Special Issue Information
Dear Colleagues,
Yeasts have gained attention as probiotics and postbiotics due to their ability to improve gut health and modulate the microbiota. Their use has expanded in research and the food industry, standing out for their effectiveness in treating various gastrointestinal disorders. Yeasts as probiotics and postbiotics represent a promising area of research and application in health and biotechnology. Their stability, safety, and ability to produce beneficial metabolites position them as viable and effective alternatives to traditional probiotic bacteria.
For this reason, Journal of Fungi wishes to launch a Special Issue titled “Yeasts with Probiotic and Postbiotic Potential”. Authors are encouraged to submit research articles and reviews on the genomics of probiotic yeasts; mechanisms of action of beneficial properties; in vitro, in vivo, and clinical studies; different sources of isolation of yeasts with potential; evaluations of postbiotic fractions; applications in functional foods; and alternatives for the market presentation of probiotic and postbiotic yeasts.
