Background: Metabolic syndrome (MetS) represents a significant global health challenge. Liupao tea (LPT), a post-fermented dark tea, has shown potential metabolic benefits, but clinical evidence remains limited. Objectives: This study aimed to investigate the effects of LPT with varying aging durations on clinical parameters, body composition and gut microbiota in individuals with MetS. Methods: In a randomized, double-blind trial, patients with MetS were randomly assigned to intervention groups, receiving 6 g/day of LPT aged for 1, 4, 7, or 10 years, respectively, over a 90-day intervention period. Blood pressure, lipid and glucose levels, body weight, body composition, and gut microbiota were assessed at baseline and post-intervention. Results: A total of 71 participants, with a mean age of 53.5 years, were included. At the final assessment, significant reductions in both systolic and diastolic blood pressure were observed in the 10-year-aged groups (p < 0.05). In terms of lipid profiles, the 1-year-aged group showed a significant decrease in total cholesterol (TC), while low-density lipoprotein cholesterol (LDL-C) levels significantly decreased in the 1-, 4-, 7-, and 10-year-aged groups (p < 0.05). All intervention groups showed significant reductions in body weight, body fat mass (BFM), along with an increase in muscle mass (MM) (p < 0.05). A decrease in the Firmicutes/Bacteroides (F/B) ratio was observed in the 10-year-aged group. No significant differences in clinical parameters or body composition regulation were observed between groups with varying aging durations (p > 0.05). Conclusions: LPT intervention effectively improves metabolic health and modulates gut microbiota in MetS patients, irrespective of aging duration. These findings support LPT as a functional beverage for the management of MetS. Full article

In this study, a kinetic analysis was conducted to clarify the thermal inactivation behavior of AMP deaminase and IMPase, enzymes involved in the generation and degradation of inosine 5′-monophosphate (IMP) in the dorsal ordinary muscle (OM) and dark muscle (DM) of yellowtail Seriola quinqueradiata. Both enzymes were extracted from each part of the fish muscle, heated in the range of 50–60 °C, and then measured for residual enzyme activity. Based on these data, kinetic analysis was performed. When comparing fish muscle types, the thermal stability at 50 °C and 55 °C and the temperature dependence of both AMP deaminase and IMPase tended to be higher in the DM. When comparing the two enzymes, the thermal stability of IMPase was higher than that of AMP deaminase at 50 °C in both muscle types. These results suggest that to prepare heated yellowtail muscle with a high IMP content, it is important to consider the thermal inactivation behavior of enzymes and use slow heating to maintain AMP deaminase activity and produce sufficient IMP in OM. For DM, rapidly increasing the product temperature to ≥60 °C to inactivate IMPase is required to preserve the IMP content. Full article

Background: Hormonal fluctuations across the menstrual cycle can significantly impair physical performance, neuromuscular function, and cognitive processing in female athletes, particularly during the premenstrual phase. Emerging evidence suggests that dark chocolate (DC), rich in flavonoids, polyphenols, magnesium, and theobromine, may exert anti-inflammatory, analgesic, and neuroprotective effects. This study investigated the acute effects of 85% DC supplementation on cognitive and physical performance, as well as delayed-onset muscle soreness (DOMS), in female CrossFit® athletes across four distinct hormonal phases. Methods: In this randomized, double-blind, placebo-controlled, crossover study, fifteen trained eumenorrheic female CrossFit® athletes completed three intervention conditions: dark chocolate (DC), placebo (PLA), and control (CON). Participants were evaluated during four distinct menstrual phases—menstrual, follicular, luteal, and premenstrual syndrome (PMS)—over three consecutive menstrual cycles. In each phase, participants consumed 30 g/day of either DC or PLA for three days, followed by performance testing on day four. Functional and cognitive performance were assessed via the CINDY WOD, handgrip strength (HGS), and Stroop tests (reaction time and correct answer percentage, CAP). DOMS was measured using a 100 mm visual analog scale at baseline and at 0, 12, 24, 48, and 72 h post-exercise. Results: DC supplementation significantly improved functional performance (CINDY WOD) across all menstrual phases, with the greatest enhancement during PMS (p < 0.01). Reaction time significantly improved during PMS (p = 0.010 vs. control; p = 0.002 vs. placebo). Additionally, DOMS was notably reduced in the luteal phase at 12 h, 24 h, and 72 h post-exercise in the DC condition compared to the control and placebo (p < 0.05). No significant differences were observed in HGS across conditions or phases (p > 0.05). Conclusions: Short-term DC supplementation may selectively enhance high-intensity functional performance and cognitive accuracy in trained female athletes, particularly during hormonally sensitive phases such as PMS. Its anti-inflammatory and neuromodulatory properties make DC a promising, non-pharmacological strategy to support female-centric recovery and performance in CrossFit® and similar sports. Future research should explore chronic intake, mechanistic biomarkers, and individual variability across menstrual cycles. Full article

We investigated the effects of belt electrode-skeletal muscle electrical stimulation (B-SES) on muscle atrophy in collagen-induced arthritis (CIA) rats. Twenty-eight 8-week-old male Dark Agouti rats were immunized with type II collagen and Freund’s incomplete adjuvant (day 0). From days 14 to 28, 18 rats received B-SES (50 Hz) four times only on the right hindlimb (STIM), while the contralateral left hindlimb remained unstimulated. Both hindlimbs of 10 untreated CIA rats were defined as controls (CONT). Paw volume was measured every other day. On day 28, the muscle weight, histology, and gene expression of the soleus and extensor digitorum longus (EDL) were analyzed. B-SES did not worsen paw volume throughout the experimental period. Compared with CONT, the muscle weight and fiber cross-sectional area of the soleus were higher in STIM. The expression of muscle degradation markers (atrogin-1 and MuRF-1) in the soleus and EDL was lower in the STIM group than that in the CONT group. In contrast, B-SES did not significantly affect the expression of muscle synthesis (Eif4e and p70S6K) and mitochondrial (PGC-1α) markers. B-SES prevents muscle atrophy in CIA rats by reducing muscle degradation without exacerbating arthritis, demonstrating its promising potential as an intervention for RA-induced muscle atrophy. Food-derived bioactive peptides have attracted considerable research interest and are increasingly utilized as functional ingredients in the food industry. In this study, the immunomodulatory peptides were isolated and purified from Thunnus albacares (T. albacares) enzymatic hydrolysates of muscles using gel chromatography and RP-HPLC, and their amino acid sequences were identified via LC-MS/MS. A total of six peptides were selected based on their affinity to toll-like receptors. Subsequently, these peptides were synthesized to confirm the immunomodulatory activities in vitro. Among all the tested peptides, two peptides, HDCDLLR and YGSVELDELGK, significantly enhanced cell proliferation and phagocytosis and increased the production of tumor necrosis factor-α (TNF-α), nitric oxide (NO), and interleukin-6 (IL-6). Molecular docking analysis indicated that these two peptides could stably bind to the receptors through hydrogen bonds and electrostatic and hydrophobic interactions. These findings suggested that peptides from enzymatic hydrolysates of T. albacares could be promising candidates for developing immunomodulatory agents in functional foods. Full article

The storage temperature is important for maintaining the quality of raw fish meat. The characteristics of ordinary muscle (OM) and dark muscle (DM) differ. This study aimed to clarify the effects of storage temperature (refrigeration, ice storage, and super-chilled (SC) storage) on the bacterial flora and quality (biochemical changes, volatile organic compounds (VOCs), and off-flavor development) of both muscles of yellowtail (Seriola quinqueradiata). SC storage effectively extended the shelf life of the dorsal part of ordinary muscle (OM) and DM by reducing bacterial proliferation, VOC changes, and off-flavor formation. However, their effects on the inhibition of trimethylamine (TMA) accumulation and lipid oxidation are limited. (E,E)-2,4-octadienal and (E,E)-3,5-octadien-2-one were identified as candidate markers of OM quality deterioration, whereas 1-hexanol was identified as a potential marker for DM. Alcohols, esters, and ketones are potential spoilage indicators of yellowtail muscles (OM and DM). Pseudomonas was the dominant spoilage bacterium in OM and DM across all storage conditions, with Acinetobacter, Brochothrix, and Shewanella appearing in later storage stages. These findings highlight the importance of storage at lower temperatures and understanding the dynamics of spoilage-causing bacteria and changes in VOCs in raw fish meat (OM and DM) to prevent spoilage and maintain meat quality. Predicting meat quality, especially dark, firm and dry meat, as well as muscle fat prior to slaughter, presents a challenge in practice. Medical as well as high-frequency ultrasound applications can be utilized to predict body composition and meat quality aspects. Ultrasounds are non-invasive, rapid-to-operate in vivo and show high correlations to the animal production traits being estimated. Farm animal ultrasounds are used to predict intramuscular fat content in the beef cattle industry. Challenges are identified in applying ultrasound technology to detect glycogen content in farm animals due to a wide range of fat, muscle and water composition. Other technologies and methods are reported in this literature review to overcome issues in the practicability and accuracy of ultrasound technology when estimating muscle glycogen levels in cattle. The discussion of other tools such as hyperspectral imaging, microwave sensor technology and digital infrared thermal imaging were addressed because of their superior accuracy in estimating moisture and fat components. Background: Dark chocolate is rich in polyphenols and has been linked to cardiovascular and metabolic benefits. Its potential effects on recovery, fatigue reduction, and subjective wellness in elite athletes, however, remain underexplored. This pilot study examined the acute effects of dark chocolate consumption on wellness scores, perception of effort, and GPS-based performance measures in elite soccer players during a 4-week intervention period. Methods: Twenty-two elite soccer players were assessed in two conditions—when consuming 25g/day of 85% dark chocolate (DC), or with no dietary intervention (CG). Subjective fatigue and wellness were assessed daily through validated self-report questionnaires. External loads were monitored during training and matches. Results: Athletes in the DC group reported significant reductions in muscle soreness scores and an increase in match and training physical performance (distance at very high deceleration), as compared with the CG group. Conclusions: Daily consumption of dark chocolate may reduce muscle damage and enhance physical performance in elite athletes. These findings suggest that dark chocolate could be a practical dietary strategy to support recovery and overall well-being in high-performance contexts. Full article

Background/Objectives: The correlation of handgrip strength (HGS) and morphological characteristics with Big Five personality traits is well documented. However, it is unclear whether these relationships also exist in highly trained and specialized populations, such as tactical athletes, and whether there are specific differences compared to the general population. This study aimed to explore the interplay of handgrip neuromuscular, morphological, and psychological characteristics in tactical athletes and the general population of both genders. Methods: The research was conducted on a sample of 205 participants. A standardized method, procedure, and equipment (Sports Medical solutions) were used to measure the isometric neuromuscular characteristics of the handgrip. Basic morphological characteristics of body height, body mass, and body mass index were measured with a portable stadiometer and the InBody 720 device. Psychological characteristics were assessed with the Mental Toughness Index and Dark Triad Dirty Dozen questionnaires. Results: Numerous significant correlations were obtained, as well as differences between tactical athletes and the general population of both genders. The most prominent correlations were between the excitation index with Psychopathy and the Dark Triad (ρ = −0.41, −0.39) in female tactical athletes, as well as Neuroticism with body height, maximal force, and the maximum rate of force development in the male general population (ρ = 0.49, 0.43, 0.41). The obtained results also revealed gender and occupational specific patterns of researched relationships. Conclusions: Although the results of this study indicated the possibility of the existence of correlations between handgrip neuromuscular, morphological, and psychological characteristics in tactical athletes of both genders, nevertheless, at the moment, there is not enough solid evidence for that. That is why new research is needed. An analysis of muscle contractile and time parameters as neuromuscular indicators in the HGS task proved to be a possible promising method, which brought numerous new insights about the researched relationships. For practical application in the field, we propose including Mental Toughness and the Dark Triad traits in the selection process for future police officers and national security personnel based on the obtained results. This study investigated the impacts of light spectra on oxidative stress and nutrient quality of the fish Plectropomus leopardus in indoor recirculating aquaculture systems. The fish (100 g ± 0.45 g [wet weight]) were cultures in five different light spectra (full-spectrum (400–800 nm), blue (450 nm), green (530 nm), red (630 nm), and dark) for 60 days. After experimentation, blood and muscle tissue were collected and analyzed for biochemical variables and nutritional quality. We demonstrated that the total cholesterol, triglycerides activities of P. leopardus in the dark groups were substantially elevated, relative to other groups (p < 0.05). Glutathione and glutathione peroxidase activities were elevated in the green light group versus other red groups, and cortisol was drastically reduced in the red group relative to other groups (p < 0.05). The crude ash concentration in the blue and full-spectrum group was substantially more elevated than in other groups (p < 0.05). Thr, Glu, Cys, Val, Met, Ile, Leu, Phe, Lys, His, Arg were markedly higher in the blue light versus the red light group (p < 0.05). The muscle of P. leopardus was rich in lysine and its essential AA index was in the order of blue light, full-spectrum, green light, dark and red group. The content of total saturated fatty acids in the blue light group was drastically lower relative to the dark, green and red groups (p < 0.05), and the total polyunsaturated fatty acids and DHA + EPA contents in the blue light group were substantially elevated relative to the other groups (p < 0.05). These results revealed that different light environments had certain effects on blood biochemical, antioxidant capacity, nutrient composition and proportion of P. leopardus. A comprehensive evaluation found that the blue light environment had more positive effects on the physiological, biochemical and nutritional quality of P. leopardus. This result provides a theoretical reference for the lighting strategy of an indoor recirculating aquaculture system. Full article

Vitamin D is a conditionally essential fat-soluble vitamin found in foods such as fish; fish oil; egg yolks; animal fats; some mushroom varieties; and fortified foods such as cheese, margarine, milk, infant formula, and some ready-to-eat cereals. Calcium (Ca) is found in milk, cheese, canned fish, ready-to-eat cereals, milk substitutes, dark green leafy vegetables, and sports drinks. There are more than fifty metabolites of vitamin D. Vitamin D participates in immune regulation, apoptosis induction, insulin secretion, inflammation, cell differentiation, calcium balance and regulation, bone mineralization, and phosphorus homeostasis. Ca is an essential macro-mineral involved in bone and teeth matrices, strength, and hardness; muscle and cardiovascular movement; neurological messaging; and in the release of hormones. Peer-reviewed journal articles were accessed from the search engine PubMed. The authors reviewed the references in the peer-reviewed journal articles, websites, and review articles if the authors proposed a new theory or mechanism. Vitamin D and Ca have important relationships; therefore, many factors may impede or interfere with the body’s ability to absorb or utilize vitamin D and or Ca and may result in low or excessive levels of each. Additionally, genetic/medically related absorption issues and low intake may also result in deficiencies. This review discusses the introduction of each, their functions, absorption, somatic transportation, the relationship between vitamin D and Ca, and recommendations and supplementation strategies if available. In our experiment, the effect of electrical and CO2 stunning on pork meat quality attributes was studied. A total of thirty PIC337 female pigs were allocated to two equal groups which were stunned electrically (50 Hz, 210 V, 2.6 A, 15 s) or by CO2 (85 V% CO2, 15 V% O2, 90 s) and slaughtered at a commercial slaughterhouse. For 24 h post mortem, the carcass m. gluteus medius (GM) was used to evaluate meat quality attributes such as pH, color, hardness, water holding capacity (WHC), and total pigment content, and meat classification was also carried out. The CO2 stunning resulted in muscle with significantly lower pH (p < 0.01) and poorer water holding capacity (p < 0.05) compared to electrical stunning. The GM of pigs stunned electrically showed significantly increased lightness (L*) and redness (a*) (p < 0.05) compared to CO2-stunned. The time course of development of rigor mortis was similar for both stunning methods. Pale, soft, exudative (PSE) or dark, firm, dry (DFD) meat defects were not observed. Based on total pigment content, stunning methods did not significantly affect the amount of removable blood. Full article

The purpose of this study is to explore the carcass traits, meat quality, and nutritional attributes of local yellow cattle (Guangfeng, Ji’an, and Jinjiang) and buffalo (Poyanghu, Xiajiang, and Xinfeng mountain) in Jiangxi Province, and compare the differences among different breeds. The results showed that the dressing percentage, net meat percentage, and meat–bone ratio of Jinjiang cattle were highest, and that Jinjiang cattle had the best meat production performance. Regarding meat quality, the pH24h value of all breeds was at normal level, and no dark-cutting beef was produced. Poyanghu buffalo and Xinfeng mountain buffalo had higher redness (a*) values, and Guangfeng cattle had the best water retention and tenderness. The intermuscular fat of yellow cattle breeds was higher than that of buffalo breeds; Poyanghu buffalo had the highest crude protein content. The composition of amino acids and fatty acids was different among breeds, and the composition of Jiangxi breeds was healthy. The muscle fibers of buffalo breeds are generally smaller and denser than those of yellow cattle breeds. The MyHC-Ⅰ, MyHC-Ⅱa, and MyHC-Ⅱx were the main types of muscle fibers of Jiangxi local breeds, and the proportion varied with different breeds. This work elucidated the carcass characteristics, meat quality, and nutritional attributes of Jiangxi breed cattle to provide a theoretical basis for optimizing the development of beef cattle industry. One potential complication in bariatric surgery is rhabdomyolysis, which is a condition involving muscle tissue damage that can significantly impact a patient’s health. The causes of rhabdomyolysis can be broadly classified into two major categories: traumatic and non-traumatic. Early investigations into the development of intraoperative rhabdomyolysis in bariatric surgery identified the main risk factors as tissue compression—primarily affecting the lower extremities, gluteal muscles, and lumbar region—as well as prolonged periods of immobilization. Clinically, rhabdomyolysis is typically suspected when a patient presents with muscle pain, weakness, and potentially dark urine or even anuria. However, the most reliable biomarker for rhabdomyolysis is elevated serum creatine kinase levels. The primary goal in managing hydration is to correct intravascular volume depletion, with solutions such as Lactated Ringer’s or 0.9% saline being appropriate options for resuscitation. Perioperative diagnosis of rhabdomyolysis poses a significant challenge for anesthesiologists, requiring a high degree of clinical suspicion, particularly in bariatric patients. In this vulnerable population, prevention is crucial. The success of treatment depends on its early initiation; however, there are still significant limitations in the therapies available to prevent renal injury secondary to rhabdomyolysis. Full article

Background: Limited knowledge is currently available on the effects of modified atmospheric packaging (MAP) on the metabolite profiles of cooked beef. The objective was to evaluate the impact of packaging on the cooked color and cooked metabolite profile of normal-pH (normal bright-red color) and atypical-dark-cutting beef (inherently slightly dark-colored) longissimus lumborum muscle. Methods: Normal-pH (pH 5.56) and atypical dark-cutting (pH 5.63) loins (n = 6) were procured from a commercial meat processor. Steaks were randomly assigned to one of three different packaging methods: vacuum packaging, carbon monoxide (CO-MAP), and high oxygen (HiOx-MAP). Following 5 d of retail display, steaks were cooked to 71 °C on a clamshell-style grill, and samples were collected for untargeted metabolites using gas-chromatography mass spectrometry. Results: Raw atypical dark-cutting steaks were less red (p < 0.05) than raw normal-pH steaks. However, there were no differences in internal cooked color between normal-pH and atypical dark-cutting steaks. Steaks packaged in HiOx-MAP steaks had a lower (p < 0.05) cooked redness than vacuum and CO-MAP steaks. A total of 129 metabolite features were identified in the study. Serine and tryptophan were over-abundant in cooked atypical dark-cutting beef compared to raw atypical samples. Citric acid levels were greater in HiOx-MAP packaged beef compared with VP both in normal and atypical dark-cutting beef after cooking, while no differentially abundant metabolites were shared between vacuum and CO-MAP steaks after cooking. Discussion: A slight increase in pH did not influence metabolite profiles in different packaging. However, there were packaging effects within normal and atypical dark-cutting beef. Conclusions: This study suggests that packaging conditions change metabolite profiles, which can influence cooked metabolites. Therefore, the metabolomics approach can be used to better understand cooked color defects such as premature browning. Full article
