Special Issue Information

Dear Colleagues,

Microbial toxins in food are chemical compounds produced by bacteria, fungi, or other microorganisms that can cause harm when consumed. These toxins, such as mycotoxins and endotoxin, can contaminate food through natural processes or improper storage. There are hundreds of microbial toxins with defined chemical structures. In addition to posing direct poisoning risks to humans, these compounds can also cause losses in agriculture, animal husbandry, aquaculture and environmental hazards. Currently, microbial toxin control has become a challenge in poisoning accident response and food safety prevention, promoting the urgent demands for their detection and evaluation. This Special Issue invites contributions focusing on toxicological research and risk assessment of microbial toxins, as well as the development and application of new technologies for detecting biotoxins in food (including the application of novel nanomaterials, sensing technologies and other innovative approaches). Both review and research articles are welcome.

Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a double-blind peer-review process. Toxins is an international peer-reviewed open access monthly journal published by MDPI.
