Sargassum muticum is an invasive brown macroalga that has rapidly expanded along the Moroccan Atlantic coast, posing ecological challenges while representing an abundant marine biomass with potential biotechnological value. This study investigated the biochemical composition and metabolic properties of Moroccan S. muticum through compositional analysis, in vivo metabolic evaluation, and molecular docking. Proximate analysis revealed a carbohydrate-rich composition with moderate protein content, together with photosynthetic pigments and nutritionally relevant minerals. In a cafeteria diet-induced rat model, dietary supplementation with S. muticum significantly attenuated body weight gain, improved adiposity-related indices, reduced serum total cholesterol, triglycerides, LDL cholesterol, and C-reactive protein levels, and increased HDL cholesterol. To obtain mechanistic insight, molecular docking analysis was performed using representative phlorotannins reported from Sargassum species. Among the compounds evaluated, dieckol showed the highest docking scores toward key metabolic targets, including AMP-activated protein kinase and peroxisome proliferator-activated receptor gamma. Although these in silico findings do not demonstrate biological activation, they provide preliminary mechanistic support for the observed in vivo effects. Overall, the results highlight the potential of S. muticum for sustainable valorization as a functional marine bioresource. Full article

White adipose tissue (WAT) is categorized as either subcutaneous or visceral fat. One technique used to measure adipose tissue is nuclear magnetic resonance (NMR), which involves placing an animal in a tube for six minutes. This procedure is stressful for rats. Therefore, we evaluated whether determining the weight of subcutaneous WAT in sacrificed rats via NMR is a valid approach. Rats fed a standard diet showed similar WAT measurements when alive and after being sacrificed. Moreover, three groups of rats were fed different diets; one group was fed a cafeteria diet. The weight of WAT in the carcasses measured via NMR (mainly subcutaneous WAT) and the weight of the fat depots, measured after sacrifice (visceral WAT), presented similar percentages of subcutaneous and visceral WAT among the three groups (with different levels of adiposity). In conclusion, this research is a proof of concept regarding the determination of subcutaneous WAT weight via NMR, regardless of adiposity. Full article

This paper evaluates the impact of the Fresh Fruit and Vegetable Program (FFVP), a federal classroom-based nutrition program, on elementary schools in Illinois. Using a staggered difference-in-differences framework that accounts for schools moving in and out of funding status, I examine how classroom-based school nutrition programs influence school-level behavioral and academic outcomes. I find that FFVP funding increases school attendance rates, but there are no changes to standardized test scores or disciplinary referrals. These findings suggest that fresh food incentives successfully improve school attendance but are limited in their ability to change trajectories in standardized testing or student conduct. Background/Objectives: Overweight and obesity have consistently increased in prevalence. Early exposure to foods high in fats and sugar through maternal conditions may increase vulnerability to developing metabolic diseases and cognitive impairments in adulthood. In this regard, we aim to evaluate the effects that perinatal exposure to cafeteria diet (CAF) and physical activity (PA) has on anxiety-like, depressive-like behavior, memory and diet preference in male and female offspring. Methods: Seventy female and male offspring rats were divided into five groups according to maternal conditions: (1) CONTROL, fed only standard diet (SD) with no voluntary PA, (2) SED+SD, fed only SD with no voluntary PA, (3) SED+CAF, fed SD and CAF with no voluntary PA, (4) PA+SD, fed only SD with voluntary PA, and (5) PA+CAF, fed SD and CAF with voluntary PA. Starting on PND 24, offspring rats were exposed to SD and CAF (except for rats from the CON maternal group) and evaluated for seven weeks for diet preference, and at week seven for anxiety-like, depressive-like behavior and memory. Results: After seven weeks of exposure to CAF, maternal conditions showed significantly different effects on adult male and female offspring for diet preference and memory impairments. Furthermore, maternal PA significantly reduced anxiety-like and depressive-like behaviors in the offspring. Conclusions: Our results suggest that maternal conditions and postweaning CAF exposure have a joint influence on diet preference, anxiety-like and depressive-like behavior. Additionally, perinatal CAF exposure impairs memory in male and female offspring, regardless of maternal PA conditions. However, maternal PA was associated with reduced affective behaviors induced by lifelong CAF, presenting as a promising non-pharmacological intervention to promote favorable long-term behavioral outcomes in offspring. Healthy and sustainable food consumption implies not only making conscious food choices but also limiting food waste. Interventions targeting choices are effective only if the healthier food selected is not wasted on the plate. The aims of the study were: to quantify plate and service waste in hospital canteens, characterize plate waste (PW), and compare PW before and after an intervention aimed at promoting healthy and sustainable food choices. A descriptive study was conducted in three Italian hospital canteens. Trays of users who gave consent were photographed (N = 1624). PW was quantified visually. Energy, nutrients, and environmental indicators were estimated using portion sizes, recipes provided by the canteens, food composition, and environmental databases. Both plate and service waste varied substantially across canteens. Post-intervention PW was 4.7% (C1: 6.1%, C2: 2.0%, C3: 2.6%) of the served food, corresponding on average to 33.1 g/tray, 43.6 kcal/tray, 69.6 g CO2 eq./tray and 61.8 LH2O/tray. Side dishes contributed most to the total PW. The canteen where PW decreased significantly compared to pre-intervention (C2: −48.9 g/tray in median among wasters) was the one with the least improvement in food choices. These findings highlight the importance of considering waste when implementing food choice interventions. Full article

Food safety training is a cornerstone of foodborne disease prevention in collective catering, particularly in settings serving vulnerable populations. This study aimed to assess baseline food safety knowledge and evaluate the effectiveness of a food safety training session among food handlers employed in school cafeterias and residential care facilities (RSAs) collective catering. A pre–post design was applied to 168 participants who completed a structured knowledge questionnaire before and after training. At baseline, only 31% of participants achieved a passing score. Knowledge levels were significantly associated with primary job role (p < 0.001): food preparers and managers were more likely to pass compared with food service workers involved mainly in meal distribution. In multivariate analysis, both job role and catering setting remained independently associated with test performance. Following the training session, the proportion of participants passing the test increased to 74% (p < 0.001), and differences between professional categories were reduced. These findings indicate that food safety knowledge in collective catering could vary according to occupational role and organizational context, but can be improved through training. Role-tailored, HACCP-based educational programs could be essential to strengthen compliance and protect vulnerable populations in institutional catering settings. Full article

Food waste research often applies the Motivation–Opportunity–Ability (MOA) framework, yet conventional aggregate measures may obscure the distinct roles of physical context and cognition-related capacity. Using a macro-contextual, micro-primary dual-layer design, this study first uses World Bank data from 176 countries to provide structural context; this macro layer is not statistically linked to the student-level model. The main behavioral inference comes from matched plate-weighing and questionnaire data from 170 students across two purposively selected ordinary higher education institutions in northern and southern China. Within this exploratory and context-specific micro-level sample, the baseline three-dimensional MOA model explains only 4.1% of variance in log-transformed plate waste, whereas decomposing Opportunity into social and physical components and representing the Ability extension through behavioral ability and a two-item cognitive-capacity proxy improves model fit. The five-dimensional model explains 44.1% of variance (F=26.2, p<0.001). Johnson relative weight analysis indicates that Physical Opportunity (51.1%) and the two-item cognitive-capacity proxy (46.3%) account for most explained MOA variance in this sample. Item-level sensitivity checks further suggest that portion estimation and nutrition knowledge should be interpreted as distinct cognition-related indicators rather than as a validated latent scale. Robustness checks across raw, log-transformed, winsorized, logistic, and quantile specifications indicate consistent positive associations for Physical Opportunity and consistent negative associations for cognition-related indicators. Because the design is cross-sectional, these findings identify associations rather than causal effects; physical-environment redesign and cognitive-capacity support should therefore be treated as candidate directions for future intervention testing rather than as confirmed intervention effects. By linking objectively measured plate waste to institutional dining conditions, the study contributes to sustainability research on responsible consumption, resource efficiency, low-carbon campus operations, and practical pathways for reducing avoidable food-related environmental burdens in university settings. Background/Objective: Highly palatable foods are pleasurable and motivational stimuli that activate the brain’s reward system and can induce overeating in the absence of physiological needs. This study investigated how different access patterns to a cafeteria diet influence food intake, body weight-related parameters, and metabolic and neurobehavioral outcomes. Methods: At postnatal day 31, forty male Wistar rats were assigned to a standard diet or a cafeteria diet with continuous, predictable intermittent, or unpredictable intermittent access. After 10 weeks, the open-field and sucrose-preference tests assessed exploratory and anxiety-like behaviors and reward-related responses, respectively. Body composition, serum biochemical parameters, neurotransmitter content, and mRNA and protein levels were analyzed in reward-related brain regions. Results: Intermittent access increased food intake on cafeteria days compared with continuous access, with unpredictable access yielding the highest intake. Continuous-access rats exhibited higher final body weight and fat accumulation than chow-fed Control rats. Despite similar body weight, both intermittent-access groups had higher visceral adiposity, obesity indices, and adverse metabolic outcomes than the Control group. All cafeteria-fed rats displayed anxiety-like behavior, and all groups preferred sucrose except the continuous-access group. Molecular analyses revealed region-specific differences in gene expression related to neuroplasticity, stress response, and epigenetic regulation that varied with access pattern and predictability. Conclusions: Our results suggest that, beyond diet composition, the pattern and predictability of food access are key determinants of feeding behavior. Intermittent access increases the motivational value of the cafeteria diet, promoting overeating and driving reward- and stress-related neuroadaptations with potential metabolic and mental health implications. Food waste is a readily digestible and fermentable feedstock for waste to energy bioprocesses. Approximately one third of food is wasted, thus making improvements in food waste valorization is essential for a circular economy. Laboratory results must be reproducible and as representative of scaled performance as possible to facilitate knowledge sharing between research groups. Food waste used in laboratory studies is often collected in situ or overly simplistic synthetic mixtures are used. Food waste collected in situ from any one local source at a single time point (e.g., grab samples from a cafeteria or restaurant) are not reproducible or nationally representative; additionally, overly simple synthetic mixtures are reproducible, but lack the complexity of real food waste and are not nationally representative. Thus, an adequately complex, reproducible, and nationally representative food waste recipe is needed to standardize the feedstocks used in laboratory scale food waste digestion and fermentation studies. In this work, we developed a food waste recipe made from widely and commercially available ingredients which is based on national-scale food wastage data in the United States. The nationally representative food waste mixture was 45.4% carbohydrates, 32.5% lipids, and 13.4% proteins. The biomethane potential was 495 ± 44 mL CH4/g VS and the food waste mixture was suitable for use in low-pH bench-scale arrested anaerobic digesters. This design approach can be adapted for other regions and countries where food loss data are available. Full article

Metabolic dysfunction-associated steatotic liver disease (MASLD) is characterized by impaired metabolic flexibility, oxidative stress, and disruption of the temporal coordination of hepatic processes. Obesogenic diets contribute to this dysfunction by altering redox homeostasis and autophagy, thereby promoting lipid accumulation and cellular stress. In this study, we investigated whether grape seed proanthocyanidin extract (GSPE), a polyphenol-rich compound with antioxidant properties, can modulate these alterations in a time-dependent manner. Male Fischer 344 rats were fed a standard or cafeteria diet and supplemented with GSPE (25 mg/kg) at the onset of the active phase (ZT12). Liver samples were collected across four Zeitgeber times to evaluate circadian-related proteins, autophagy markers, antioxidant responses, lipid content, and metabolomic profiles. Cafeteria feeding disrupts hepatic homeostasis, reducing BMAL1 protein levels, altering the temporal organization of autophagy markers, and impairing redox regulation. GSPE did not restore core clock protein expression but induced a pronounced, time-specific activation of the NRF2/HO-1 axis, with a marked increase in HO-1 at the onset of the active phase. This effect was associated with a metabolic shift toward amino acid-related pathways linked to redox balance. These findings indicate that GSPE enhances antioxidant defenses in a time-dependent manner, improving redox–metabolic coordination under obesogenic conditions. Full article

University cafeterias generate solid waste as a result of high user turnover and routine food service operations. While waste characterization studies are common in higher education institutions, data-driven predictive modeling remains limited, particularly in Latin American contexts. This study addresses this gap by integrating physical waste generation with behavioral surveys to develop predictive tools for operational decision-making. The findings should be interpreted as a single-site operational demonstration; broader generalization requires replication and local recalibration in cafeterias with different operational and social characteristics. Waste generation was characterized in a Panamanian university cafeteria by shift over 20 consecutive working days, separating organic and inorganic fractions, and collecting 705 user surveys on consumption habits. Two complementary predictive approaches were developed: a rule-based classification model and a Monte Carlo simulation framework. Organic waste exhibited a stable pattern throughout the study period, with clear concentration during lunch hours and a strong dependence on user volume. In contrast, inorganic waste showed higher day-to-day variability and increased during evening service, reflecting changes in service practices rather than attendance alone. Statistical analysis indicated that waste generation was more closely associated with food type purchased and faculty affiliation than with self-reported environmental awareness. Overall, the results demonstrate that straightforward predictive approaches can support shift-level planning and operational waste management decisions in university cafeterias. Full article

Eating behavior requires a balance between metabolic and hedonic components. Anxiety and dietary type may influence the quantity, patterns, and other aspects of food intake. Modern diets, especially in Western societies, often contain high levels of calories from fat and simple sugars (e.g., cafeteria-style diets). This type of diet may promote overweight and/or obesity in some, although many consumers remain at a normal weight. The mechanisms underlying susceptibility or resistance to weight gain remain unclear. Here, Sprague-Dawley male rats were fed a cafeteria diet for 10 weeks and then classified into quartiles based on body mass. We evaluated locomotor activity and anxiety-like behaviors and analyzed hypothalamic proteomics in overweight (Q4) rats compared with underweight (Q1) rats. Our results showed that locomotor activity and anxiety-like behaviors did not differ across quartiles (p > 0.05). Nevertheless, the expression of several hypothalamic proteins differed between Q4 and Q1 rats. Functional enrichment analysis of these differentially expressed proteins (p ≤ 0.05) revealed changes in cytoskeleton dynamics, synaptic communication, energy production and utilization, biosynthesis of cellular components (including nucleotides and carbohydrates), and regulation of metabolism between Q1 and Q4 rats. Neuro-humoral hypothalamic output regulates metabolism and food intake. Therefore, these functional changes in the hypothalamus may be associated with rats’ susceptibility/resistance to weight gain. This study examines how justice-oriented modeling lessons promote elementary students’ capacity to mathematize complex situations, develop civic empathy, and take action to address inequities and injustices in their communities. Through qualitative methods using multiple data sources including teacher interviews, lesson transcripts, student work, and classroom artifacts we share cases of modeling tasks that use mathematics as an empowerment tool to address empathy, representation, access, fairness and taking action. Findings illustrated critical moment-to-moment instructional decisions teachers made to elicit students’ justice-oriented reasoning. The modeling tasks involved addressing food waste in the school cafeteria, creating an inclusive play area, diversifying the school library collections, and choosing items for a sensory space to positively impact students’ individual and community well-being. Implications for teachers and teacher educators will be discussed. Full article

Food waste is an issue that affects human and environmental health around the planet. At colleges and universities, food waste poses a serious concern, as its impact can be compared to that of mini-cities or large corporations. Identifying an institution’s capacity to reduce and redistribute food waste is critical to decreasing its carbon footprint and maintaining sustainability. Understanding the nature of waste produced at a university’s buildings is the first step in establishing effective waste management plans; however, campus cafeterias, being the primary source of food waste, are typically the focus. Limited research emphasis has been placed on assessing food waste generated in campus dormitories. This project tests the hypothesis that food waste generated from dormitories at the main campus of Adelphi University, a private liberal arts institution in New York, is a significant component of waste. To analyze post-consumer trash disposal patterns, garbology methods were utilized. Trash collected at dormitories between 2022 and 2024 was sorted and weighed. This mixed-methods analysis included student interviews of waste perceptions. Food waste was the primary waste type generated in the halls, followed by food and beverage packaging, including containers, napkins, and utensils. In particular, food waste comprised 32% of sampled dormitory waste. Interview results integrated with these quantitative results demonstrated student perceptions of food led to food waste, such as perceived level of cooking, portion sizes, and home context. These results suggest that any efforts to improve campus sustainability through management of food waste–such as composting or anaerobic digestion–must encompass dormitories as well as cafeterias. As the world’s population continues to rise at a rapid pace, primarily in metropolitan areas, the volume of waste generated by this growth must be managed to address planetary health. Full article

Obesity is a chronic systemic disorder frequently associated with multiorgan complications of inflammatory and metabolic origin. This study aimed to evaluate the histoprotective effects of Sargassum muticum, an invasive brown seaweed harvested from the Moroccan Atlantic coast, in cafeteria diet-induced obese rats. Thirty-five Wistar rats were divided into five groups: standard control, obese control (cafeteria diet), two obese groups treated with Sargassum muticum at 10% and 20%, and one group treated with orlistat at 30 mg/kg. After eight weeks, tissue samples were collected for a histopathological analysis. In untreated obese rats, histological examination revealed multiple abnormalities, including submucosal edema, vascular congestion, gastric inflammatory infiltration, pulmonary hemorrhage and lipid vacuoles, as well as hepatic, cardiac, pancreatic, and testicular lesions. Treatment with S. muticum, particularly at 20%, markedly improved these alterations, characterized by a significant reduction in inflammatory infiltration, vascular congestion, lipid vacuolization, and tissue degeneration, together with improved preservation of tissue architecture. These effects were superior to those observed with orlistat. The anti-inflammatory, antioxidant, and metabolic properties of S. muticum are likely due to its richness in bioactive compounds, notably phlorotannins, fucoxanthin, and sulfated polysaccharides. These findings confirm the therapeutic potential of S. muticum in preventing histopathological complications of obesity and pave the way for translational studies and potential nutraceutical applications in human obesity management.
