Dear Colleagues,
The physicochemical properties of food play a crucial role in the regulation of satiety and energy balance, representing a rapidly developing area of research at the intersection of nutrition science and food technology. Increasing evidence indicates that product characteristics, such as texture, viscosity, matrix structure, energy density, and the degree of processing, influence digestion kinetics, nutrient bioavailability, and the signaling mechanisms associated with hunger and satiety. Understanding how physicochemical properties modulate energy intake and eating behavior is fundamental in the context of the growing global prevalence of obesity and metabolic disorders. This Special Issue focuses on studies elucidating the mechanistic foundations of appetite regulation, innovative analytical methods, the role of functional foods in satiety control, and the translational applications of these findings in clinical nutrition and public health. We are particularly interested in studies that elucidate these mechanisms and validate their health benefits in regulating energy intake and eating behaviors through experimental methods. We invite authors to submit interdisciplinary contributions ranging from fundamental research to practical applications in the design of foods that support beneficial dietary patterns.
