Special Issue Information

Dear Colleagues,

Foodborne pathogens are harmful microorganisms that can contaminate food products, food processing facilities, or manufacturing environments, leading to foodborne illness. These microorganisms can cause disease due to various virulence factors, even at low doses. Many of these microorganisms have been described as capable of forming biofilms. Several studies have established that biofilms are the primary source of food contamination and that their persistence on food-contact surfaces and equipment is a key factor in their persistence.

Therefore, this Special Issue seeks original and review articles focused on the production of biofilms by microorganisms associated with food poisoning, as well as the characterization, from a disciplinary perspective, of the microbiological, molecular biology, and bioinformatics elements of these biofilms, with the aim of understanding their formation and structure and, ultimately, generating knowledge for their eradication. We invite researchers from different areas to contribute to the understanding of biofilm formation through innovative knowledge generation strategies.

Manuscript Submission Information

All manuscripts are thoroughly refereed through a single-blind peer-review process. International Journal of Molecular Sciences is an international peer-reviewed open access semimonthly journal published by MDPI.
