were evaluated. The impact of extraction time on the aqueous extraction of specific compounds, namely, chlorogenic acid (CGA) and quercetin, from WFP and RFP was assessed with extraction modes of U-40, U-120, and S-120. At 40 °C and a 1/20 (g DP/mL) solid-to-liquid ratio, the use of U-40 achieved higher TPC and FRAP values at 15 min than U-120 and S-120 for WFP. The use of U-40 and U-120 extracted higher amounts of free CGA and free quercetin from WFP and RFP at 15 and 60 min than S-120 but showed different extraction efficiencies for free CGA and free quercetin. This study demonstrates that different ultrasonic frequencies can be applied in the green extraction of target bioactive compounds for use in nutraceutical foods. Full article

Germination and physical field treatments are processing techniques that have been successfully used to change the amount of active ingredients in flaxseed. However, it is unknown if they work synergistically. This study investigated the effect of microwave-assisted germination on the lignan concentration and antioxidant activity of several flaxseed tissue components. Lignans were primarily dispersed in the flaxseed seed coat. Microwave treatment and germination significantly affected the levels of lignans in various flaxseed sections. Flaxseed hulls’ lignan content and antioxidant activity could be increased by microwave treatment (130 W for 14 s) after germination of 0, 48, or 96 h. Flaxseed kernels lignan content and antioxidant activity could be increased by microwave treatment (130 W for 10 s) before germination. Whole flaxseeds could be improved by microwave treatment (130 W for 10 s) after germination for 72 h. The findings provided a theoretical basis for reducing the loss of lignan resources in flaxseed, enhancing its use as a functional food ingredient, and clarifying the targeted utilization of various lignan sources. Background/Objectives: Acrylamide is a probably carcinogenic to humans that naturally forms during the thermal processing of foods. An individual’s lifestyle—especially dietary habits and physical activity—may influence the severity of acrylamide’s adverse health effects. This study aimed to examine the relationship between adolescents’ dietary and exercise behaviors and their dietary acrylamide exposure and associated health risks. Methods: This descriptive and cross-sectional study was conducted with 370 high school students in Türkiye. Data were collected using the Nutrition Exercise Behavior Scale (NEBS) and a retrospective 24-h dietary recall questionnaire. Acrylamide exposure was calculated based on food intake to estimate carcinogenic (CR) and non-corcinogenic (target hazard quotient: THQ) health risks and analyzed in relation to NEBS scores. Results: Findings indicated that while adolescents are beginning to adopt healthy eating and exercise habits, these behaviors are not yet consistent. Emotional eating and unhealthy food choices still occur. Higher acrylamide exposure and risk values were observed in boys and underweight individuals. This can be explained mainly by the fact that boys consume more of certain foods—especially bread, which contains relatively higher levels of acrylamide—than girls do, and that underweight individuals have lower body weights despite consuming similar amounts of food as other groups. Bread products emerged as the primary source of daily acrylamide intake. Positive correlations were found between NEBS total and subscale scores and acrylamide exposure and health risk values. Conclusions: The study demonstrates a significant association between adolescents’ health behaviors and acrylamide exposure. These results underscore potential public health concerns regarding acrylamide intake during adolescence and emphasize the need for targeted nutritional interventions to reduce risk and promote sustainable healthy behaviors. Deep Storage Irrigation Enhances Grain Yield of Winter Wheat by Improving Plant Growth and Grain-Filling Process in Northwest China

In the irrigation districts of Northern China, the flood resources utilization for deep storage irrigation, which is essentially characterized by active excessive irrigation, aims to have the potential to mitigate freshwater shortages, and long-term groundwater overexploitation. It is crucial to detect the effects of irrigation amounts on agricultural yield and the mechanisms under deep storage irrigation. A three-year field experiment (2020–2023) was conducted in the Guanzhong Plain, according to five soil wetting layer depths (RF: 0 cm; W1: control, 120 cm; W2: 140 cm; W3: 160 cm; W4: 180 cm) with soil saturation water content as the irrigation upper limit. Results exhibited that, compared to W1, the W2, W3, and W4 treatments led to the increased plant height, leaf area index, and dry matter accumulation. Meanwhile, the W2, W3, and W4 treatments improved kernel weight increment achieving maximum grain-filling rate (Wmax), maximum grain-filling rate (Gmax), and average grain-filling rate (Gave), thereby enhancing the effective spikes (ES) and grain number per spike (GS), and thus increased wheat grain yield (GY). In relative to W1, the W2, W3, and W4 treatments increased the ES, GS, and GY by 11.89–19.81%, 8.61–14.36%, and 8.17–13.62% across the three years. Notably, no significant difference was observed in GS and GY between W3 and W4 treatments, but W4 treatment displayed significant decreases in ES by 3.04%, 3.06%, and 2.98% in the respective years. The application of a structural equation modeling (SEM) revealed that deep storage irrigation improved ES and GS by positively regulating Wmax, Gmax, and Gave, thus significantly increasing GY. Overall, this study identified the optimal threshold (W3 treatment) to maximize wheat yields by optimizing both the vegetative growth and grain-filling dynamics. This study provides essential support for the feasibility assessment of deep storage irrigation before flood seasons, which is vital for the balance and coordination of food security and water security. The olive oil industry, a key component of Southern Europe’s agricultural sector, generates large amounts of by-products during processing, including olive leaves, branches, stones, and seeds. In the context of growing environmental concerns and limited natural resources—particularly in the Mediterranean regions—there is increasing interest in circular economy approaches that promote the valorization of agricultural residues. These by-products are rich in bioactive compounds, particularly phenolics such as oleuropein and hydroxytyrosol, which are well known for their antioxidant and anti-inflammatory activities. This study aimed to evaluate the phenolic content and antioxidant capacity of by-products from three olive cultivars using high-performance liquid chromatography with photodiode array detection (HPLC–PDA) and mass spectrometry (MS). The leaves and seeds, particularly from the “Cobrança” and a non-identified variety, presented the highest antioxidant activity, as well as the highest concentration of phenolic compounds, demonstrating once again the direct relationship between these two parameters. The identification of the compounds present demonstrated that the leaves and branches have a high diversity of phenolic compounds, particularly secoiridoids, flavonoids, phenylpropanoids, phenylethanoids, and lignans. An inverse relationship was observed between the chlorophyll and carotenoid content and the antioxidant activity, suggesting that phenolic compounds, rather than pigments, are the major contributors to antioxidant properties. Therefore, the by-products of the olive oil industry are a valuable source of sustainable bioactive compounds for distinct industrial sectors, such as the food, nutraceutical, and pharmaceutical industries, aligning with the European strategies for resource efficiency and waste reduction in the agri-food industries. Soil nematodes are essential components of the soil food web and are widely recognised as key bioindicators of soil health because of their sensitivity to environmental factors and disturbance. In agriculture, many studies have documented the effects of fertilisation on nematode communities and explored their role in nutrient cycling. Despite this, a key gap in knowledge still exists regarding how fertilisation-induced changes in nematode communities modify their role in nutrient cycling. We reviewed the literature on the mechanisms by which nematodes contribute to nutrient cycling and on how organic, inorganic, and recycling-derived fertilisers (RDFs) impact nematode communities. The literature revealed that the type of organic matter and its C:N ratio are key factors shaping nematode communities in organically fertilised soils. In contrast, soil acidification and ammonium suppression have a greater influence in inorganically fertilised soils. The key sources of variability across studies include differences in the amount of fertiliser applied, the duration of the fertiliser use, management practices, and context-specific factors, all of which led to differences in how nematode communities respond to both fertilisation regimes. The influence of RDFs on nematode communities is largely determined by the fertiliser’s origin and its chemical composition. While fertilisation-induced changes in nematode communities affect their role in nutrient cycling, oversimplifying experiments makes it difficult to understand nematodes’ functions in these processes. The challenges and knowledge gaps for further research to understand the effects of fertilisation on soil nematodes and their impact on nutrient cycling have been highlighted in this review to inform sustainable agricultural practices. PET (polyethylene terephthalate) bottles contain different chemicals that can act as endocrine disruptors. Phthalates and bisphenol A can be found in various foods and beverages packaged in PET packaging or aluminum cans. For some phthalates, the European Union has established specified tolerable daily intakes for humans. This study aimed to establish the changes, types of phthalates (dimethyl phthalate, diethyl phthalate, diisobutyl phthalate, dibutyl phthalate, bis(2-ethylhexyl) phthalate, di-n-octyl phthalate), and bisphenol A concentrations in beer packaged in PET bottles and stored at two temperatures (4 °C and 20 °C) for four months. Beers were obtained from a local brewery after packaging into PET bottles and stored at the designated temperatures. GC-MS analysis was performed to determine phthalates and bisphenol A. Obtained data show that beers packaged in PET bottles can contain significant amounts of bisphenol A, and that their concentration increases with storage time. Phthalates were also identified in the samples, with the highest concentration of bis(2-ethylhexyl) phthalate found in the sample kept at 20 °C after 1 month of storage, sample P5; this concentration was 164.814 µg/L. BPA was recorded with the highest concentration in sample P11, which underwent 4 months of storage at a temperature of 20 °C. Full article

The genera Allium (Liliaceae) and Anchusa (Boraginaceae) are flowering plant genera with a rich diversity, also including the Allium kharputense Freyn & Sint. and Anchusa azurea Mill. var. azurea species. The antioxidant, anti-Alzheimer’s disease (AD), antidiabetic, and antiglaucoma effects of the Allium kharputense Freyn & Sint. and Anchusa azurea Mill. var. azurea species, which are commonly eaten foods in the Southeast of Türkiye in the treatment of several diseases, were studied. To interpret the antioxidant capacities of ethanol extract of two plant species, aerial parts were analyzed by ABTS and DPPH assays. The IC50 values of A. kharputense and A. azurea ethanol and water extracts for ABTS•+ activities were recorded in the range of 30.93 to 33.94 µg/mL and 33.45 to 33.78 µg/mL, respectively. Also, DPPH activities were measured at 30.78 to 36.87 µg/mL and 31.67 to 32.45 µg/mL, respectively. The best of the IC50 values was measured in the ethanol extract of A. kharputense as 30.78 µg/mL for DPPH scavenging activity. The total phenolic and flavonoid quantities in A. kharputense and A. azurea plants were measured. The highest phenolic and flavonoid contents of A. kharputense and A. azurea species were recorded in amounts of 445.52 and 327.35 mg GAE/g in ethanol extracts, respectively, and 332.88 and 234.03 mg QE/g in ethanol extracts, respectively. The effects of A. kharputense and A. azurea on diabetes, AD, and glaucoma were studied on the target enzymes of diseases. The most efficient IC50 values were recorded at 10.72 μg/mL against α-glycosidase, 35.01 μg/mL against AChE, 38.05 μg/mL against BChE, 9.21 μg/mL towards hCA I, and 81.02 μg/mL towards hCA II isoenzymes. The kinds and amounts of phenolic compounds in A. kharputense and A. azurea were determined using LC-MS/MS against 53 standards. A. kharputense and A. azurea plants have prospective use in enhancing glaucoma, diabetes, AD, Parkinson’s disease, epilepsy, and cancerous disorders. Full article

Problems with primary food production (food insecurity, malnutrition, and socioeconomic problems) persist throughout the world, especially in rural areas. Despite these problems, the available natural food resources are underutilized; residents are no longer interested in growing and consuming foods native to their region. In this regard, this study carries out the morphological and nutritional characterization of a native sunflower (Helianthus annuus) grown in the Sierra Gorda, Querétaro, Mexico, known as “Maíz de teja”, to implement a sustainable monoculture production system. The results were compared with some other sunflower varieties and other oilseeds grown and consumed in the country. This study determined that this native sunflower seed is a good source of linoleic acid (84.98%) and zinc (17.2 mg/100 g). It is an alternative protein source (18.6 g/100 g), comparable to foods of animal origin. It also provides a good amount of fiber (22.6 g/100 g) and bioactive compounds (total phenolic compounds (TPC) 3.434 ± 0.03 mg/g and total flavonoids (TFC) 0.67 ± 0.02 mg/g), and seed yield 341.13 kg/ha. This study demonstrated a valuable nutritional profile of this native seed and its potential for cultivation. Further research is needed to improve agricultural management to contribute to food security and improve the socioeconomic status of the community. Full article
