Special Issue Information

Dear Colleagues,

Grains and oilseeds are two essential commodity groups that play a critical role in meeting the basic caloric and nutritional needs of a growing global population. These crops serve as staple foods in many regions and are vital sources of essential nutrients including carbohydrates, proteins, lipids, and micronutrients. In recent decades, both sectors have experienced rapid growth, driven by rising per capita income, population expansion, increased industrial applications, and evolving dietary preferences. However, despite this progress, the production, processing, and equitable availability of grains and oilseeds continue to face significant challenges, including climate variability, resource constraints, supply chain disruptions, and environmental concerns.

This Special Issue aims to explore the multifaceted role of major grains and oilseeds in promoting global food security, enhancing environmental sustainability, and supporting the resilience of food systems. It will examine how various processing techniques, both conventional and advanced, impact waste minimization, improve the nutritional and functional quality of final products, and enable the upcycling of waste streams and byproducts. By showcasing innovative approaches to processing, this Special Issue will highlight strategies that reduce the environmental footprint of grain and oilseed processing while unlocking new value-added opportunities. Case studies and research findings will illustrate how these technologies contribute to circular economy models, reduce post-harvest losses, and support the development of sustainable food ingredients and materials.

Manuscript Submission Information

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 100 words) can be sent to the Editorial Office for announcement on this website.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Processes is an international peer-reviewed open access monthly journal published by MDPI.
