Dear Colleagues,
Food safety and environmental monitoring are of paramount importance, and the sensitive and rapid detection of trace toxic pollutants in the environment and food is closely linked to human life and safety. Optical fiber sensors demonstrate unique advantages in the fields of biochemical and environmental monitoring. These sensors utilize optical signal transmission, offering characteristics such as immunity to electromagnetic interference, suitability for long-distance and on-site real-time monitoring, and a structure that is easily miniaturized and cost-controllable. With advancements in plasmonic regulation theory and metasurface design, optical fiber sensors are exhibiting increasingly superior performance. This Special Issue focuses on all optical fiber sensors designed for monitoring environmental and food contaminants.

Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.
Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Sensors is an international peer-reviewed open access semimonthly journal published by MDPI.

Submitted papers should be well formatted and use good English. Authors may use MDPI's English editing service prior to publication or during author revisions.
